QUICK AND EASY CHICKEN NOODLE SOUP

When you don't have time to make your soup totally from scratch, this is a very easy, very good substitute.

1 tablespoon butter
½ cup chopped onion
½ cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
½ pound chopped cooked chicken breast
1 ½ cups egg noodles
1 cup sliced carrots
½ teaspoon dried basil
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

EGG DROP CHICKEN NOODLE SOUP

2 skinless, boneless chicken breasts , diced
1.2l low-salt chicken stock
140g wholewheat noodle
140g baby corn , halved lengthways, or frozen sweetcorn
2 eggs , beaten
squeeze lemon juice
½ tsp sherry vinegar
2 spring onions , finely chopped

Steps:

  • Place the chicken and stock in a large pan and bring to a simmer for 5 mins. Meanwhile, cook the noodles following pack instructions.
  • Add the corn to the stock and cook for 2 mins. Stir the broth vigorously, then while it's still swirling, hold a fork over the pan. Pour the eggs over the prongs in a slow stream. Stir again in the same direction then turn off the heat. Add a squeeze of lemon juice and the vinegar.
  • Drain the noodles and divide between four bowls. Ladle over the egg drop broth, scatter with onions and serve.

Tasty Chicken and Egg Noodles image

I came up with this variation based on a dish my grandmother used to make - this is a great one-dish meal that will please the whole family. Once you try it a few times, you can get creative and add some of your favorite ingredients. You can cut the cooking time by using frozen chicken patties as indicated in the recipe below. It is also delicious when made with leftover ham and cream of mushroom soup.

2 lbs any type boneless skinless chicken (for a super quick substitute, use frozen, breaded or unbreaded, chicken patties instead)
1 (12 ounce) package egg noodles
2 (10 3/4 ounce) cans cream of chicken soup
1/2 cup milk (use more or less according to your preferred consistency)
1 (10 ounce) package frozen green peas
1 -2 tablespoon olive oil
8 ounces canned mushrooms
1 small onion, finely chopped
1 teaspoon minced garlic
1 teaspoon fresh ground black pepper

Steps:

  • In a large pot, heat water to a boil.
  • In a large skillet, cook chicken thoroughly using 1 tablespoon of heated oil and remove.
  • In the same skillet, heat olive oil (add more if necessary) on medium high heat then add mushrooms, onion, and garlic and cook until onions are transparent and drain.
  • Cut cooked chicken into bite sized pieces and add chicken, soup, milk, peas, and black pepper to the mushroom mixture and simmer for 15 minutes.
  • Cook noodles according to package then drain and rinse.
  • Add noodles to chicken mixture and serve with biscuits or rolls.

6 cups uncooked egg noodles (about 12 ounces)
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream
3/4 cup 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups cubed cooked chicken breasts
1 cup crushed Ritz crackers (about 20 crackers)
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions for al dente; drain., In a large bowl, whisk soup, sour cream, milk, salt and pepper until blended. Stir in chicken and noodles. Transfer to a greased 13x9-in. baking dish. In a small bowl, mix crushed crackers and butter; sprinkle over top. Bake until bubbly, 30-35 minutes.

1 medium onion, chopped

2 cups chicken broth, or more as needed

Steps:

  • Spray a skillet with cooking spray and heat over medium heat. Add chicken to skillet and cook, stirring frequently, about 4 minutes. Add onion and cook until chicken is browned and onion is slightly translucent, about 3 more minutes. Transfer to the slow cooker.
  • Add carrots, celery, bell pepper, thyme, and pepper to the slow cooker; mix to combine. Stir in diced tomatoes and enough chicken broth so vegetables are just covered with liquid.
  • Cover and cook on Low for 7 hours.
  • While the soup is cooking, fill a large pot with lightly salted water and bring to a rolling boil. Stir in egg noodles and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, 6 to 8 minutes. Drain and set aside.

8 cups chicken stock
½ bulb garlic
4 whole black peppercorns
1 bay leaf
1 yellow onion, diced
2 large carrots, diced
2 large stalks celery, diced
8 sprigs fresh thyme, tied together with kitchen twine
1 teaspoon salt
½ teaspoon Italian seasoning
½ teaspoon dried celery leaves
¼ teaspoon fresh cracked black pepper
2 cups egg noodles
1 cup corn
2 cups diced cooked rotisserie chicken
½ cup heavy whipping cream

Steps:

  • Bring chicken stock, garlic bulb, peppercorns, and bay leaf to a boil in a large pot. Reduce heat and simmer, covered, until flavors combine, about 35 minutes. Strain out garlic bulb, peppercorns, and bay leaf from the stock.
  • Stir onion, carrots, celery, thyme, salt, Italian seasoning, celery leaves, and black pepper into the stock. Simmer over medium-low heat until carrots are tender, about 18 minutes. Bring to a gentle boil; stir in egg noodles and corn. Cook until noodles are tender yet still firm to the bite, about 8 minutes. Discard thyme bundle.
  • Stir chicken and cream into the pot; simmer until heated through, about 3 minutes.

This is one of my favorite comfort foods. I can remember my great grandma, grandma and mom always making it and now I make it in my home. This meal doesn't last long. Great when it's two days old and the flavor has seeped into the noodles.

Number Of Ingredients 12

1 whole chicken
1/4 teaspoon clove, whole
1/4 teaspoon parsley flakes
1/4 teaspoon rosemary, flakes
1/4 teaspoon dried dried basil
3 bay leaves
for egg noodles
2 cups all-purpose flour or 2 cups whole wheat flour
3 egg yolks
1 egg
2 teaspoons salt
1/2 cup water

Steps:

  • place whole chicken in a stock pot and add water to cover.
  • Add cloves, parsley, rosemary, basil, bay leaves and sage to a cheese cloth, place in water.
  • Slow boild chicken until falling off the bone.
  • In the meantime make the egg noodles.
  • In a large bowl add flour and make a well in center of flour.
  • Add egg yolks, egg and salt; mix thoroughly.
  • Mix in water, 1 tablespoon at a time, until dough is stiff, but easy to roll.
  • Divide dough into 4 equal parts.
  • Roll dough, one part at a time, into paper-thin rectangle on well-floured board (keep remaining dough covered).
  • Loosely fold rectangle lengthwise into thirds; cut cross-wise into 1/8-inch strips.
  • Shake out strips and place onto a clean cheesecloth until stiff and dry, about 2 hours.
  • While noodles are drying and chicken is done, remove chicken from the stock and allow the chicken to cool and debone and remove the skin.
  • Boild the stock water down and add herbs, salt and pepper to taste.
  • Add dried noodles and chicken and allow to boil until noodle are throughly cooked. Add some corn starch to thicken stock.
  • Serve over mashed potatoes or steamed rice.
