QUICK EDAMAME SALAD
Nice fresh salad for summer that's a little different from the norm. The seasonings can be adjusted to taste, these are just rough guesses since I usually just add till it tastes good.

Steps:
- Mix edamame, corn, peas, black beans, and red onion in a large bowl.
- Stir olive oil, vinegar, salt, parsley, black pepper, basil, and garlic powder into edamame mixture.
- Chill in refrigerator at least 30 minutes before serving.

- Add edamame to bowl and mix. To serve, add shaved pecorino cheese and roughly chopped mint.

- In small bowl, whisk together olive oil, blueberry juice, agave nectar, syrup, rice vinegar, mustard, lemon juice, salt and pepper. Set aside. Cook edamame according to package directions; drain. Toss warm edamame with dressing and set aside for 20 minutes. After edamame has cooled, toss edamame, blueberries, basil and mint in large bowl; season with salt and pepper.

- Combine water and wheat berries in saucepan. Bring to boil. Reduce heat,cover and simmer for 55 minutes or until tender.
- Place in strainer and run cool water over.
- Combine with rest of ingredients and refrigerate.

Steps:
- Bring large pot salted water to a boil.
- Add edamame and cook for 1 to 2 minutes or until crisp-tender.
- With a slotted spoon, transfer to a bowl of ice water.
- Remove edamame from pods.
- Cover potatoes with enough salted water to cover by 1-inch.
- Bring to a boil and simmer for about 15 minutes or until tender.
- Transfer with a slotted spoon to a bowl of ice water to cool; drain well.
- In a small bowl, combine the mustard with the lime juice.
- When just cool enough to handle, cut potatoes into 1/3-inch-thick slices and toss remaining ingredients together in a large bowl.
- Season to taste with salt and pepper.
