Easy Wheat Sourdough Bread (Abm) image

This recipe goes along with Easy wheat sourdough starter. Directions are included for the sponge and the dough. Good Luck :) Dough is to be mixed in a bread machine.

1 cup sourdough starter
3/4 cup warm water
2 cups flour
1 1/4 cups proofed sourdough starter
1 cup water
3 tablespoons powdered milk
1 tablespoon lemon juice
1/4 cup instant potato flakes
1/4 cup white whole wheat flour
3 3/4 cups bread flour
2 tablespoons sugar
3 tablespoons butter (oil is fine)
2 teaspoons salt

Steps:

  • FOR THE SPONGE. (This will make the proofed sourdough starter.).
  • 1 cup starter, 3/4 cup water & 2 cups flour.
  • Mix the starter with the flour & water.
  • Set aside and let sit 4-8 hours or overnight in the refrigerator.
  • Let proceed till it expands 3 times it's original size.
  • FOR THE DOUGH.
  • Add in all ingredients starting from 1 1/4 proofed starter into the bread machine.
  • Let the bread machine mix, kneed and do the first rise.
  • Remove at beep to lightly floured surface.
  • Divide dough into 2 equal portions.
  • Pat each dough portion out into a flat circle.
  • Gently stretch and fold the left side over the middle, then the right over the middle.
  • Like folding a letter.
  • Shape, always keeping the folded side on the bottom.
  • Spray pan with pam & then place shaped dough into pans.
  • Spray the tops and cover with plastic wrap.
  • Refrigerate over night.
  • Take out in the morning and let them finish rising at room temperature.
  • They should be light.
  • Don't rush the rising or your bread will be dense.
  • Bake at 350 until done, about 30 minutes.
  • If your bread is browning too fast, tent with aluminum foil.
  • The bread is done when internal temperature reaches 210.

Sourdough Bread in Custom-Programmable Zo ABM image

Best loaf of bread I have ever made in an ABM; there were no leftovers after a dinner for 4 1/2! From Rick Dickinson on KAF web-site. No additional yeast is used (beyond what is in the starter). Note that this takes 11 hours, and requires the ability to program a custom cycle in your ABM (like Zojirushi Home Bakery). As always, after 3-5 minutes of kneading, check the dough consistency, as some starters are dryer and some wetter than others. (Rick's starter is the consistency of pancake batter.) After 2 times making this, you will probably know just how you will need to adjust for subsequent loaves. For variety: sub 1 cup whole wheat flour (or rye flour) and 1 teaspoon vital wheat gluten for 1 cup of bread flour.

1 cup sourdough starter (the consistency of pancake batter)
3/4 cup water
1 tablespoon extra virgin olive oil
3 cups bread flour
1 1/2 teaspoons powdered milk
1 teaspoon salt
1 tablespoon sugar

Steps:

  • PRELIMINARY:.
  • Your sourdough starter should have been fed the day before, and still have some active bubbles, and a layer of "hooch" on top, indicating active fermentation.
  • BEGIN:.
  • Stir up the starter to mix it all together, and to collapse the bubbles for consistent measuring. (After you remove the cup of starter needed for this recipe, you should feed your starter to replenish it.).
  • For the Zo, place the wet ingredients in the bottom of the bread machine's pan.
  • Next, put the flour in the pan on top of the wet ingredients, followed by the rest of the dry ingredients.
  • Use a custom cycle: 1) Preheat 15 minutes. 2) Knead 28 minutes. 3) Rise#1 6 hours. 4) Rise#2 2 hours. 5) Rise#3: 1 hour 30 minutes. 6) Bake 62 minutes.
  • Check the dough after 3-5 minutes for consistency (especially the first couple of times trying this recipe). The mixed/kneaded batter should be a bit wetter than your usual bread dough, since some water will evaporate over the 11 hours, but it should still come together to make a (somewhat sticky and looser than usual) dough ball. If it is too wet or too dry, it won't knead properly, and you won't develop enough gluten to get a good rise and a smooth and light interior texture.
  • If the dough is runnier than pancake batter, you may need to add a tablespoon or 2 more flour to the dough to get it to come together and knead properly.
  • If your starter is more of a sponge than a batter consistency, you'll need to add a tablespoon or 2 of water to the dough. (Whichever you do, make a note of it and simply adjust the amount of water or flour the next time you make the bread.).
  • When ABM is done, remove loaf promptly and cool completely. If you can restrain yourself, let it cool 2 hours for maximum sourdough flavor.

  • Sometime between 6-8am the day before you want to bake your loaf: remove your starter from the fridge to let it come up to room temperature. If your starter is young or hasn’t been fed within the last week, feed it once now to start activating it. If your starter is well established and has been used within the last week, you can just let it sit out and come to room temperature before feeding in the next step.
  • Sometime between 11am-12pm: feed your starter (instructions in notes below if you aren’t familiar with how to feed your starter).
  • Sometime between 5-6pm: measure out 1 cup of your active starter and pour into a large mixing bowl. Add all remaining ingredients and stir well to combine. The dough will be wet and shaggy. Cover the bowl and let sit at room temperature, ideally in the warmest spot in your house. Place your starter back into the fridge for storage.
  • Let dough rise for 4 hours, performing three sets of ‘stretch and folds’, about once an hour. So, if you made your dough at 6pm, do a set of stretch and folds around 7pm, 8pm, and 9pm. To do this: wet your hands and reach down under one side of the dough, pulling it up (‘stretch’), and dropping it back down on top of itself (fold). Turn the bowl a quarter turn and do another stretch and fold; turn again and do another; turn again and do another, until you have done the stretch-and-fold on all four sides of the dough.

  • In a large bowl, combine the water, starter, and salt. Stir with a rubber spatula to loosely combine. Add the flour, and stir with a spatula to combine — it will be a wet, sticky dough ball. Transfer to a straight-sided vessel and cover with a tea towel or bowl cover for 30 minutes.
  • . After 30 minutes, grab a corner of the dough and pull it up and into the center. Repeat until you’ve performed this series of folds 4 to 5 times with the dough. Let dough rest for another 30 minutes and repeat the stretching and folding action. If you have the time: do this twice more for a total of 4 times in 2 hours. [Video guidance here.] Note: Even if you can only perform one series of stretches and folds, your dough will benefit. So don’t worry if you have to run off shortly after you mix the dough.
  • Cover the vessel with a tea towel or bowl cover and let rise at room temperature (70ºF/21ºC) for 4 to 18 hours (times will vary based on the time of year, the humidity, and the temperature of your kitchen). The bulk fermentation will end when the dough has nearly doubled in volume and you can see bubbles throughout the dough and on the surface. (Note: Do not use your oven with the light on for the bulk fermentation — it is too warm for the dough. To determine when the bulk fermentation is done, it is best to rely on visual cues (doubling in volume) as opposed to time. A straight-sided vessel makes monitoring the bulk fermentation especially easy because it allows you to see when your dough has truly doubled.)
  • Gently transfer the dough to clean work surface. I prefer to use no flour and a bench scraper at this step, but if you find an un-floured work surface to be difficult, feel free to lightly flour it. [Video guidance is especially helpful for this step.] Fold the dough, envelope style: top third over to the center; bottom third up and over to the center. Then repeat from right to left. Turn the dough over and use your bench scraper to push the dough up, then back towards you to create a tight ball. Repeat this pushing and pulling till you feel you have some tension in your ball. Place the dough ball top side down and let rest 30 to 40 minutes. (FYI: This is called the bench rest.)
