Make your own surf and turf with garlic butter at home! The classic steak and shrimp recipe is perfect for special occasions or date nights in.

6 tbsp Unsalted butter ((salted, or add salt to taste; softened))
2 cloves Garlic ((minced))
1/2 tsp Fresh parsley ((chopped))
1/2 tbsp Fresh rosemary ((chopped))
1/2 tbsp Fresh thyme
4 6-oz Sirloin steaks ((about 1/2 to 1 inch thick))
1 tbsp Olive oil
1/2 tbsp Sea salt
1/2 tsp Black pepper
12 oz Medium shrimp ((fresh, or frozen and thawed, peeled and deveined))

Steps:

  • In a small bowl, mash together the butter, garlic rosemary, thyme and parsley. Store in the fridge until ready to use.
  • If possible, take the steaks out of the fridge 30 minutes before cooking, to let them come to room temperature.
  • Brush steaks on both sides with olive oil. Season both sides generously with salt and pepper, patting to help the seasonings stick.
  • Heat a cast iron grill pan over medium-high heat for 2-3 minutes, until very hot.
  • Add the steaks and cook for 4-5 minutes, until browned on the bottom. Flip and cook for 2-7 minutes, until done to your liking.* Rare: 120 degrees (49 degrees C), 1-2 minutes* Medium Rare: 130 degrees (54 degrees C), 2-4 minutes* Medium: 140 degrees (60 degrees C), 4-6 minutes* Medium Well: 150 degrees (66 degrees C), 6-8 minutes* Well Done: 160 degrees (71 degrees C), 8-10 minutes
  • Remove the steaks from the pan. Cover to let them rest and keep them warm.
  • Turn off heat. Wait for the pan to stop smoking, then lightly wipe down the pan if it has any pieces left.
  • With the heat off but while the pan is still hot, add 2 tablespoons of garlic butter in smaller chunks. (Reserve the rest of the garlic butter for the steaks later.) Move the butter pieces around as they melt, so that the melted butter coats the pan evenly.
  • Once butter melts, turn on heat to medium. Quickly add the shrimp in a single layer. Cook for 1-3 minutes per side, until opaque and golden.
  • Serve steaks with a pat (1 tablespoon) of garlic butter on top. Serve shrimp alongside the steaks, with garlic butter from the pan poured over them, and a squeeze of lemon, if desired.

1 boneless, skinless chicken breast half
4 ounces flank steak
8 raw jumbo shrimp, peeled but tails left intact, deveined
Salt and freshly ground black pepper
6 scallions
3 tablespoons olive oil
3 tomatoes, quartered
2 cloves garlic, smashed
1/4 white onion, halved
1 teaspoon crumbled dried oregano
1 teaspoon cumin seeds
1 teaspoon tomato bouillon
A pinch of sugar
4 dried California or New Mexico chiles, stemmed, seeded and torn into pieces
2 slices panela cheese
Six to eight 6-inch corn tortillas, warmed

Steps:

  • Prepare a grill or grill pan to medium-high heat.
  • Sprinkle the chicken, flank steak and shrimp with salt and pepper. Grill the chicken until cooked through, about 6 minutes per side. Transfer the chicken to a platter and cover with aluminum foil to keep warm.
  • Grill the flank steak to the desired doneness, about 5 minutes per side for medium. Add it to the platter with the chicken.
  • Grill the shrimp until just cooked through, about 3 minutes per side. Add them to the platter.
  • Grill the scallions until brown, about 3 minutes per side. Add them to the platter.
  • Heat 2 tablespoons of the oil in a large, heavy saucepan over medium-high heat. Add the tomatoes, garlic and onions. Cook until the onions are golden, about 8 minutes. Add the oregano, cumin, bouillon, sugar and chiles. Stir until fragrant, about 2 minutes. Add 1 cup water to the saucepan and bring to a boil. Reduce the heat to medium low and simmer until the chiles are soft, 2 minutes. Let the mixture cool slightly. Transfer the mixture to a blender, add 1 cup water and blend until smooth. Strain the sauce into a medium bowl.
  • Heat the remaining 1 tablespoon oil in the same saucepan over medium heat. Return the sauce to the pan and simmer until slightly thickened, about 2 minutes. Season the sauce with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Place 2 molcajetes (see Cook's Note) in the oven and heat them for 10 minutes (or use 2 small to medium cast-iron skillets). Using oven mitts, remove them from the oven and carefully transfer them to a heatproof surface (be careful, as the molcajetes get extremely hot).
  • Bring the sauce to a boil. Cut the chicken and flank steak into 3/4-inch-wide strips. Arrange the chicken and steak strips, shrimp, scallions and cheese slices around the edges of the heated molcajetes. Pour the boiling sauce into the center. Serve very hot, with tortillas to make tacos.

2 teaspoons plus 2 tablespoons olive oil, divided
1/4 cup minced fresh parsley
3 tablespoons chopped green onions
2 tablespoons minced fresh thyme
2 teaspoons grated lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon cayenne pepper
1/2 cup butter, softened
1 cup soft bread crumbs
1/4 cup butter, melted
4 lobster tails (8 to 10 ounces each)
4 beef tenderloin steaks (4 ounces each)
4 teaspoons coarsely ground pepper

Steps:

  • In a small skillet, saute garlic in 2 teaspoons oil until tender; remove from the heat. In a small bowl, combine the parsley, green onions, thyme, lemon zest, salt, pepper, cayenne and reserved garlic. Set aside 1/2 cup for crumb topping. , Add softened butter to remaining herb mixture; mix well. Shape into a 1-in.-thick log; wrap and refrigerate for 30 minutes or until firm., For crumb topping, combine the bread crumbs, melted butter and reserved herb mixture; set aside., Preheat oven to 375°. Split lobster tails in half lengthwise. With cut side up and using scissors, cut along the edge of shell to loosen the cartilage covering the tail meat from the shell; remove and discard cartilage., Place lobster tails on a baking sheet; top with reserved crumb topping. Bake, uncovered, until meat is firm and opaque and crumbs are golden brown, 15-20 minutes., Meanwhile, sprinkle steaks with coarse pepper. In a large skillet over medium heat, cook steaks in remaining oil until meat reaches desired doneness, 4-5 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Unwrap herb butter; cut four 1/4-in. slices from log. Place 1 slice on each steak. Serve with lobster. Rewrap remaining butter; refrigerate for 1 week or freeze for up to 3 months.

1 tablespoon butter, melted
1 tablespoon finely minced onion
1 tablespoon white wine
1 teaspoon Worcestershire sauce
1 teaspoon lemon juice

1 clove garlic, minced
⅛ teaspoon freshly ground black pepper
12 medium shrimp, peeled and deveined
2 (4 ounce) filet mignon steaks

Steps:

  • Whisk 1 tablespoon olive oil, butter, onion, wine, Worcestershire sauce, lemon juice, parsley, seafood seasoning, garlic, and black pepper together in a bowl; add shrimp. Toss to coat evenly. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 15 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Coat steaks with 2 teaspoons olive oil; sprinkle with steak seasoning.
  • Cook steaks until they are beginning to firm and have reached your desired doneness, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer steaks to a platter and loosely tent with a piece of aluminum foil.
  • Remove shrimp from marinade and grill until they are bright pink on the outside and the meat is no longer transparent in the center, 2 to 3 minutes per side.

1 small panela cheese or 1 ball fresh mozzarella cheese, sliced
3 tablespoons olive oil
1/4 white onion
3 whole tomatoes
2 garlic cloves
4 dried California or New Mexico chiles, stemmed, seeded, and torn into pieces
1 teaspoon crumbled dried oregano
1 teaspoon cumin seeds
2 cups water
6 to 8 (6-inch) corn tortillas, warmed

Steps:

  • Put a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • In a large bowl, drizzle the chicken, flank steak, and shrimp with olive oil and season on all sides with salt and pepper, to taste. Grill the chicken until cooked through, about 6 to 8 minutes per side. Grill the flank steak to desired doneness, about 5 minutes per side for medium. Transfer the chicken and steak to a cutting board and let the meat rest for 5 minutes before slicing. Grill the shrimp until just cooked through, about 3 minutes per side. Grill the scallions until brown, about 2 to 3 minutes per side.
  • Grill the cheese for 10 seconds on each side. Transfer the shrimp, scallions and cheese to a large plate.
  • Sauce:
  • In a large heavy saucepan, heat 2 tablespoons of the oil over medium-high heat. Add the onion, tomatoes, and garlic. Cook until the onion is golden and very soft, about 8 minutes. Add the chiles, oregano, and cumin. Stir until fragrant, about for 2 minutes. Stir in 1 cup water and bring to a boil. Reduce heat to medium-low and simmer until the chiles are soft, about 2 minutes. Let the mixture cool slightly, about 5 minutes. Transfer the mixture to a blender or food processor, add the remaining 1 cup of water and blend until smooth. Strain the sauce into a medium saucepan and simmer until slightly thickened, about 5 to 8 minutes. Season with salt and pepper, to taste.
  • Cut the chicken and flank steak into 3/4-inch-wide strips. Arrange the chicken strips, steak strips, shrimp, scallions, and cheese slices around the edges of a heatproof dish. Pour the warm sauce into the center. Serve very hot, with tortillas to make tacos.

1 small bottle tiger sauce, such as Try Me
Juice of 1 lime
Juice of 1 orange
2 cloves garlic, crushed
Juice of 2 limes
1 tablespoon olive oil
2 cloves garlic, minced
1 jalapeno, finely diced

1 pound halibut fillet
5 tomatillos
2 to 4 jalapenos, depending on spice preference
1 avocado
1/2 yellow onion
Juice of 4 limes
2 tablespoons olive oil
1 bunch cilantro
1 tablespoon agave nectar
Salt and pepper
1/2 to 3/4 head cabbage, shredded
1 bunch cilantro, chopped
3 jalapenos, seeded and diced

1/2 tablespoon garlic powder

6 to 8 corn or flour tortillas
1 cup crumbled feta

Steps:

  • For the steak: Marinate the flank steak in the tiger sauce, lime juice, orange juice and garlic. Grill for 5 minutes per side. Rest for 10 minutes before slicing against the grain into thin slices.
  • For the halibut: Combine the lime juice, olive oil, garlic, jalapeno and some salt and pepper in a bowl. Add the halibut, turning to coat. Cover and marinate in the refrigerator. Grill for 3 to 6 minutes per side, depending on thickness -- the halibut will flake when done. Cut into small pieces.
  • For the tomatillo-avocado salsa: In a blender, combine the tomatillos, jalapenos, avocado, onion, lime juice, olive oil, cilantro, agave and 1 teaspoon each salt and pepper. Blend until completely smooth. Set aside.
  • For the jalapeno-lime slaw: Add the cabbage, cilantro and jalapenos to a large bowl. In a smaller bowl, stir together the mayonnaise, olive oil, lime juice, garlic powder and some salt and pepper. Toss the cabbage with dressing to taste.
  • To serve: Begin plating with a corn tortilla. Add a little less than 1/4 cup of slaw, top with a few pieces of halibut, a tablespoon or so of the salsa and a few slices of steak. Finish with crumbled feta, sliced radishes, if using, and a lime wedge.

1/2 lb flank steak, sliced thin
1/2 lb boneless skinless chicken breast, sliced thin
1 lb medium shrimp, cooked and without tails
1 large onion, sliced
1 cup mushroom, sliced
1 green pepper, sliced
1 jalapeno, sliced (optional)
3 tablespoons olive oil
1/4 cup fajita seasoning mix (or to taste)
8 soft tortillas
1 tablespoon paprika
1 tablespoon garlic
salt, to taste
pepper, to taste

Steps:

  • In large sauté pan, heat olive oil.
  • Add flank steak and chicken breast, cook until outside is slightly browned.
  • Add onions, peppers, and jalapenos. After onions and peppers begin to soften, add mushrooms and cooked shrimp. Followed by paprika, garlic, salt, and pepper. Mix well.
  • Once meat is thoroughly cooked and vegetables are done, add fajita or taco seasoning. You may need to add water. Follow directions on packet (personally, we don't have a certain amount, we just add until we're happy with it.).
  • Serve on soft tortillas.
  • Great additions to this recipe are: salsa, sour cream, Mexican cheese, lettuce, tomatoes, and even refried beans!
