HOMEMADE TORTILLAS
I usually have to double this flour tortilla recipe because we go through them so quickly. The homemade tortillas are so tender and chewy, you'll never use store-bought again after learning how to make tortillas. -Kristin Van Dyken, Kennewick, Washington

Steps:
- In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes., Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle., In a greased cast-iron or other heavy skillet, cook tortillas over medium heat until lightly browned, 1 minute on each side. Serve warm.

CINNAMON TORTILLA WITH CREAM CHEESE & STRAWBERRIES
A wonderful, and easy dessert by the the Editors of Easy Home Cooking Magazine. I just made this, and it was delicious! I can't wait to try it with other berries.The only change I made, was to fry each tortilla with a small amount of butter instead of spraying them with cooking spray. I also topped each one with whipped cream, but wouldn't Ice cream be lovely? I used the low carb tortilla's, but hey, use any kind you like.

Steps:
- Combine sugar substitute and cinnamon in cup; mix well. Heat large nonstick skillet over medium heat.
- Lightly spray one side of tortilla with cooking spray; sprinkle with cinnamon mixture.
- Place tortilla, cinnamon side down, in hot skillet. Cook 2 minutes or until lightly browned. Remove from skillet.
- Spread uncooked side of tortilla with cream cheese; arrange strawberries down center of tortilla. Roll up tortilla, or fold, to serve.
- Tip: Prepare recipe through step 3. Mash a few of the strawberry slices with a fork until almost smooth; stir into cream cheese. Proceed as directed in step 4.

Steps:
- Spread cream cheese over tortilla's, making sure to evenly cover as much of the surface as possible.
- Slice the strawberries and distribute evenly over tortilla.
- Sprinkle chocolate chips evenly over surface.
- Roll the tortilla's and place on baking sheet. Bake at 350 degrees for 10-15 minutes or until chocolate chips begin to melt.
- Drizzle each roll with desired amount of chocolate sauce and serve warm.
EASY SPANISH TORTILLA
This is a great recipe. I found it while looking for Spanish recipes that I could use for a school project. This was one of the most simple and easy authentic Spanish dishes. It's great for a hardy breakfast full of protein and starch.

Steps:
- Put potatoes in a large bowl and add desired amount of salt.
- In a frying pan heat 1/2 cm of olive oil and add potatoes.
- Beat the eggs in a large bowl and add desired amount of salt.
- After about 5 minutes, add the onion to the potatoes. Don't let the potatoes brown!
- When potatoes start to break easily, take the potatoes and onions, add them to the beaten eggs and mix well.
- Drain out the extra oil from the pan.
- Pour the mixture into the pan and let it cook for a few minutes.
- To flip the omelet, turn the pan over and put the mixture on to a plate, slide it back into the pan so that it cooks on the other side, flatten it.
- Cuontine to do this until it is cooked all the way through.
