Super easy delicious chicken wings. My wife doesn't like the hot sauce, so she heats BBQ sauce in the microwave and uses that.

12 skinless chicken wings
¾ cup all-purpose flour
1 tablespoon salt
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 quart vegetable oil for frying
¾ cup hot pepper sauce (such as Frank's RedHot®)
1 tablespoon butter

Steps:

  • Rinse chicken wings in cold water; drain and pat dry with paper towels.
  • Mix flour, salt, pepper, and garlic powder together in a 1-gallon resealable bag; add chicken wings. Seal bag and shake to evenly coat chicken.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Remove chicken from bag and shake off any excess coating; fry in the preheated oil until chicken is no longer pink in the center, about 7 minutes. Remove chicken with a slotted spoon and drain on a paper towel-lined plate.
  • Combine hot sauce and butter in saucepan over medium heat; cook until heated through, about 5 minutes. Coat cooked chicken wings with sauce.

20 chicken wings
4 cups peanut oil
4 eggs
1/2 cup water
1/2 cup hot sauce
2 tablespoons red peppers
1 tablespoon white pepper
1 tablespoon garlic powder
1 tablespoon salt
3 cups flour
1/3 cup baking powder
1 tablespoon salt
1 tablespoon black pepper

Steps:

  • Heat oil.
  • Marinade.
  • Combine all ingredients in a large bowl.
  • Dry mix.
  • Combine all ingredients in another large bowl.
  • Cut wings in half to separate drums from wings. Wash chicken in cold water and dry with a clean towel, or paper towels.
  • Add chicken to marinade, then dredge in dry mixture. Add to heated oil and cook until the sizzling slows down. Chicken will be golden brown, but not too brown.
  • Serve with your favorite dipping sauce.

1 tablespoon seasoning salt
1 tablespoon red pepper flakes
2 teaspoons cayenne pepper
2 teaspoons poultry seasoning
1 teaspoon lemon pepper
Freshly ground black pepper
3 pounds chicken wings, split at the joint, tips removed
2 large eggs
2 tablespoons hot sauce
1 tablespoon red pepper flakes
1 teaspoon cayenne pepper
Freshly ground black pepper
2 cups all-purpose flour
Vegetable oil, for frying
1 cup sour cream
2 tablespoons horseradish
1/4 cup chili sauce
1/2 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Make the seasoning: Whisk the seasoning salt, red pepper flakes, cayenne, poultry seasoning, lemon pepper and 2 teaspoons black pepper in a small bowl. Set aside 2 tablespoons seasoning in a separate bowl.
  • Rinse the wings under cold water and place in a shallow baking dish. Sprinkle with the seasoning, then refrigerate, covered, 1 hour.
  • Make the batter: Whisk the eggs, hot sauce, red pepper flakes, cayenne and 1 teaspoon black pepper in a medium bowl. Put the flour in a shallow dish or pie plate.
  • In a large deep fryer or Dutch oven, heat 2 inches of vegetable oil until a deep-fry thermometer registers 350 degrees F. Dip the wings in the eggs, then in the flour. Place the wings, three at a time, in the hot oil and fry until golden, 8 to 10 minutes, turning occasionally. Transfer to a paper-towel-lined baking sheet. Make sure the oil returns to 350 degrees F before adding the next batch. Sprinkle the wings with the reserved seasoning to make them extra hot.
  • Make the sauce: Mix the sour cream, horseradish, chili sauce, cayenne, and salt and black pepper to taste. Serve with the wings.

The wings may be oven baked instead of grilling, this also works well using small chicken drumsticks instead of the wings although cooking time will need to be increased --- adjust the cayenne pepper to suit heat level, and the recipe may be doubled, this is easy and *ver* good!

2 1/2 lbs chicken wings (separated at joints and tips discarded)
seasoning salt
1/2 cup butter
1 cup louisiana hot sauce (or use hot sauce of choice)
1/8-1/2 teaspoon cayenne pepper (adjust amount to suit taste)
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper

Steps:

  • Set grill to high heat.
  • Season the wings lightly with seasoned salt.
  • Cook the wings 8-10 minutes on each side (cooking time will take slightly longer for larger pieces).
  • Melt the butter in a saucepan and mix in hot sauce, cayenne pepper, garlic powder and black pepper.
  • Place the wings in a large plastic container with a lid.
  • Pour the sauce over the cooked wings and toss using hands fitted with rubber gloves or seal and shake the container to coat the wings with the sauce.
  • Delicious!
