This cheddar biscuit recipe is quick & easy and uses only 6 ingredients. Fluffy, cheesy, buttery, and oh so delicious!

Number Of Ingredients 6

2 cups all purpose flour ((if using self-rising flour, omit baking powder and salt))
1 Tbsp baking powder ((leave out if using self-rising flour))
½ tsp salt ((leave out if using self-rising flour))
½ cup butter, (cold, cut in small pieces or shredded (if using unsalted, add ¼ tsp more salt than above))
1 cup cheddar cheese, (sharp, shredded)
1 cup buttermilk ((or regular milk))

Steps:

  • Preheat oven to 400 F.
  • In a large mixing bowl, combine flour, baking powder, and salt. Add butter in smallish pieces.
  • With your hands (or a pastry blender), combine flour mixture and butter until butter is pea sized and mixture is crumbly.
  • Add shredded cheese and mix in with spoon or hands.
  • Make a well in the center of the dry ingredients. Pour in milk and combine with a wooden spoon until well incorporated, taking care not to over mix.
  • Turn out onto a floured surface and mold your dough with floured hands to about 3/4 inch thickness. Add more flour as needed, but not any more than necessary, as you don't want the batter dry.
  • Cut out biscuits with biscuit cutter or cookie cutter. Add each biscuit to an ungreased cookie sheet or iron skillet. They should touch for higher rise of the biscuits while baking.
  • Brush each biscuit lightly with melted butter if desired. Bake 25-30 minutes or until golden brown.

3 1/2 cups all purpose flour
1 1/2 cups buttermilk (( make your own with 1 3/4 cup of milk and 1 tablespoon plus 1/4 teaspoon vinegar))
2 tbsp baking powder
2½ tsp salt
dash of cayanne pepper
9 tbsp butter - 1 stick plus 1 tbsp
2 cups grated cheddar cheese
1 large egg - beaten ((for egg wash))

Steps:

  • Cut cold butter into pieces and allow to soften on counter while mixing dry ingredients.
  • In a large bowl add flour, baking powder and salt, mix well.
  • Place the flour mixture in the bowl of stand mixer, add butter and grated cheese.
  • Using the paddle attachment mix until the butter forms into small peas.
  • Preheat oven to 400 degrees.
  • Add the buttermilk to the mixer and continue mixing until dough comes together.
  • Turn dough onto a floured surface and kneading several times.
  • Roll out dough to 1/2 inch think.
  • Using a round cookie cutter or drinking glass, cut out biscuits.
  • Brush biscuits with the egg wash and bake in oven for about 20-25 minutes then let cool on a wire rack.
  • Store in airtight container.

BUTTERMILK CHEDDAR BISCUITS

2 cups all-purpose flour, plus more as needed
1 tablespoon baking powder
1 1/2 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
1/2 cup cold buttermilk, shaken
1 cold extra-large egg
1 cup grated extra-sharp Cheddar
1 egg, beaten with 1 tablespoon water or milk
Maldon sea salt, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Place 2 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with the paddle attachment. With the mixer on low, add the butter and mix until the butter is the size of peas.
  • Combine the buttermilk and egg in a small measuring cup and beat lightly with a fork. With the mixer still on low, quickly add the buttermilk mixture to the flour mixture and mix only until moistened. In a small bowl, mix the Cheddar with small handful of flour and, with the mixer still on low, add the cheese to the dough. Mix only until roughly combined.
  • Dump out onto a well-floured board and knead lightly about 6 times. Roll the dough out to a rectangle 10 by 5 inches. With a sharp, floured knife, cut the dough lengthwise in half and then across in quarters, making 8 rough rectangles. Transfer to a sheet pan lined with parchment paper. Brush the tops with the egg wash, sprinkle with salt, if using, and bake for 20 to 25 minutes, until the tops are browned and the biscuits are cooked through. Serve hot or warm.

2 cups all-purpose flour
2 tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
1/4 to 1/2 teaspoon cayenne pepper
1/2 cup cold butter. cubed
1/2 cup shredded sharp cheddar cheese
3/4 cup buttermilk

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, salt and cayenne. Cut in butter until mixture resembles coarse crumbs. Add the cheese and toss. Stir in buttermilk just until moistened. , Turn onto a lightly floured surface; knead 8-10 times. Pat or roll to 1 in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 1 in. apart in a large ungreased cast-iron or other ovenproof skillet. Bake at 425° until golden brown, 15-18 minutes. Serve warm.

  • Place the flour, baking powder, garlic powder, and salt together in a large bowl or in a large food processor. Whisk or pulse until combined. Add the cubed butter and cut into the dry ingredients with a pastry cutter or by pulsing several times in the processor. Cut/pulse until coarse crumbs form. See photo above for a visual. If you used a food processor, pour the mixture into a large bowl.
  • Fold in the shredded cheese. Make a well in the center of the mixture. Pour 1 cup (240ml) buttermilk and drizzle honey on top. Fold everything together with a large spoon or rubber spatula until it begins to come together. Do not overwork the dough. The dough will be shaggy and crumbly with some wet spots.   • Pour the dough and any dough crumbles onto a floured work surface and gently bring together with generously floured hands. The dough will become sticky as you bring it together. Have extra flour nearby and use it often to flour your hands and work surface in this step. Using floured hands or a floured rolling pin, flatten into a 3/4 inch thick rectangle as best you can. Fold one side into the center, then the other side. Turn the dough horizontally. Gently flatten into a 3/4 inch thick rectangle again. Repeat the folding again. Turn the dough horizontally one more time. Gently flatten into a 3/4 inch thick rectangle. Repeat the folding one last time. Flatten into the final 3/4 inch thick rectangle.
