SLOW-COOKER PINTO BEANS

Slow-Cooker Pinto Beans image

If you have yet to cook beans from scratch and own a slow cooker, this is the recipe for you! It comes together with pantry ingredients, requires minimal prep and thanks to the slow cooker, you'll be rewarded with plump, perfectly tender beans with almost zero hands-on time. (Navy beans would also work well here.) Seasoned with warm spices and pickled jalapenos, they are a great side dish. Or serve them over rice or with warm tortillas as a meal.

Time 8h10m

Yield 6 servings

Number Of Ingredients 11

1 pound dried pinto beans, rinsed and picked over (see Cook's Note)
48 ounces low-sodium chicken broth (or one 32-ounce carton plus 2 cups water)
One 8-ounce jar mild or hot diced pickled jalapeños
2 tablespoons dried oregano
1 tablespoon ground cumin
3 cloves garlic
2 dried bay leaves
1/4 cup cilantro leaves plus 1/4 cup chopped cilantro stems, optional
Kosher salt
3/4 cup shredded sharp Cheddar or crumbled Cotija or queso fresco
1 lime, cut into wedges

Steps:

  • Put the beans, chicken broth, pickled jalapeños and brine from the jar in a 4-to-7-quart slow cooker. Stir in the oregano, cumin, garlic, bay leaves, cilantro stems if using and 1 teaspoon salt. Cover and cook on high until the beans are tender but still hold their shape, 8 to 10 hours.
  • Remove and discard the bay leaves. Use the back of a spoon to smash the garlic cloves, then stir them into the beans. Serve topped with the cheese, cilantro leaves and lime wedges.

PINTO BEANS WITH MEXICAN-STYLE SEASONINGS

Pinto Beans With Mexican-Style Seasonings image

Pinto beans are simmered with onion, tomatoes, chili powder, cumin and garlic. I love making these beans just because they make the whole house smell so good, and the longer they simmer the better they taste. You could add 1/2 can of beer to make 'borracho' beans. I personally taste-test throughout the entire cooking process and add extra seasoning as I feel it needs it. These beans could simmer all day long; just make sure they have plenty of water to keep the beans covered.

EASY SLOW COOKER PINTO BEANS

Easy Slow Cooker Pinto Beans image

I love beans but I never remembered to overnight soak them. Then a friend of mine told me how she just crock pots there's no soaking required! Now I cook beans once a week and freeze the extras. I also save the bones from ham or I save pieces of bacon to cook them in the beans. We always have lots of these on hand. When you serve...

Time 6h5m

Number Of Ingredients 7

1 lb dried pinto beans
3 qt water
1 hambone, if desired
1 tsp kosher salt
Optional bacon, cooked and chopped up
Optional 1lb chopped up smoked sausage
1 1/2 tsp creole seasoning (tony chacheres)

Steps:

  • 1. Place all ingredients In a crock pot. Do not soak your beans, there is no need.
  • 2. Place cooker on high for 6 hours, stirring at the three hour mark.
  • 3. Enjoy over rice or in tortillas. It makes a soupy broth that when cooled becomes nice and thick. If you don't have a ham bone don't worry you can substitute ham hock, sausage or bacon. They are all delicious.
  • 4. One more quick note, if your dried beans are very old, like food storage beans that are over four years old, you may need to soak them a few hours and add a little more water and a dash of meat tenderizer to help them absorb better. But I have cooked ten year old beans like this and they were delicious.
