Sautéed Zucchini image

This sautéed zucchini recipe is made with fresh zucchini, olive oil, and garlic powder, and parmesan cheese adds an extra layer of flavor to this tasty dish.

2 tablespoons olive oil
2 pounds zucchini, sliced into 1/4-inch thick rounds
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
1/4 cup​ grated Parmesan cheese

Steps:

  • Gather the ingredients.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the sliced zucchini, salt, pepper, and garlic powder.
  • Cook, tossing the zucchini occasionally until it is crisp-tender. Taste and adjust the seasonings (add more salt and pepper, if necessary).
  • Sprinkle with Parmesan cheese. Cook another 30 seconds or so, just until cheese melts. Remove from the heat and serve immediately. Enjoy.

Tonight my dh requested zucchini, and I knew that he would want something simple. Threw this together, and he loved it.

1/4 sliced onion (in strips)
1 zucchini, cut into thin circles
2 tablespoons margarine
1 garlic clove, crushed

Steps:

  • Melt the margarine in a pan.
  • Saute the garlic and onion in the butter until soft.
  • Add the zucchini and cook until it as done as you desire (I cooked ours for about 10 minutes).
