I wanted to create something quick and easy using the ham in the freezer that was left over from the holidays. I was scanning in the kitchen for ingredients when inspiration hit me. I was delightfully surprised with the outcome of this savory dish and decided to name it, "Ham Stir". My husband and nephew came through the front...

1 16 oz. pkg. elbow macaroni
1 lb cooked ham, cut in bite size pieces
3 Tbsp butter
1 medium onion chopped fine
1/2 c sweet bell pepper chopped fine
1 c sour cream
salt and pepper to taste
COOK MACARONI ACCORDING TO PACKAGE DIRECTIONS. WHEN DONE COOKING DRAIN AND SET ASIDE

Steps:

  • 1. Heat butter in skillet. Add onions and stir and cook over medium heat for 5 minutes. Add ham and bell pepper and cook an additional 5 minutes.
  • 2. Add the sour cream and stir to heat through about 5 minutes.
  • 3. Add the sour cream and ham mixture to the macaroni and mix well. Season with salt and pepper and serve.

A great take on a Hawaiian-style dinner. This one's great for that leftover ham. Cubed ham sauteed with onions and pineapple in a sweet sauce. Kids love it and it's great served over rice or noodles.

2 tablespoons butter
2 ½ cups cooked and cubed ham
2 green onions, chopped
1 cup pineapple chunks, drained
1 ⅓ cups pineapple juice
4 teaspoons cider vinegar
2 tablespoons brown sugar
2 teaspoons prepared mustard
2 tablespoons cornstarch

Steps:

  • Melt the butter in a large skillet over medium heat. Saute the ham, onions and pineapple chunks in the butter for about 5 minutes.
  • In a separate medium bowl, combine the pineapple juice, vinegar, brown sugar, mustard and cornstarch. Stir this together well and pour over the ham mixture in the skillet. Stir well and allow to heat through and thicken, about 5 minutes.
