4 ounces uncooked angel hair pasta or thin spaghetti
1 medium onion, thinly sliced
1 medium green pepper, cut into 1-inch strips
1 package (9 ounces) frozen broccoli cuts, thawed
1/4 cup sliced fresh mushrooms
2 tablespoons canola oil
1 tablespoon cornstarch
1-1/4 cups chicken broth
1/4 cup water
1/4 cup soy sauce
12 ounces imitation crabmeat, cut into 1-inch pieces

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet or wok, stir-fry the onion, green pepper, broccoli and mushrooms in oil for 3-4 minutes or until crisp-tender. , In a small bowl, combine the cornstarch, broth, water and soy sauce until smooth. Gradually stir into skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in crab; cook 2-3 minutes longer or until heated through. Drain pasta; toss with crab mixture.

1 (8 ounce) package imitation crabmeat
1 (8 ounce) package imitation scallops
1 (28 ounce) can chop suey vegetables
1 cup stir-fry sauce (I like sesame ginger!)

Steps:

  • Cook the lo mein noodles according to the package.
  • Heat the vegetables and imitation crab and scallops in a pan and stir in about 1/4 of the sauce.
  • Mix everything together (including the extra sauce); you can add extra sauce if necessary.

Cheap and easy alternative to take out. Our kid loves ramen noodles, so this is a great way to make him eat his veggies without him even realizing it! You could make this with chicken, beef, or pork as well, just use the corresponding ramen soup flavor. I'm sure that a lot of people would also add sesame oil for more authentic flavor, but I find sesame oil overpowering (personal preference).

1 (16 ounce) package frozen mixed vegetables
¼ cup water
1 (3 ounce) package shrimp-flavored instant ramen noodles
3 tablespoons low-sodium soy sauce
1 teaspoon garlic powder
½ teaspoon ground ginger

Steps:

  • Combine shrimp, mixed vegetables, and water in a skillet over medium-high heat; cook and stir until vegetables are cooked through and shrimp are hot, about 5 minutes.
