Chive butter is a delicious addition to any recipe. It's great on steaks, fish, vegetables, and you'll love it on a baked potato or mashed potatoes.

1 pound (4 sticks) butter (unsalted)
½ cup chives (fresh, finely chopped)

Steps:

  • Gather the ingredients.
  • In a large bowl, mash butter with a potato masher or just squish with hands. You can even cream butter using paddle attachment of a stand mixer-the goal is to get the butter soft enough to be able to incorporate chives.
  • Add chopped chives and continue mashing/squishing/mixing butter until fully mixed.
  • Spread out a large (1-foot or bigger) square of plastic wrap across work surface, then scoop mixed butter onto plastic. You are now going to roll the butter into a cylinder inside the plastic wrap
  • Tie excess plastic wrap at ends of the cylinder into a knot, or just use little pieces of string to tie off the ends. You can even make a string out of a short section of plastic wrap and roll it into a little rope.
  • Chill or freeze until needed.

BLUE CHEESE AND CHIVE BUTTER



Blue Cheese and Chive Butter image

2 sticks (1 cup) salted butter, softened
1/2 cup crumbled blue cheese
2 tablespoons chopped fresh chives
1/2 teaspoon red pepper flakes
Pinch ground black pepper

Steps:

  • Put the softened butter in the bowl of a stand mixer fitted with a paddle attachment. Whip the butter until it's fluffy. Add the blue cheese, chopped chives, red pepper flakes and ground pepper. Mix until totally combined, scraping the sides as needed.
  • Lay out a long piece of plastic wrap on top of a piece of aluminum foil and scoop the butter mixture in a long strip down the middle of it. Carefully pull one side of the plastic wrap and foil over the butter, squeezing it gently to form it into a log. Continue to roll the log of butter into a roll. When it's all rolled up, twist the ends (like a piece of candy) until they become very taut (this means the butter is pressing together inside the plastic and foil to form a cohesive roll). Place the roll of butter into the fridge so it will harden, at least 1 hour, or into the freezer if you need to speed along the process.

  • Fully soften the butter by leaving it at room temperature for 30-60 minutes before proceeding.If using chive blossoms, dip the blossoms in a bowl of water to clean, and then set on a towel to dry.
  • Melt about 1 tablespoon of butter on medium-low heat in a pan. Add the chives (but not the blossoms), garlic, and salt to the butter, and gently heat until the chives soften and the garlic is fragrant (about 2-3 minutes).As soon as the garlic is fragrant, turn off the heat. Do not allow the chives to brown. If swapping fresh garlic for garlic powder, do not allow the garlic to brown.Set aside and allow to cool until slightly hardened.
  • Use a rubber spatula to fold the softened butter into the chive and butter mixture. Break the chive blossoms apart into small, individual flowers, and fold those into the butter.Tip: If your pan is too hot, you might accidentally melt all of the butter. If that happens, simply set it aside and let it cool and harden before trying to form it into a log.
  • To serve the same day:Pour butter into a serving bowl and refrigerate for at least an hour before serving. Note that butter will harden again in the fridge, so if you want it to be spreadable, take out of the fridge a few minutes before serving.Refrigerate leftovers and use within 5 days.To store for later:Chill butter until it's cool enough to form, and then roll it into a log. Use parchment paper or a rubber spatula to help you form the log. Wrap in parchment paper or plastic wrap, and store in an airtight container, and freeze for up to 6 months. When you're ready to use the butter, simply slice off the amount you want to use and put the rest back in the freezer.
