EASY CHICKEN AND POTATOES

Steps:
- Preheat oven to 400°F.
- Drizzle 1 tablespoon olive oil over the chicken thighs and season with lemon pepper seasoning.
- In a medium bowl, combine potatoes, carrots, onion, garlic, remaining olive oil, and salt & pepper to taste. Toss well.
- Place vegetables on a non-stick or parchment-lined baking sheet. Nestle chicken pieces in between the vegetables.
- Roast 45-50 minutes or until potatoes are tender and chicken reaches 165°F.
- Remove chicken from the pan and use a spatula to stir vegetables in the juices on the pan.
- Serve immediately.

- Preheat a waffle iron.
- In a bowl combine the potatoes and hot chili oil.
- Cook potato waffles in batches in waffle iron by spreading a layer of Shredded Hash Brown mixture across hot iron and closing lid until browned. Remove each waffle to a holding platter.
- Meanwhile, in a skillet over medium heat add the vinegar and syrup and simmer until it coats the back of a spoon. Add the chicken to the skillet and toss to coat completely.
- Serve each waffle with a helping of chicken on top.

- Spray a large piece of heavy duty aluminum foil with non-stick cooking spray.
- Open both bags of Simply Potatoes and pour onto aluminum foil.
- Dot with slices of butter.
- Fold aluminum foil up around potatoes and pour Worcestershire sauce and chicken broth over potatoes.
- Sprinkle with shredded cheddar.
- Seal edges of aluminum foil and grill covered on medium heat for 35 to 40 minutes. (This meal can also be made in the oven, but is not quite as tasty without the grilled flavor. Bake at 350 degrees in the oven for about 45 minutes.).
