PORK CHOP AND CHEESY RICE CASSEROLE

This is a variation on one of my mother's go-to recipes and gets raves every time I serve it. You can mix and match ingredients depending on what you have on hand. This one will quickly become a favorite in your home; even kids love it! This is a very easy recipe to alter and make your own. The possibilities are endless!

Ingredients

1 (16 ounce) can chicken broth
1 ½ cups uncooked rice
1 (10 ounce) can cream of chicken soup
1 cup water
4 ounces shredded Cheddar cheese
1 pound boneless pork chops
salt and ground black pepper to taste

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish.
Stir chicken broth, rice, cream of chicken soup, and water together with a whisk in the prepared casserole dish until smooth; add Cheddar cheese, season with salt and pepper, and stir.
Lie pork chops into the rice mixture in a single layer; season with more black pepper.
Bake in preheated oven until rice in the middle of the dish is tender and pork chops are golden brown, about 80 minutes.

Ingredients

4 boneless pork chops
3 potatoes, peeled and cut into chunks
1 large white onion, cut up
1 (10 1/2 ounce) can cheddar cheese soup
milk (enough to fill up can)
olive oil (enough to brown pork chops in)
salt and pepper

Steps:

Using an electric frying pan, brown pork chops in olive oil.
Remove from pan.
Lower heat and add can of cheese soup, then fill can with milk and add.
Stir with whisk until smooth.
Add pork chops, potatoes and onion.
Bring temperature up to simmer.
Simmer covered for 30 minutes, stirring occasionally.
Serve in a casserole dish.
(Very rich & delicious!).

Preheat the grill to medium-high. In a frying pan, soften the onion in 1 tbsp of the olive oil over a low heat for 5 minutes. Remove and set aside to cool a little.
Mix the Cheddar, English mustard, softened onion and cream to a thick, spoonable mixture in a bowl. Season.
Brush the pork all over with 1 tbsp oil, season and place in a baking tray. Grill for 3-4 minutes, turn over and grill for 3 minutes more. Spread the Cheddar and onion mixture over the top of the chops. Place under the grill for a couple of minutes until the topping is melted and golden and the pork is cooked through.
Mix the lettuce, radish and peas in a bowl. Dress with the remaining oil, lemon zest and juice. Season. Serve in bowls with the pork chops.
