¼ cup butter, melted
½ cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 egg
1 tablespoon milk
1 cup shredded Cheddar cheese
½ cup Italian seasoned bread crumbs
1 cup crispy rice cereal
3 skinless, boneless chicken breast halves - cut in half
2 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a medium baking dish with 1/4 cup melted butter.
  • In a bowl, mix the flour, salt, pepper, and garlic powder. In a separate bowl, beat together the egg and milk. In a third bowl, mix the cheese, bread crumbs, cereal. Dredge chicken pieces in the flour mixture, dip in the egg mixture, then press in the breadcrumb mixture to coat. Arrange in the prepared baking dish. Drizzle 2 tablespoons butter evenly over chicken.
  • Bake 35 minutes in the preheated oven, or until coating is golden brown and chicken juices run clear.

This is one of my son-in-law's favourite chicken recipes. This recipe can also be made 'lighter' for those on a low fat diet by using a low fat cheese and trim/light milk and frying in a non stick pan which has been lightly sprayed with cooking spray/oil

4 skinless chicken breasts
2 egg whites
1/2 cup plain flour
1/4 cup dry breadcrumbs
canola oil (for frying)
8 teaspoons butter or 8 teaspoons margarine
4 teaspoons plain flour
1 cup milk
1/2 cup cheddar cheese or 1/2 cup edam cheese, grated
chopped parsley (for garnish) or chopped paprika (for garnish)

Steps:

  • Combine the breadcrumbs and flour.
  • Lightly beat the egg whites with 8 teasp water.
  • Dip chicken in the egg white mix and then coat with the breadcrumb mix.
  • Heat a little oil in frying pan and brown chicken for about 5mins each side.
  • Place chicken in an oven proof dish and place in oven at 180'C or 350'F.
  • Bake for approx 15mins or until cooked through.
  • While chicken is in oven make sauce.
  • In a small saucepan melt butter and add flour.
  • Cook 1min.
  • over med heat.
  • Add milk and stir constantly until boiling.
  • Turn to low heat and simmer for 2mins still stirring.
  • Remove from heat and stir in 1/4cup cheese.
  • Place a chicken breast on each of 4 plates and pour over sauce.
  • Sprinkle with remaining cheese.
  • Garnish with parsley or paprika.

3 tablespoons butter, divided
4 boneless chicken breasts
salt and pepper, to taste
2 scallions, thinly sliced
1 tablespoon parsley, chopped fresh
1/2 teaspoon dried thyme
1/2 cup chicken stock
3 tablespoons dry white wine
3/4 cup swiss cheese, grated
2 tablespoons parmesan cheese, grated
2 tablespoons breadcrumbs

Steps:

  • Preheat oven to 375°F.
  • Lightly butter a shallow baking dish.
  • Place chicken in baking dish and sprinkle with salt, pepper, scallions, parsley, and thyme.
  • In a measuring cup combine broth and wine and pour over chicken,
  • Cover and bake 20 minutes.
  • In a small bowl combine cheeses and breadcrumbs.
  • Remove chicken from the oven and sprinkle with cheese mixture.
  • Dot with remaining butter and place under broiler until cheese is melted and golden.

1/4 cup bacon bits
1 (1 1/4 ounce) package cheese sauce mix
1/4 cup chopped chives
salt and pepper

Steps:

  • Preheat oven to 450.
  • Salt and pepper chicken to taste.
  • Cover with foil.
  • Bake for about 30-45 minutes, depending on size of chicken breasts.
  • Prepare cheese sauce mix per directions on package.
  • Add chopped chives and bacon bits.
  • Remove foil from chicken.
  • Pour sauce mix over chicken.
  • Bake about 10 minutes more.

1 large egg
1 cup seasoned bread crumbs
4 boneless skinless chicken breast halves (6 ounces each)
1 jar (26 ounces) garden-style pasta sauce
1 cup shredded part-skim mozzarella cheese
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, beat the egg. Place the bread crumbs in another shallow bowl. Dip chicken in egg, then coat with crumbs. Place in a 13x9-in. baking dish coated with cooking spray. , Bake, uncovered, at 400° for 20-22 minutes or until a thermometer reads 170° Pour pasta sauce over chicken. 2 lbs chicken pieces
1 1/2 teaspoons seasoning salt (or to taste, can use white salt)
ground black pepper (to taste)
1 teaspoon garlic powder (optional)
2 cups prepared pasta sauce
8 ounces uncooked spaghetti (or use as much as desired)
1/2 cup parmesan cheese (optional or to taste)

Steps:

  • Set oven to 375 degrees F.
  • Grease a 13 x 9-inch or a 2-quart baking dish (a larger baking dish might be needed for more chicken pieces).
  • Pat the chicken pieces dry using paper towels.
  • Season the chicken pieces with seasoned salt, black pepper and garlic power.
  • Place into the baking dish.
  • Bake for 30 minutes.
  • Drain any fat in the dish.
  • Pour the pasta sauce over the chicken then return to oven for another 25-30 minutes or until the chicken is cooked through.
