EASY OATMEAL BARS (4 INGREDIENTS!)
Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

Steps:
- Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
- Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
- Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

Steps:
- Mix shortening, sugar and salt.
- Add flour, baking soda, oats, and milk; mix well.
- Place 1/2 of mixture in a greased pan.
- Press down in pan with fingertips or back of spoon.
- Spread with 2 teaspoons apple sauce or marmalade.
- Bake about 21 minutes.
- Let cool and cut into slices.
- Use other half for second batch of cookies.

FRUIT-FILLED OATMEAL BARS
Hearty, yummy, and even fairly healthy (if you want it to be!). These are not like granola bars but more like a brownie with a nice crust. Originally taken from BH&G "New Cook Book", 1989--now that I live overseas, I love these older cookbooks because so many of the recipes are still "from scratch" and don't use convenience products that are too expensive or haven't come here yet. Thanks to my Grams for sending it to me when I moved! :)

Steps:
- In mixing bowl, combine flour, oats, brown sugar, and baking soda.
- Cut in margarine/butter until mixture resembles coarse crumbs.
- Reserve 1/2 cup of the flour mixture.
- Press remaining flour mixture into the bottom of an ungreased 9x9x2 baking pan.
- Spread with desired filling.
- Sprinkle with reserved flour mixture.
- Bake at 350F for 30-35 minutes or until the top is golden.
- Cool in pan on wire rack.
- Cut into bars.
- FILLING OPTIONS:.
- ***Following cookbook's 'shortcut' suggestion of substituting 10 oz jar of preserves in place of homemade filling, I used a store-bought, very dense, low-moisture apple butter (like a thick jam). I have also tried it with blueberry preserves but the preserves were too moist--it made the bars sticky not good.***.
- RAISIN FILLING:.
- In medium saucepan, combine 1/2 cup water, 2 tablespoons sugar, and 2 teaspoons cornstarch. Add 1 cup raisins. Cook & stir until thickened & bubbly.
- APPLE-CINNAMON FILLING:.
- Peel/core/chop 2 medium apples. In medium saucepan, combine apples, 2 tablespoons sugar, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon ground cinnamon, and a dash of ground cloves. Bring apple mixture to a boil; reduce heat & simmer 8-10 minutes or until apples are very tender.
- APRICOT-COCONUT FILLING:.
- In medium saucepan, combine 1 cup diced dried apricots and 3/4 cup water. Bring apricot mixture to boil; reduce heat. Cover and simmer 5 minutes. Meanwhile, combine 1/4 cup sugar and 1 tablespoon all purpose flour. Stir into apricot mixture. Cook and stir 1 minute more or until mixture is very thick. Stir in 1/2 cup coconut.

FRUIT & NUT BAKED OATMEAL
Steps:
- Preheat oven to 400°. In a bowl, mix oats, baking powder and cinnamon. In another bowl, whisk eggs, milk, brown sugar and oil until blended; stir into oat mixture. Fold in apple, cranberries and walnuts., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until set and the edges are lightly browned, 35-40 minutes. Slice and serve with milk., Freeze option: Freeze cooled individual pieces on waxed paper-lined baking sheets until firm. Transfer pieces to airtight freezer containers; return to the freezer. To use, microwave each piece on high until heated through, 1-2 minutes.

- Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. Combine eggs, milk and butter; add to the dry ingredients. Stir in apple, peaches and blueberries. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, until a knife inserted in center comes out clean, 35-40 minutes. Cut into squares. Serve with milk if desired.
