1 cup uncooked white rice
1 ½ cups water
1 (6.5 ounce) can tomato sauce

Steps:

  • Heat canola oil in a skillet over medium-high heat. Season oil with onion powder and garlic powder. Cook and stir rice in seasoned oil until rice is golden, 2 to 4 minutes.
  • Pour water and tomato sauce over the rice; stir. Bring the mixture to a boil, cover the skillet, reduce heat to medium-low, and simmer until the rice is tender, about 15 minutes.

My family loves a variety of ethnic foods, but this is one of their favorites. My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.

1 cup rice, uncooked
1/4 cup onion, chopped
2 tablespoons oil, divided
1/2 teaspoon minced garlic clove
2 chicken bouillon cubes
2 tablespoons tomato paste
1 3/4 water
1/2 teaspoon salt

Steps:

  • In a large skillet, heat 1 tablespoon oil and saute onions and garlic.
  • Add the chicken bouillon to the pan and crush the cubes.
  • Add 1 tablespoon oil and the rice and fry the rice until the rice turns slightly brown.
  • Add the salt, water and tomato paste and mix well.
  • Cover the pan and simmer 25 minutes.
  • Mix rice thoroughly and serve.
  • ENJOY!

2 cups white rice
3 cups water
1 pork bouillon cube (1 large or 2 small) or 1 vegetable bouillon cube (1 large or 2 small)
1 (8 ounce) can tomato sauce
4 tablespoons oil
2 garlic cloves, minced
1/2 cup onion, finely chopped
1 tablespoon paprika (optional)
1/2 tablespoon chili powder (optional)
1/2 tablespoon oregano (optional)
1/2 teaspoon cumin (optional)
salt and pepper

Steps:

  • Heat water and bullion in separate pot or microwave to make broth.
  • In separate saucepan add oil and brown rice until rice is golden brown color on medium/high heat.
  • Add seasonings, garlic, and onion. Be sure to keep stirring rice so it does not burn.
  • Add broth & tomato sauce. Boil for a second, cover and reduce heat to low. Cook for 25 minutes.
  • Fluff and garnish with fresh cilantro if you like.
  • Also, if you have a small can of corn you can add that at the same time when adding broth and tomato sauce -- .

This simple one pot Authentic Mexican Rice is the perfect side dish to any Mexican meal. It's easy to make and tastes delicious! Reheats well & tastes great!

Number Of Ingredients 8

1/4 cup vegetable cooking oil
1 cup raw rice (I used Jasmine, but that's because it's my favorite)
2 cloves of garlic, minced or 1 teaspoon garlic paste
1/4 cup diced onions, yellow or white
1 1/2 cups chicken or turkey broth
1 (8 ounce) can of tomato sauce
salt and pepper to taste
1/4 teaspoon dried cilantro (optional)

Steps:

  • In a deep skillet over medium heat, add oil to pan and let oil get hot - about 3 minutes.
  • Once oil is hot, add dry uncooked rice and onion. Stir constantly until rice begins to turn golden and onion is cooked.
  • Add garlic and cook for another 1 minute stirring frequently so garlic doesn't burn.
  • Pour in chicken broth to rice mixture.
  • Add tomato sauce, salt and pepper. Thoroughly mix.
  • Bring mixture to a boil, stirring occasionally so rice doesn't stick to bottom.
  • Once mixture comes to a boil, reduce to low heat, put lid on pan and cook for 20 minutes until rice is done and liquids have been absorbed.
  • Serve Immediately.
