QUICK AND EASY ALFREDO SAUCE
I experimented with this until I found a quick, cheap, and easy Alfredo sauce combination -- the secret is cream cheese!

Steps:
- Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Toss with hot pasta to serve.

TORTELLINI ALFREDO WITH PEAS
This is a very quick restaurant version of tortellini Alfredo. You can use a small canned ham, spam, bacon, or even leftover ham. You can also add a can of mushrooms, too. Served with a salad and garlic bread. It's great! I'm asked to make this all the time by my kids and their friends.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, 3 to 5 minutes. Drain and return to the pot.
- Mix in peas, ham, cream, and Parmesan cheese and simmer over medium heat until sauce thickens, about 4 minutes. Season with salt and pepper.

EASY ALFREDO WITH PEAS

Steps:
- 1. Add 4 litres of water to a pot and add 1 tbsp (15 mL) salt to water. Bring to a boil.
- 2. Heat a large pot or frying pan over medium heat. Once the pan is hot, add cream and bring to a simmer. Simmer for 4 minutes to slightly thicken. Keep warm.
- 3. Meanwhile, cook pasta according to package directions. Add peas to the hot cream and return to a simmer. Once pasta is cooked, drain well and add to the hot sauce.
- 4. Add Parmesan cheese, nutmeg and sliced green onions and bring to a simmer. Adjust salt to taste and serve at once
- Chef tip: To add a little more gusto to the dish, experiment with garlic and mushrooms in the sauce and finish it off by stirring an egg yolk into the dish.

- While pasta is cooking, heat the cream in a medium saucepan over medium heat. Do not let the cream come to a boil. Whisk in butter until melted. Add the Parmesan, whisking continually, until sauce thickens. Keep warm over low heat, stirring occasionally. Be careful not to burn the sauce.
- Drain pasta; do not rinse. Place in a bowl large enough to allow tossing. Pour sauce over warm pasta and toss to coat.
