3 tablespoons unsalted butter
2 cups cake flour, plus more for dusting
1/2 cup almond flour
2 1/4 teaspoons baking powder
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1/2 cup granulated sugar
Zest of 1/2 lemon (1 to 2 teaspoons zest)
1/4 teaspoon almond extract
1 large egg plus 1 yolk
1/3 cup buttermilk
2 to 3 quarts neutral oil (vegetable or peanut are good)
2 1/2 cups powdered sugar
1/4 cup buttermilk
1/4 teaspoon almond extract
1/4 teaspoon kosher salt
Juice of 1/2 lemon (1 to 2 tablespoons juice; include the pulp)

Steps:

  • For the donuts: In a small saucepan, melt the butter over medium-low heat. Let it cook on low heat, swirling occasionally while it crackles and hisses, until the crackling stops and the milk solids in the butter smell toasty and nutty and have turned golden brown, 3 to 4 minutes. Remove from the stove and let cool to room temperature.
  • Combine the cake flour, almond flour, baking powder, salt and baking soda in a bowl, whisk together and set aside.
  • In a mixer with the paddle attachment, beat together the melted butter, granulated sugar and lemon zest. Add the almond extract, whole egg and egg yolk and beat until light and fluffy, 2 to 3 minutes. Add the dry ingredients and buttermilk and mix just until a soft dough forms. Remove onto a piece of plastic wrap, flatten out to a disc, cover and refrigerate for at least 1 hour (or overnight if you want to make the night before and finish in the morning).
  • Unwrap the dough onto a liberally floured surface and pat out with your hands (or you can use a rolling pin) to 3/4 inch thick. Using a 3- to 4-inch glass or round cutter, punch out as many dough circles as you can and place on a baking sheet. Reroll until all the dough is cut. Using a small bottle cap or a round pastry tip, cut a hole in the center of each donut (you can use these pieces to test the oil or to have as snacks). Cover with plastic wrap and refrigerate for 30 minutes to 1 hour. It is important that the dough is cold when frying (chilled dough is easier to handle and results in a nicer crust with well-defined cracks).
  • Heat 2 inches of oil in a heavy-bottomed pot to 350 degrees F.
  • For the glaze: Right before frying the donuts, combine the powdered sugar, buttermilk, almond extract, salt and lemon juice in a medium bowl and whisk until smooth.
  • When the oil is hot, carefully drop the donuts in the oil (2 to 3 at a time; do not crowd the pot). They will sink to the bottom but pop up after 15 to 20 seconds (don't disturb them during this time). Fry, flipping frequently, until deep golden brown, 3 to 5 minutes. Remove from the oil onto a rack.
  • While still warm but cool enough to handle, drop each donut into the glaze, flip to coat the entire thing, then let set on the rack. These are the best right away, but they actually keep pretty well for a day or two because they are very moist.

EARL GREY MADELEINES

Cédric Grolet, the pastry chef of Le Meurice hotel in Paris, is famous for his Instagram feed, which has nearly a million and a half followers, his tattoos and his title: Best Pastry Chef in the World. Mostly, and most rightly, he's famous for his elegant pastries, so I was surprised when he asked me if I'd tasted one of his simplest, his madeleines. Small sponge cakes baked in shell-shaped molds (metal pans give you the best color and crust), madeleines are known for the impressive bump that develop on their tops. These madeleines, adapted from a Grolet recipe, are made with brown butter and flavored with Earl Grey tea and honey. Like all madeleines, they benefit from a rest in the refrigerator before they're baked. (Good for the mads, convenient for the baker.) If you can arrange it, serve the madeleines just minutes out of the oven - it's when their fragrance and texture are at their peak.

2 cups/255 grams cake flour, plus more for dusting
1 tablespoon baking powder
3 tablespoons full-flavored honey
1 cup plus 2 tablespoons/255 grams unsalted butter (2 sticks plus 2 tablespoons), plus more for greasing
3/4 cup plus 1 tablespoon/165 grams granulated sugar
2 bergamots or Meyer lemons (or 1 lemon and 1 clementine), finely zested
1 tablespoon loose Earl Grey tea, finely chopped
3 large eggs plus 1 large egg white, at room temperature
5 tablespoons/75 milliliters whole milk, slightly warm

Steps:

  • Sift together the flour and baking powder. Put the honey in a medium heatproof bowl, and place a strainer over the bowl.
  • Bring the butter to a boil in a medium saucepan over medium-high heat. As the butter cooks, gently swirl the pan. The butter will foam, then bubble, then turn golden. In 5 to 7 minutes, when the butter browns (it will be the color of hazelnuts, and have that aroma as well), pour it through the strainer onto the honey. Some dark bits will slip through the strainer, and that's fine! Stir to blend.
  • In a large bowl, whisk the sugar, zest, tea, eggs and egg white, and milk until combined; whisk 1 or 2 minutes more after the ingredients are blended. Add the flour mixture in three to four additions, whisking the ingredients together gently. You'll have a thick batter that will fall back on itself in a ribbon. Switch to a spatula, and gradually stir in the warm butter-honey mixture. The batter will have a beautiful sheen. Press a piece of plastic wrap against the surface, and refrigerate the batter for at least 8 hours or up to 2 days.
  • When you're ready to bake, center a rack in the oven, and heat it to 425 degrees.
  • Butter and flour a regular-size madeleine pan (or coat it with nonstick baking spray); do this even if the pan is nonstick. Use a slightly rounded tablespoon of batter to fill each shell. Don't worry about leveling the batter, as it will even out in the oven. Cover, and refrigerate any remaining batter.
  • Bake the madeleines until the cakes are golden and the bumps spring back when gently prodded, 11 to 13 minutes. Unmold immediately by rapping the pan against the counter. Serve now ... or don't. The madeleines stale quickly, but that just makes them better for dunking. If you're baking more madeleines, be certain to cool the pan between batches.

  • Place the milk in a small saucepan. Bring to just shy of a simmer, then add the earl grey tea, remove from the heat, and cover and steep for 15 minutes. Strain the tea out, pressing down to extract as much flavour as possible.
  • Weigh out 280g of the infused Earl Grey Milk and place into a medium bowl and leave to cool to lukewarm. Add 2 Tbsp of the sugar, and the yeast to the earl grey milk, and stir to combine. Leave for 10-15 minutes, or until foamy.
  • In the bowl of a stand mixer fitted with the dough hook attachment, place the flour, salt, and remaining sugar, and mix briefly to combine.
  • Add the eggs, vanilla, and foamy yeast and milk mixture to the bowl. Mix on low for 2-3 minutes, until the dough is starting to come together. It may look slightly dry but do not worry - it will mix together nicely in the next steps. Increase the mixer speed to medium, and mix for another 10 minutes, until the dough is soft and smooth.
