DUTCH LOAF ( LUNCEON MEAT )

Found this recipe in a make your own groceries book. Since we haven't a clue what is in the lunchmeat we buy, this may help especially with knowing the sodium content. This recipe makes 2 loaves, one in which, you can make into a pickle and pimento loaf.

3 lb ground beef
2 lb ground pork
1 c soy flour (availabe at health food stores )
1 c nonfat dry milk
2 Tbsp salt
1 Tbsp sugar
1 tsp pepper
1/2 tsp ground ginger

Steps:

  • 1. Ask your butcher to grind the meats together, or using a food processor to mix them well, but becareful not to puree the meat.
  • 2. Place in large bowl and combine spices and rest of ingredients, using hands and distributing evenly with the meat
  • 3. divide the loaf mixture into 2 equal size loaf pans. Using plastic wrap, push meat down into pans, all along edges to get all air out, to make it all tight. press down firmly. remove plastic wrap
  • 4. Bake in 275 degree oven for 2 1/2 hours
  • 5. Just before loaves are done, fill sink with ice and water, upon removal of oven sit pans in the sink for 20 to 30 minutes, cover the cooled loaves and refrigerate.
  • 6. remove both loaves from their pans to slice and serve. wrap for either refrigerator or freezer storage.
  • 7. FOR PICKLE / PIMENTO LOAF: to one of the loaves before placing in baking pans, add : 1/2 cup drained piclle relish and a drained 4 oz jar of pimentos

1 1/2 lb lean ground beef
1 medium onion chopped
1 c bread crumbs
1/2 can(s) tomato soup
1 large egg beaten
1 1/2 tsp salt
1 tsp ground pepper
TOPPING
1/2 can(s) tomato soup
1 c water
2 Tbsp yellow mustard
2 Tbsp cider vinegar
2 Tbsp brown sugar

Steps:

  • 1. Mix first 7 ingredients together well and form into a loaf. NOTE: if you soak the bread crumbs in about a half cup of warm water for a bit before adding to the meatloaf, it makes it moist and a little more dense.
  • 2. Mix topping ingredients together well and pour over meatloaf. Bake 350 for 1 hour and 15 minutes or until meatloaf is done.

1 1/2 lbs lean ground beef
1 cup breadcrumbs (I make my own, processing 2 slices whole wheat bread in food processor)
1 tablespoon onion powder
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 1/2 cups tomato sauce, divided
1 cup water
1 tablespoon prepared mustard
2 tablespoons vinegar
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350.
  • Combine beef, breadcrumbs, onion powder, salt and pepper and 1/2 cup tomato sauce in large bowl.
  • Mix well with your hands. Press into a loaf pan.
  • Combine remaining ingredients. Pour half of this mixture over the meat loaf.
  • Bake the meat loaf for one hour.
  • Heat the remaining sauce in a small sauce pan and spoon over meat to serve.

This recipe comes from an older, but local Church cookbook of family favorites. While the meat loaf is pretty standard, it is the sauce that intrigued me. We especially like it and I hope you will as well. This is comfort food! Just remember ovens vary so your time may be different.

1 1/2 lbs ground beef
1 cup fresh breadcrumb, moistened with milk
1 medium onion, diced
3/4 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten
0.5 (7 ounce) can tomato sauce
0.5 (7 ounce) can tomato sauce
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
2 tablespoons molasses
1 cup water
2 tablespoons prepared mustard

Steps:

  • Meal loaf:.
  • In a medium bowl, mix ground beef, onion, and egg together. Add the milk soaked bread crumbs, salt and pepper, then the tomato sauce to the meat mixture and lightly blend together.
  • Form into a loaf. Place in a shallow pan.
  • Bake in a moderate oven set at 350 degrees.
  • Sauce Mixture:.
  • Immediately begin mixing the sauce ingredients in a smaller bowl. Combine well.
  • Pour over meat loaf.
  • Continue baking 1 1/2 hours longer, basting occasionally.

I adapted this recipe from an old elementary school cookbook, making a few good-for-you substitutions. I used to make this meatloaf all of the time when I was younger--it was often requested by my parents for special dinners. You can use any type of ground beef, chicken, or turkey you'd like -- it tastes just as good!

1 1/2 lbs extra lean ground beef
1 cup finely chopped yellow onion
1 (8 ounce) can low-sodium tomato sauce
1 cup homemade breadcrumbs, preferably whole wheat
1 egg, beaten
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 cup water
1 (8 ounce) can low-sodium tomato sauce
2 tablespoons yellow mustard
2 tablespoons brown sugar
2 tablespoons white vinegar

Steps:

  • Preheat oven to 350 degrees.
  • Using a large spoon, combine onion, 8-oz tomato sauce, breadcrumbs, egg, salt, and pepper.
  • Add ground beef, mixing with hands.
  • Form into a loaf and place into a casserole dish, preferrably one with a lid. I like to poke a few holes into the top of the loaf so some of the sauce can get down into the loaf itself.
  • In a bowl, whisk together water, 8-oz tomato sauce, mustard, brown sugar, and vinegar.
  • Pour half of the mixture over the loaf. Cover the casserole dish with the lid, and bake the meatloaf for 1 1/2 hours. Baste at least once.
  • Pour the remaining mixture into a saucepan and bring to a simmer, allow sauce to reduce until about as thick as tomato sauce. This takes about 20 minutes.
  • Allow meatloaf to cool for 10 minutes before slicing. Pour thickened sauce over slices to serve.

This is a recipe I got from my Oma (grandma). It has always been one of my favorites and is commonly eaten mashed up in a bed of rice and vegetable soup. But I like it served as a traditional meatloaf dish, as well.

Number Of Ingredients 8

1 lb ground beef
1 lb ground sausage
2 medium potatoes
1 egg
2 teaspoons ground nutmeg, to taste
1 1/2 teaspoons salt, to taste
2 tablespoons parsley flakes
1 teaspoon black pepper or 1 teaspoon white pepper

Steps:

  • Chop potatoes into small (~1inch square) pieces (skin the potatoes, if you wish) and boil until soft.
  • Pre-heat oven to 350 degrees Fahrenheit.
  • Place in bowl large enough for all ingredients and mash.
  • Add all other ingredients and knead with hands until mixed.
  • Note: The potatoes will be VERY hot!
  • You may want to wait a bit for them to cool before using your hands.
  • Also, the meats will be very cold on your hands if not taken out of the refrigerator~ an hour ahead of time.
  • Mold into an ungreased 9x13x2 pan and bake for 1 hour.
  • Loaf will pull away from sides of pan and be surrounded by grease from the meat (more or less depending on the fat content of the meat you used).
  • Cut into pieces and enjoy.
