EASY HOMEMADE GRANOLA
Here's a delicious, easy, fiber-rich Homemade Granola that's perfect for breakfast or a post-workout snack!

Steps:
- Preheat oven to 275° F and line a large baking tray with parchment paper or a baking mat.
- Roughly chop cashews to thirds and halves.
- In a large bowl, add dry ingredients and mix until combined.
- Next add water, olive oil, and toss until evenly distributed. The granola will look slightly moist.
- Dump granola on the tray and flatten into an even layer. Do not press down firmly and leave air space as much as possible.
- Bake for 25 minutes, then stir to redistribute granola and bake for 30-40 minutes, stirring 2-3 times until granola is a dark golden brown.
- Remove from the oven and allow to cool completely before storing in an airtight container. Granola can be stored for up to 1 month.
HOMEMADE GRANOLA
This is a great recipe for homemade granola. I make it weekly! Any dried fruit can be substituted for the raisins. I use dried cranberries in mine and it's fantastic!

- Mix oats, brown sugar, coconut, wheat germ, cinnamon, and nutmeg together in a large bowl. Stir water, oil, and vanilla extract into the oat mixture; spread onto a baking sheet.
- Bake in preheated oven, stirring every 15 minutes, until golden brown and crunchy, about 1 hour; transfer to a bowl. Stir raisins and almonds through the granola.

- Mix sugar with boiling water and let sit for 5 minutes.
- Mix in other'wet ingredients' and spices.
- Toss in dry ingredients and spread mixture on cookie sheets.
- Bake at 275 for 1 1/2 to 2 1/2 hours until golden and dry.
- Cool and store in air tight container.

- Preheat the oven to 325°F. Line a 13 x 18-inch rimmed baking sheet with parchment paper. (If using parchment sheets, line the pan first with heavy-duty aluminum foil, then parchment.)
- Combine the oats, almonds, pecans, walnuts, sunflower seeds, sesame seeds, wheat germ, coconut, cinnamon and salt in a large bowl and mix well.
- In a small bowl, whisk together the honey and oil until emulsified. Pour the mixture over the dry ingredients and mix well. Spread the granola mixture evenly onto the prepared baking sheet and bake for 25-30 minutes, stirring and re-spreading a few times with a spatula, until the entire mixture is medium golden brown. Watch carefully towards the end; granola burns quickly and will brown first in the corners and on the bottom.
- Toss the granola with a spatula and mix in the dried fruits. Spread and press into an even, compact layer, then let cool on a rack to room temperature. Break the granola into large clusters and store in an airtight container in the refrigerator for up to two weeks.
