Vietnamese Duck Noodle Soup (Mi Vit Tiem) image

Vietnamese Duck Noodle Soup (Mi Vit Tiem) features slippery noodles, fall-off-the-bone duck legs, and a dark broth.

4 duck legs ((about 2.25 lbs or 1kg))
2 thumb-sized pieces of ginger, crushed
1/4 cup rice wine ((or sake, white wine))
1/4 teaspoon five-spice powder
1 tablespoon dark soy sauce
1 tablespoon crushed and roughly chopped shallots
1/2 tablespoon crushed and roughly chopped garlic
6-7 cups water ((see Notes))
8 red dates
1 1/2 tablespoons goji berries
8 dried shiitake mushrooms ((about 0.35oz or 10g))
4 star anises
1 black cardamom pod, crushed open
1/2 teaspoon coriander seeds ((or 2-3 fresh cilantro roots or stems))
2 tablespoons soy sauce
2 teaspoon dark soy sauce
1/2 tablespoon oyster sauce
5 garlic cloves, peeled
3 shallots, peeled
1 thumb-sized pieces of ginger
1 onion, peeled
1-2 teaspoons rock sugar ((to taste, or see Notes for subsitute))
yellow wheat-based noodles ((such as egg noodles or ramen-style noodles))
blanched green vegetables ((such as baby bok choy))
thinly-sliced scallions
thinly-sliced cilantro

Steps:

  • In a mixing bowl, add duck legs and massage with crushed ginger and rice wine. This helps eliminate any gamy odors. Rinse and pat dry. Then marinate the duck legs with five-spice powder, dark soy sauce, crushed shallots and garlic for 20-30 minutes.
  • Set the oven broiler to high. Shake off bits of aromatics in the marinade from the duck legs, and place the duck legs skin side up on a wired rack over a lined baking tray. Broil until the skin is blistered and golden with some darkened spots (about 10 minutes).
  • While marinating the duck legs, soak the red dates, goji berries and dried shiitake mushrooms in room temperature water for about 10 minutes. Rinse and drain.
  • After the duck legs have been broiled, add water, red dates, goji berries, dried shiitake mushrooms, star anises, black cardamom pod, coriander seeds, soy sauce, dark soy sauce, oyster sauce, ginger, garlic cloves, shallots and onion to a heavy-bottomed pot. Bring it to a boil, add the duck legs, and then lower to a simmer.
  • Simmer the broth with the lid askew until the duck meat is tender and can be easily picked out with chopsticks (about 80-90 minutes). Skim off foams while simmering. If the broth has too much duck fat, skim off most of it, otherwise the dish might be too greasy.
  • Taste the broth and add rock sugar to taste, and adjust seasonings to your likings. If too much liquid is lost during cooking, you can add back a splash of water.
  • Add noodles and blanched green vegetables to serving bowls. Place a duck leg in each bowl, sprinkle some scallions and cilantro on top. Then ladle the hot soup into the bowls and serve immediately.

3 tablespoons vegetable oil
Bones from 1 duck
1 onion, chopped
2 celery stalks, chopped
2 carrots, chopped
2 inches fresh ginger, sliced
1 clove garlic, minced
1 teaspoon black peppercorns
1 teaspoon Szechuan peppercorns
2 kaffir lime leaves
Salt and pepper
2 baby bok choy, sliced
1 cup chopped scallions
1 hot red chile, cut into thin strips
1 tablespoon soy sauce
1 package wonton egg noodles
2 cooked duck breasts
Thai basil, for garnish
Lime slices, for garnish
Sriracha sauce, for serving

Steps:

  • For the broth: In a large stockpot, heat the oil over medium-high heat. Break up the duck bones and sear them on all sides until golden brown, about 5 minutes. Add the vegetables and continue cooking until caramelized, another 5 minutes. Add the spices and 16 cups water. Lower the heat and let simmer for about 3 hours. Let cool for about 15 minutes. Pass through a sieve and remove the fat. Pour the broth back into the stockpot and reserve for the duck noodle soup.
  • For the duck soup: Add the vegetables, the soy sauce and noodles to the stockpot with reserved duck broth and simmer for 1 minute.
  • To serve: Slice the duck breasts. Place the noodles in the center of a shallow bowl, top with sliced duck and pour some broth and vegetables into each bowl. Garnish with Thai basil and a slice of lime. Serve with spicy Sriracha sauce.

6 duck legs
3 fluid ounces oils
12 ounces shrimp, extra-large, peeled, de-veined
192 fluid ounces chicken stock
4 1/2 scallions, sliced
1 1/2 cups bok choy, cut on bias
1 1/2 cups gai choy, Napa cabbage, or bok choy
6 ounces fresh shiitake mushrooms, sliced
24 ounces Japanese udon noodles, precooked
1 1/2 each red bell peppers, seeded, julienned
1 1/2 each yellow bell pepper, seeded, julienned
3/4 each bunch of chives, 2 to 3 inches long
1 1/2 cups bean sprouts

Steps:

  • 1. Heat the stock and soy sauce in a large saucepan and braise the duck legs over low to medium heat until the meat is tender, about 45 minutes to 1 hour. Set the duck legs aside and strain the broth into a clean saucepan. 2. Heat the canola oil in a skillet and sauté, the duck legs over medium-high heat until brown and crispy. Meanwhile, bring the broth to a boil and add the shrimp, scallions, bok choy, gai choy, mushrooms, and bean sprouts. Reduce the heat and simmer until the mushrooms are tender, about 3 minutes. Add the noodles and reheat briefly. 3. To serve, ladle the soup into bowls, distributing the noodles, seafood, and vegetables evenly, and put a duck leg in each bowl. Garnish with the julienned bell peppers and chives.
