A great slow cooker winter squash recipe to make Thanksgiving a bit easier.

1 (3 pound) butternut squash - peeled, seeded, and cubed
1 small sugar pumpkin - peeled, seeded, and cubed
1 medium acorn squash - peeled, seeded, and chopped
1 small kabocha squash - halved, seeded, and sliced into 1/4-inch pieces
1 large sweet potato, peeled and cubed
1 large parsnip, peeled and cubed
2 medium shallots, diced
½ cup unsalted butter
4 tablespoons herbes de Provence
3 tablespoons white balsamic vinegar
3 cloves garlic, diced
2 teaspoons sea salt
½ cup dried cranberries
½ cup crumbled feta cheese, or to taste

Steps:

  • Place butternut squash, pumpkin, acorn squash, kabocha squash, sweet potato, parsnip, and shallots in layers with butter, herbes de Provence, vinegar, garlic, and sea salt until the slow cooker is completely filled.
  • Cover and cook on High until vegetables are tender, 3 to 4 hours, adding dried cranberries in during the last hour. Add feta cheese as the dish is served.

1 medium butternut squash (5 to 6 pounds), peeled and cut into 1-inch cubes
1 medium acorn squash (about 1-1/2 pounds), peeled and cut into 1-inch cubes
2/3 cup chopped fresh or frozen cranberries
1/4 cup sugar
2 tablespoons olive oil
1 tablespoon butter, melted
1 tablespoon molasses
2 garlic cloves, minced
1-1/2 teaspoons rubbed sage
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Preheat oven to 400°. In a large bowl, combine all ingredients. Transfer to two 15x10x1-in. baking pans. Roast until tender, stirring and rotating pans halfway through cooking, 45-55 minutes.

1 (1- 3/4) pound butternut squash, cut into 1/2-inch cubes
1 medium apple, cubed
½ cup dried cranberries
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons firmly packed brown sugar

Steps:

  • Preheat oven to 425 degrees F.
  • Combine all ingredients in 1-1/2-quart baking dish. Cover and bake 30 minutes. Remove cover and bake an additional 15 minutes or until squash is tender.

2 acorn squash
1/4 cup butter or 1/4 cup margarine
1/2 cup unsweetened dried cranberries
2 tablespoons brown sugar or 2 tablespoons brown sugar substitute
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 375f.
  • Cut the squash in half, scoop out the seeds & fiber.
  • Place cleaned squash cut side up in an oven proof dish. If they are a bit wobbly take a small slice off the bottom.
  • Mix the butter, cranberries, sugar & cinnamon together, divide and place in each of the squash cavities.
  • Cover with foil and bake for 45 minutes to an hour or until the squash is tender.The time will depend on the size of the squash.
  • Uncover and broil 8" from broiler to give them a finished golden look - watch you do not burn them (this only takes apprx 10 minutes.
