This Crispy Fried Potatoes recipe starts with raw potatoes and ends with a perfectly pan-fried potato. Follow my step by step instructions on how to transform the humble potato into a family-pleasing side dish (served with ketchup, of course).

2-3 large Russet potatoes
water (enough to cover potatoes)
1 teaspoon salt
5-8 Tablespoons vegetable oil
salt and pepper, to taste

Steps:

  • Wash and peel potatoes. Slice thin into 1/8 inch slices.
  • In a large bowl, cover potatoes with cold water; add salt. Let sit for 30 minutes or more.
  • Drain water, and pat potatoes dry.
  • Add oil to large skillet covering the bottom of the pan completely in a shallow layer, approximately 5 to 8 tablespoons.
  • Once the oil is hot, add the potatoes. If possible, place as many as you can in a single layer.
  • Let brown, and flip to brown the other side. If the skillet is smaller and the potato layers are thicker, then flip often to get all sides browned and crispy.
  • Drain to a paper towel. Season with salt and pepper while hot.
  • If desired, serve hot with ketchup.

5 pounds small Yukon gold potatoes, quartered
Kosher salt
1 tablespoon flaked sea salt
2 teaspoons freshly cracked black pepper
2 teaspoons smoked paprika
1 teaspoon cayenne pepper
1 teaspoon onion powder
Vegetable oil, for frying
2 sprigs fresh rosemary
1/4 cup sliced garlic

Steps:

  • Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
  • In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
  • Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.

I got this recipe from my friendly bartender at the pub I frequented in Seoul. His were latka style potatoes, but mine didn't turn out that way. LOL Regardless, I found a great way to make some very tasty fried potatoes. Cooking time does not include cooling potatoes in the fridge.

6 baking (or your favorite kind of potato) potatoes
1 large onion, chopped
1 cup fresh mushrooms, chopped
6 slices bacon, cut into small bite sized pieces before frying
salt and pepper

Steps:

  • Boil potatoes with skin on until tender.
  • Drain and place in fridge until completely cool, about 2-3 hours.
  • When they are somewhat cooled, you can cut them into thirds to speed up cooling process.
  • Chop onions and mushrooms in food processor.
  • Once the potatoes are completely cool, either put through rice mill or shred in food processor.
  • Using scissors, cut bacon into small bite sized pieces, fry til almost crisp in a deep non-stick skillet.
  • Without removing bacon or the fat, add onions and mushrooms, mixing well and cook til translucent.
  • Add shredded potatoes and fry, stirring frequently until heated through.
  • Cooking time does not include cooling potatoes in the fridge.

¼ teaspoon pepper
¼ teaspoon chili powder
¼ teaspoon sugar, (can use alternative such as coconut sugar)
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon paprika
3 tablespoons olive oil, extra virgin
2 medium potatoes, diced
1 tablespoon spinach, chopped

Steps:

  • Place the frying pan on the stove on medium heat. Add 3 tbsp of extra virgin olive oil and to this, add the 2 diced potatoes.
  • Stir in seasoning mix until potatoes are well-coated. Cover the pan with lid and let sit for 5 minutes. Uncover pan and stir briefly
  • Now, cover the pan with lid again and let sit for another 5 minutes. Then, uncover the pan and garnish with 1 tbsp chopped spinach.
  • Serve warm.
