BAKED FLOUNDER (((VERY EASY)))
I was born and raised in Philadelphia and my father and I used to go to the New Jersey shore to fish for flounder. He would then cook it this very easy way and trust me, it's DELICIOUS !!!

Steps:
- Preheat oven to 350 degrees& spray large baking dish with cooking spray.
- Rub the fillets on both sides with lemon juice, then salt and pepper them to taste.
- Place the fillets in the baking dish& completely dab with butter.
- Then sprinkle evenly with chopped scallions& tarragon.
- Bake for about 5 to 15 minutes until fish is done but NOT OVER COOKED.
- Sprinkle with parsley.

EASY GARLIC PARMESAN BAKED FLOUNDER RECIPE (20 MINS)
This one-pan baked flounder recipe with garlic, Parmesan cheese, and vegetables is easy and so delicious (thanks to a bold and lemony sauce with Mediterranean spices!). If you can't find flounder, any mild white fish would work, such as Dover sole, halibut, or branzino filet will work. Choose thinner fish filets if possible. Serve baked flounder with potatoes or greens like broccoli or a green bean salad.

- Heat the oven to 350 degrees F.
- Pat the fish dry and season it well with kosher salt and black pepper on both sides. Arrange the fish in a large pan and add the zucchini and onions next to it and season them with salt and pepper.
- In a small mixing bowl, add the garlic, spices, lemon juice, and olive oil. Whisk to combine.
- Pour the sauce all over the fish and vegetables.
- Bake in the heated oven for 7 to 10 minutes, then carefully remove the pan and sprinkle the grated parmesan all over the fish and vegetables. Return the pan to the oven and bake for another 3 to 5 minutes or so until the fish is flaky and the cheese has melted some. (Flounder fillets are thin and should not take too long to cook. Be careful not to overcook them).

EASY BAKED FLOUNDER
Have no fear of cooking fish with this easy baked flounder recipe. Hardly any prep work, ready in 30 minutes, and delicious!

Steps:
- Heat oven to 425F. Line a baking sheet with aluminum foil.
- Place on the sheet: tomatoes (whole), olives, garlic, and half the thyme (1 tbsp).
- Drizzle 1 tbsp olive oil, a pinch of fresh ground pepper, toss with a spatula or with your hands. Place in the oven. Set a timer for 18 minutes.
- Pat fish fillets with paper towels. Season fish on both sides with salt and pepper.
- After 18 minutes, take the sheet out of the oven. Move tomatoes to the perimeter of the sheet and lay the fish in the center. Top with lemon slices and the rest of your thyme. Drizzle with another tablespoon olive oil.
- Return the baking sheet to the oven. Bake 7 minutes.
- Serve immediately.

- Preheat the oven to 375 degrees. Lay the flounder fillets in a buttered 13 × 9 × 2-inch baking dish. Season with salt and pepper to taste. Pour the sherry over the fish, then pour on half of the butter. Cover the fish with breadcrumbs and pour the remaining butter over the crumbs. Bake for 15 minutes.
- *Cooked lobster meat or raw scallops may be substituted for flounder.

- Turn the oven on at 400°F. Rinse off the fillets and pat them dry with a paper towel. Spray a cookie sheet with oil and spread the fillets out on it. You could line the cookie sheet with aluminum foil before you spray it for an easier cleanup. In a bowl 1/4 cup olive oil or melt 1/2 stick of butter and add 1 tablespoon garlic powder or chopped garlic, salt, pepper, juice from 1/2 of a lemon and dried parsley flakes. Here's where you get to do it your own way. With the basic oil or butter then you can add lots of different things to your liking. Paprika, Parmesan cheese, honey, red pepper flakes, balsamic vinegar and on and on. Brush the mixture over the flounder saving some for the veggies.
- Line a small baking pan with foil and put in some potatoes cut into about 3/4 inch cubes and some frozen broccoli florets or carrots. Brush them with the rest of the butter (or oil) mixture and put everything in the oven at the same time.
- Seven minutes on bake then three minutes on broil, but, all ovens are different so watch them. When the flounder starts to sizzle around the edges switch from bake to broil and then as soon as they start to get the slightest brown on top take them out. The veggies will keep up with the fish so it all should be ready to go.
- You are the chef! A nice dry white wine would go along good with your Oven Baked Flounder. Gammy likes Pinot Grigio so thats what we have (surprised?) And since the oven is on, some of poppop's easy homemade bread wouldn't slow things down.
