1/2 cup butter or margarine, softened
2 tablespoons sliced green onion
1 dash ground red pepper (cayenne)
12 onion rolls, split

Steps:

  • Heat oven to 350°F.
  • Mix butter, onions and red pepper thoroughly. Spread butter mixture on cut sides of rolls. Reassemble rolls. Wrap each roll in piece of heavy-duty aluminum foil; seal securely.
  • Bake about 20 minutes or until hot. Serve warm.

This is it! I've been through many recipes to come up with this one. Great for BBQ beef sandwiches. If you prefer plain rolls, omit onion ingredients.

¾ cup lukewarm milk
5 tablespoons lukewarm water
3 tablespoons butter, softened
1 ½ teaspoons salt
3 tablespoons white sugar
1 teaspoon onion powder
3 tablespoons dried minced onion
¼ cup instant potato flakes
3 cups all-purpose flour
1 (.25 ounce) envelope active dry yeast
1 egg white
1 tablespoon water
¼ cup dried minced onion

Steps:

  • Place the milk, water, butter, salt, sugar, onion powder, 3 tablespoons of dried onion, potato flakes, flour and yeast into the pan of a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press Start.
  • When the cycle has completed, remove the dough from the machine, and knead on a lightly floured surface. Cut into 8 equal pieces, and form into balls. Gently flatten the balls until they are 4 inches in diameter. If they keep shrinking back, just let them relax for a minute before flattening. Place on a baking sheet, and cover loosely with a towel. Set in a draft-free place to rise until doubled in size, about 40 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Whisk together the egg white and water in a cup. Brush over the tops of the risen rolls, and sprinkle with remaining minced onion.
  • Bake for 15 to 20 minutes in the preheated oven, until golden brown. Cool completely, then slice in half horizontally before using.

2 ¼ teaspoons active dry yeast
1 cup warm water (110 degrees F/45 degrees C)
¼ cup dry potato flakes
2 tablespoons white sugar
1 teaspoon salt
1 egg
2 tablespoons vegetable oil
¾ teaspoon onion powder
2 ¼ cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add potato flakes, sugar, salt, egg, vegetable oil, onion powder, and 1cup of the flour. Beat until smooth. Stir in remaining flour. Continue stirring until smooth, scraping batter from sides of bowl.
  • Cover and let dough rise in warm place until doubled, about 20 to 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
  • Punch down dough. Spoon dough into 12 greased muffin cups, filling each half full. Let rise until batter reaches tops of cups, or about 20 minutes.
  • Bake in a preheated 400 degree F(200 degrees C) for 15 minutes. Serve immediately.

1 tablespoon butter
1-1/2 cups chopped green onions
1/2 teaspoon pepper
3/4 teaspoon garlic salt, optional
1 loaf (1 pound) frozen bread dough, thawed
1/2 cup shredded part-skim mozzarella cheese
1/3 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375°. In a large skillet, heat butter over medium-high heat; saute green onions until tender. Stir in pepper and, if desired, garlic salt. Remove from heat., On a lightly floured surface, roll dough into a 12x8-in. rectangle. Spread with onion mixture. Sprinkle with cheeses., Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices; place in greased muffin cups. Cover; let rise in a warm place until doubled, about 30 minutes. Preheat oven to 375°., Bake until golden brown, 18-20 minutes. Remove from pan to a wire rack. Serve warm.

4 c bread flour
1 c warm water
3 Tbsp vegetable oil
1 1/2 eggs, i went with 70 grams on my kitchen scale
5 1/2 Tbsp sugar
4 1/2 tsp instant yeast
1 1/2 tsp salt
FOR ONION FILLING
1/2 c onion flakes, dehydrated
1 1/2 c boiling water
1 Tbsp vegetable oil
1 1/2 tsp black poppy seeds
1/4 tsp table salt

Steps:

  • 1. Make the dough; In a large mixing bowl or the bowl of your mixer, combine the flour ,sugar and yeast, then mix with a whisk or the flat (paddle) beater at Low (Kitchen Aid 2) speed. Add the warm water,egg and oil mixture at the same time and blend until the dry ingredients are evenly hydrated and the dough forms a shaggy mass, 1 to 2 minutes. Spinkle in the salt and mix for 1 minute longer.
  • 2. If kneading by machine: switch to the dough hook and knead on low (KA2) for 8 to 10 minutes. Turn onto a well-floured surface and knead by hand for 30 to 60 seconds.
  • 3. If kneading by hand: turn the dough onto a well-floured surface and knead until the dough is smooth and elastic and stretches when pinched and pulled, about 10 to 15 minutes.
  • 4. Form the dough into a ball and put it in a lightly oiled mixing bowl, turning it upside down so that there's a thin coating of oil on the top surface. Cover with plastic wrap or a damp cloth and let the dough ferment for 45 to 60 minutes, until doubled in bulk.
  • 5. While the dough is fermenting make the onion filling. Add the boiling water to the dried onions and cover with plastic, let sit for 30 minutes. Drain through a strainer and pour out on to a double layer of paper towels and blot moisture out. Combine to onions, the oil, poppy seeds and salt, then mix well. Set aside.
  • 6. After dough is fermented and doubled in size, divide into 2 18 oz. pieces, roll into a thick sausage shape and stretch to 12 inches.Cover with plastic wrap and let rest for 15 to 20 minutes to relax the gluten. Ater the resting period, place the first piece of dough on a well-floured surface so that the wide side faces you. Using a rolling pin, roll the dough first from side to side to a width of 18 inches and then roll it lengthwise to about 10 to 12 inches. Brush the top of the dough generously with vegetable oil, leaving about 1/2 in of the edge unoiled. and spread 1/3 of the filling evenly across the upper two-thirds of the dough rectangle. Starting at the edge nearest you, fold the dough in thirds, letter-style, and seal the upper edges by pressing it gently with the heel of the hand. You now have a strip of filled dough approximately 18 inches long and 3 inches wide. Set aside and repeat this process for the second piece of dough. Spread the remaining filling on parchment paper or wax paper and press the dough strip onto the filling so that it adheres to the dough. Turning the strips right side up and cut each into 6 pieces. Put each piece on a piece of parchement paper that you have placed in large cooking sheet or stone, let rise for an additional 45 to 60 minutes. Preheat oven to 350 F and bake, using the top third of the oven for 10 to 12 minutes, until rolls are mottled brown. Let cool on a rack for 10 to 15 minutes and eat warm.   • Unroll crescent dough and separate into triangles. Sprinkle each with about 2 tablespoons onions. Roll up each from the wide end; place on an ungreased foil-lined baking sheet. Curve ends down to form crescents., Beat the egg and water; brush over dough. Sprinkle with remaining onions. Bake at 400° until golden brown, 10-12 minutes. Serve warm.

1/2 cup boiling water
1 tablespoon butter
3-1/2 to 4 cups all-purpose flour, divided
2 packages (1/4 ounce each) quick-rise yeast
1 tablespoon sugar
1 cup warm water (120° to 130°)

Steps:

  • In a small bowl, combine soup mix, boiling water and butter; cool to 120°-130°. In a large bowl, combine 1 cup flour, yeast and sugar. Add warm water; beat until smooth. Stir in 1 cup flour. Beat in onion soup mixture and enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6 minutes. Cover and let stand for 10 minutes. Divide dough into 12 portions and shape each into a ball. Place on greased baking sheets; flatten slightly. , Place two large shallow pans on the work surface; fill half full with boiling water. Place baking pans with rolls over water-filled pans. Cover and let rise for 15 minutes. , Bake at 375° for 16-19 minutes or until golden brown. Remove from pans to a wire rack.

1/2 cup warm milk (105-115 F)
2 tablespoons sugar
2 teaspoons salt
3 tablespoons butter or 3 tablespoons margarine
1 1/2 cups water (105-115 F)
1 (1 ounce) package active dry yeast (1 Tablespoon)
2 tablespoons instant minced onion
5 -6 cups all-purpose flour
cornmeal
1 egg white, slightly beaten with
1 tablespoon cold water

Steps:

  • Combine warm milk, sugar, salt and butter.
  • In a large warm bowl, pour in warm water, sprinkle yeast over the water and stir until dissolved.
  • Add milk mixture, onion and 3 cups flour to the yeast mixture.
  • Beat until smooth.
  • Add enough additional flour to make a stiff dough.
  • Turn dough out onto a lightly floured board.
  • Knead until smooth and elastic (about 8-10 minutes).
  • Place dough in a greased bowl, turning dough to grease the top.
  • Cover dough and let rise in a warm place (free from drafts) until doubled in bulk (about 1 hour).
  • Punch dough down and divide into 14 equal pieces.
  • Shape pieces of dough into round balls.
  • Place dough balls (about 3 inches apart) on greased baking sheets that have been sprinkled with cornmeal.
  • Cover and let rise again in draft free, warm place until doubled in bulk (about 1 hour).
  • Cut a small"X" into the tops of the rolls with a sharp knife or razor.
  • Bake rolls in a preheated 400°F oven for 20 minutes.
  • Brush rolls with the egg white/cold water wash.
  • Bake rolls 5 minutes longer, or until done.
  • Remove from baking sheets and cool on wire racks.
  • ***Asan option, you can sprinkle the roll tops with a bit of additional minced onion after they are brushed with the egg white wash.
