MOCHA ALMOND FUDGE CAKE

This Mocha Almond Fudge cake has layers of moist almond and coffee-flavored cake with espresso buttercream swirled with chocolate fudge sauce. To finish it off, a silky chocolate buttercream with a chocolate ganache glaze and sliced almonds.

2 cups granulated sugar
½ cup vegetable oil
3 large eggs
2 teaspoons Rodelle pure almond extract
1 teaspoon Rodelle pure vanilla extract
½ cup light sour cream
2 ½ cups all-purpose flour
2 teaspoons espresso powder (or finely ground coffee)
3 teaspoons baking powder
1 teaspoon salt
1 ¼ cups strong brewed coffee, cooled
1 cup (2 sticks) unsalted butter
3 cups powdered sugar
1 ½ teaspoons espresso powder
1 ½ tablespoons strong brewed coffee, cooled
1 teaspoon Rodelle pure vanilla extract
2/3 cup hot fudge sauce
1 ½ cups (3 sticks) unsalted butter
½ cup Rodelle dutch process cocoa powder
5 cups powdered sugar
2 tablespoons heavy whipping cream
1 teaspoon Rodelle pure vanilla extract
1 ounce dark chocolate
2-3 tablespoons heavy whipping cream
1 tablespoon corn syrup
1/2 cup sliced almonds

Steps:

  • Preheat the oven to 350°F. Prepare 3 8-inch round baking pans, line the bottom with parchment paper and grease the sides. Prepare your bake even stripes if desired.
  • In a large mixing bowl, combine the sugar, vegetable oil, eggs, vanilla and almond extract. Beat on medium speed until the eggs and oil are well incorporated and the batter is lighter in color, about 2 minutes. Scrape down the bowl as needed.
  • Next mix in the sour cream and beat until well combined.
  • In a separate bowl, combine the dry ingredients: flour, espresso powder, baking powder and salt. Add half the dry ingredients and beat on low speed while pouring in half of the coffee and mix just until the flour starts to incorporate.
  • Finally add the remaining dry ingredients, mixing on low speed while pouring in the remaining coffee and beating until all of the ingredients are well combined.
  • Use a spatula to scrape down the sides of the bowl and stir the batter from the bottom to the top to ensure it's well mixed.
  • Divide the batter evenly between the three pans, about 1 2/3 cups of batter per pan. Bake at 350°F for 20-24 minutes. Rotate your pans in the oven halfway through baking.
  • Test the cake for doneness by inserting a toothpick into the center of the cake. If the toothpick comes out clean, your cake is done. Remove from the oven and allow to cool completely.
  • Cut the butter into pieces. Using the paddle attachment, whip butter for 3-4 minutes, scraping down the bowl occasionally. Beat until butter looks light in color.
  • Next add the powdered sugar, espresso powder and liquid ingredients. Beat at a low speed until the ingredients start to incorporate.
  • Once incorporated, whip at a high speed for 2-3 minutes until the frosting is light and airy. Place the frosting in a large piping bag and snip the end of the bag off about ½-inch up.
  • Cut the butter into pieces. Using the paddle attachment, whip butter for 3-4 minutes, scraping down the bowl occasionally. Beat until butter looks light in color. Next, beat the cocoa powder into the butter until well mixed.
  • Alternate adding 1 cup of powdered sugar at a time with the liquid ingredients: vanilla extract & heavy cream. Ensure all the powdered sugar is well combined, and once completed, whip for 3-4 minutes until the frosting is light and airy.
  • level off your cakes by removing any domes. Place a dollop of frosting on your cake board and place the bottom layer of cake on top.
  • Pipe half of the filling on the first layer by making 3 concentric circles from the outside edge to the middle, leaving a gap in between the circles.
  • Heat the hot fudge sauce for 30-45 seconds until it's warm (but not hot) and can be evenly stirred. Place the fudge in piping bag and cut off the tip. Fill in the gaps between the circles of frosting with hot fudge.
  • Spread evenly with an offset spatula to smooth out the top. Add the second layer of cake and repeat the above steps. Place the third layer of cake on top.
  • Take your offset spatula and spread any excess frosting from the edges around the outside of the cake.
  • Next, add a thin crumb coat with your chocolate frosting, making sure to fill in any gaps between the layers. Refrigerate this cake for 20 minutes.
  • Take ¾ of the remaining frosting and place in a large piping bag fitted with tip 789 (cake icing tip) or other large open round piping tip.
  • Pipe the chocolate frosting around the edges of the cake. Then use an offset spatula or icing smoother to create a smooth edge.
  • Use your hands to press the sliced almonds along the bottom edge of the cake.
  • In a microwave-safe bowl, combine the chocolate and 2 tablespoons of heavy whipping cream. Melt the chocolate in the microwave at 50% power in 30-second increments.
  • Once the chocolate is fully melted add the corn syrup and stir the mixture until it's well mixed. Add additional heavy whipping cream if needed to thin the chocolate. Use a spoon or piping bag to drizzle the ganache along the edges of the cake.
  • Use remaining chocolate frosting to pipe large rosettes on top of your cake and garnish with sliced almonds.

DARK CHOCOLATE ALMOND FUDGE

14 ounces sweetened condensed milk
12 ounces dark chocolate chips (about 2 cups worth)
1/4 cup butter
1 teaspoon almond extract
1/2 cup sliced almonds (plus 1-2 tablespoons more for topping)

Steps:

  • Combine the milk, the chocolate and the butter in a medium size glass bowl and heat in the microwave for 90 seconds.
  • Stir to combine and heat another 15 seconds if needed. Stir until smooth. Add the extract and the almonds. Stir once more to mix throughout.
  • Pour into a well-greased or parchment lined 8" pan. Chill until ready to serve. Store in an airtight container in the refrigerator for up to a week. Enjoy!

1 tablespoon plus 1/2 cup butter, divided
4-1/2 cups sugar
1 can (12 ounces) evaporated milk
1 jar (7 ounces) marshmallow creme
2 cups peanut butter chips, divided
1/2 cup baking cocoa
1 teaspoon vanilla extract

Steps:

  • Line a 9-in. square pan with foil and grease the foil with 1 tablespoon butter; set aside. In a heavy saucepan, combine the sugar, milk, marshmallow creme and 1/4 cup butter. Cook and stir over medium heat until sugar is dissolved. Bring to a rapid boil; boil for 5 minutes, stirring constantly. Remove from the heat., Pour 3 cups of hot mixture into a bowl; add 1 cup peanut butter chips. Stir until chips are melted and mixture is smooth. Pour into prepared pan. , To the remaining hot mixture, add cocoa, vanilla, and remaining chips and butter; stir until chips and butter are melted and mixture is smooth. Pour evenly over peanut butter layer in pan. Cool. Using foil, lift fudge out of pan. Cut into 1-in. squares. Refrigerate in airtight containers.

1 teaspoon butter
2 teaspoons instant coffee granules
1 can (14 ounces) sweetened condensed milk
3 cups semisweet chocolate chips
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Steps:

  • Line a 9-in. square pan with foil and greased the foil with butter; set aside. In a heavy saucepan, dissolve coffee in milk over medium heat. Reduce heat to low. Stir in chocolate chips until melted. Remove from the heat; stir in extracts. Spread into prepared pan. Refrigerate until firm., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares.

A Delicious two layer fudge with almonds and a touch of coffee, This fudge is quite rich and I normally make it in a small batch but you could easily double it and use a larger pan. It uses both dark and white chocolate and keeps well in the fridge for a couple of weeks. A nice fudge for a special occasion. I normally serve this fudge cut into small rectangular pieces.

270 g dark chocolate
200 g condensed milk
1 teaspoon instant coffee (dissolved in 1 teaspoon water)
1/2 teaspoon cinnamon
1 pinch salt
1/2 cup chopped almonds
1/2 teaspoon vanilla
100 g white chocolate
50 g condensed milk
1/4 cup sliced almonds

Steps:

  • Place first 5 ingredients in container and microwave on high for 1 minute, stir till smooth, It may need a further 30 seconds.
  • Stir in Chopped Almonds and Vanilla and pour into a foil lined 5 x 8 inch rectangular pan, place in fridge to set whilst you prepare the top layer.
  • Place white chocolate and second lot of condensed milk in micro container and micro for 30 seconds, stir and remicro for a further 15 seconds if needed till smooth.
  • Add flaked Almonds and stir, then pour over top of dark chocolate fudge layer patting down till smooth.
  • Place in fridge to set.

1 (12 ounce) bag semi-sweet chocolate chips (2 cups)
1 (16 ounce) can creamy ready-to-spread chocolate frosting
1 (12 ounce) bag white vanilla baking chips (2 cups)
1 (16 ounce) can creamy ready-to-spread vanilla frosting
2 drops red food coloring
1/2 cup finely crushed peppermint candy
2 (1 5/8 ounce) milk chocolate candy bars, chopped

Steps:

  • Line a 13x9 inch pan with foil so foil extends over sides of pan; lightly butter foil. In 3-quart saucepan, melt chocolate chips over low heat, stirring constantly, until smooth. Remove from heat. Stir in Chocolate frosting. Spread in pan. Refrigerate 20 minutes.
  • Meanwhile in 3-quart saucepan, melt vanilla baking chips over low heat' stirring constantly, until smooth. Remove from heat. Stir in vanilla frosting and food coloring until well blended. Fold in crushed peppermint candy.
  • Spread carefully over chilled chocolate layer. Sprinkle chopped candy bars over top; press in lightly. Refrigerate just until set, about 1 hour.
  • As soon as fudge is set, use foil to lift fudge from pan; remove foil. Cut into 13 rows by 9 rows. Store at room temperature.

1 cup peanut butter

12 squares BAKER'S Semi-Sweet Chocolate

Steps:

  • Line a 13x9 pan with foil, using enough to extend over the sides.
  • Put 3 cups sugar, 3/4 cup butter, and 1 can evaporated milk in a saucepan. Bring to a rolling boil on medium heat, stirring constantly so it won't scorch, for 4 minutes or until a candy thermometer reads 234 degrees F. Remove from heat.
  • Add the peanut butter and 1 jar of marshmallow creme, stir until completely melted. Add 1 cup peanuts and 1 tsp vanilla, mix well. Pour into the 13x9 pan right away, spread evenly.
  • Put 3 cups sugar, 3/4 cup butter, and last can of evaporated milk in large pan to boil. Bring to a rolling boil, boil for 4 minutes or until a candy thermometer reads 234 degrees F, stirring constantly. Remove from heat.
  • Mix in the chocolate and last jar of marshmallow creme until melted. Add 1/2 cup peanuts and 1 tsp vanilla, mix well. Pour over the peanut butter layer, spread evenly, and sprinkle with 1/2 cup peanuts. Cool at room temperature for 4 hours before cutting to serve. Store at room temp in a tightly covered container.

1 cup organic unrefined coconut oil
1 cup organic smooth cashew butter
1/2 cup organic raw local honey
1/3 cup organic unsweetened dried shredded coconut
4 -5 tablespoons of organic cocoa powder
1 teaspoon alcohol-free vanilla
2 pinches sea salt
1 handful of enjoy life chocolate chips (no corn or soy) (optional)
extra sprinkle of organic unsweetened dried shredded coconut (optional)

Steps:

  • Mix together until fully combined, unrefined coconut oil, cashew butter, unsweetened shredded coconut, alcohol-free vanilla, and raw honey and just a small pinch of sea salt.
  • Pour half into a bread pan and use a spoon to spread out evenly. It doesn't matter what size bread pan you use. The smaller it is, the taller your fudge will be and vise versa.
  • Place in freezer to harden.
  • Add cocoa powder to the remaining mixture. Add 1-2 tablespoons at a time, mixing as you go to make sure you don't use too much.
  • Once cocoa powder is incorporated in, add a pinch of sea salt, mix thoroughly, then pour your chocolate fudge on top of your now hardened light fudge.
  • Sprinkle with optional chocolate chips, optional shredded coconut, and place is freezer for 10-15 minutes.
  • Cut into chunks.
  • Eat the chunks.
  • Store the leftover chunks in the fridge.
  • Enjoy!

2 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, broken into pieces
1 can (14 oz.) sweetened condensed milk, divided
1/2 cup chopped walnuts
1 tsp. vanilla
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), broken into pieces

Steps:

  • Microwave semi-sweet chocolate and 3/4 cup milk in medium microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.
  • Add nuts and vanilla; mix well. Spread onto bottom of foil-lined 8-inch square pan.
  • Microwave white chocolate and remaining milk in medium microwaveable bowl on HIGH 1-1/2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. Spread over semi-sweet chocolate layer. Refrigerate 2 hours.
