CORN SALAD



Corn Salad image

A delicious summer salad! It pairs well with grilled main dishes like chicken, steak or salmon and it's the perfect thing to bring along on a picnic.

4 larger ears fresh corn, (shucked (yields about 4 cups, 20 oz corn kernels))
1 heaping cup halved grape tomatoes
1 cup diced English cucumber
1/3 cup diced red onion
2/3 cup crumbled feta cheese
3 Tbsp finely chopped fresh parsley
2 Tbsp finely chopped fresh basil
1/4 cup olive oil
1 1/2 Tbsp red wine vinegar
1 Tbsp lemon juice
1 1/2 tsp honey
1/2 tsp minced garlic
1/2 tsp each salt and freshly ground black pepper

Steps:

  • Make dressing: In a mixing bowl whisk together olive oil, red wine vinegar, lemon juice, honey, garlic, salt and pepper. Refrigerate while preparing salad.
  • For the salad: Bring a large pot of water to a boil. Have a large bowl of ice water ready nearby.
  • Once water in pot boils add corn and cook just 3 minutes (even 2 minutes if you want it a little more raw and crisp).
  • Transfer to ice water to cool for a few minutes. Drain well.
  • Cut kernels from corn then transfer to a large bowl.
  • Add tomatoes, cucumbers, red onion, feta, parsley and basil.
  • Whisk dressing again then pour over salad. Toss well to coat, season with more salt as desired.

Really nice as a tasty lunch served with warm wraps or as part of a bigger spread.

Number Of Ingredients 14

rapeseed oil
50 g popping corn
chipotle Tabasco sauce
4 corn on the cob
1 iceberg lettuce
4 spring onions
30 g mature Cheddar cheese
30 g blue cheese
6 tablespoons natural yoghurt
¼ of a clove of garlic
2 teaspoons English mustard
2 tablespoons white wine vinegar
1 teaspoon Worcestershire sauce
4 sprigs of fresh coriander

Steps:

  • Place a large non-stick frying pan on a high heat with 1 tablespoon of oil, then add the popping corn and cover with a lid. Once popped, add a few generous shakes of Tabasco, toss together and tip into a large salad bowl.
  • In the same pan, grill the corn until lightly charred all over, turning regularly, then remove.
  • Trim and roughly chop the lettuce, and trim and finely slice the spring onions, then add to the bowl.
  • Break the cheeses into a blender, and spoon in the yoghurt. Peel and add the garlic, followed by the mustard, vinegar and Worcestershire sauce, then blitz until smooth, and season to taste with sea salt and black pepper.
  • Carefully slice off the corn kernels and add to the bowl. Pour over the dressing, toss together and pick over the coriander leaves, then serve straight away.

  • In a small bowl, combine all ingredients; mix well. Cover and refrigerate until serving.
