These bar cookies have the satisfying texture and heft of a brownie, but a wonderful butterscotch flavor.

¾ cup (1 ½ sticks) unsalted butter
1 ¾ cups brown sugar
2 teaspoons pure vanilla extract
2 large eggs
1 ¾ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon kosher salt
1 cup semi-sweet chocolate chips, butterscotch chips or chopped nuts, such as walnuts or cashews ( (or use a combo of these add-ins))

Steps:

  • Preheat the oven to 350°F. Grease a 13x9-inch baking pan, or spray with nonstick spray.
  • In a medium-sized saucepan, melt the butter over low heat. Remove from the heat, add the brown sugar, and stir until blended. Let cool for at least 5 minutes. Add the vanilla, then add the eggs, one at a time, and stir to mix quickly until well combined, so the eggs don't cook in the still slightly warm brown sugar mixture.
  • In a small bowl combine the flour, baking soda, and salt. Add to the saucepan and stir until combined. Stir in the nuts or chips, if using, and spread into the prepared pan. Smooth the top with a spatula. Bake until a wooden skewer or a toothpick inserted in the middle comes out clean, 24 to 28 minutes.
  • Cool them in the pan on a wire rack. When cool, cut into 24 squares.

2 cups all-purpose flour
2 cups packed brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, melted and cooled
2 large eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chunks
4 Heath candy bars (1.4 ounces each), coarsely chopped

Steps:

  • In a large bowl, combine the flour, brown sugar, baking powder and salt. In another bowl, beat the butter, eggs and vanilla until smooth. Stir into dry ingredients just until combined (batter will be thick). , Spread into a 13x9-in. baking pan coated with cooking spray. Sprinkle with chocolate chunks and chopped candy bars; press gently into batter., Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into bars.

1 cup brown sugar
¼ cup melted butter
1 egg
1 teaspoon vanilla extract
½ cup all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ cup finely chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9-inch baking pan.
  • Stir brown sugar into melted butter until dissolved. Cool slightly and beat in egg and vanilla extract.
  • Sift flour in a separate bowl; resift flour with baking powder and salt. Stir flour mixture into the butter mixture; add nuts. Spread batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out mostly clean, about 20 minutes. Do not overbake! Cut into bars.

These rich, chewy bars get their deep caramel flavor from a combination of brown butter, dark brown sugar and an optional sprinkle of flaky salt on top. They're delicious as is, but feel free to add some mix-ins (see note), if that's more your style. You'll want to keep the amount of extra ingredients, like nuts, chocolate and dried fruits, to 2 cups total, since blondies with a lot of mix-ins may take a few minutes longer to bake. For an especially delicious combination, try a mix of 1 cup chopped bittersweet chocolate or chips, 1/2 cup toasted walnuts and 1/2 cup chopped pitted dates.

1 1/2 cups/330 grams dark brown sugar

Steps:

  • Heat oven to 350 degrees and butter and line a 9-by-9-inch baking dish with parchment paper.
  • Melt the butter in a saucepan over medium heat. Cook butter, occasionally scraping the bottom and sides of the pan with a rubber spatula, until it turns deep golden brown and smells nutty. Don't walk away from the pan during this process. The butter can go from brown and nutty to acrid and burnt in mere moments. 3/4 cup butter (equals 1 1/2 sticks butter)

1 cup nuts, chopped

Steps:

  • Preheat oven to 350 degrees, or 325 degrees if using pyrex or glass.
  • Melt brown sugar and butter together. Cool mixture for about 5 minutes.
  • Add eggs.
  • Mix flour, baking powder, salt, vanilla and nuts together.
  • Add to other mixture.
  • Mix well.
  • Bake in greased 9 x 13 pan at 350 degrees for 30 minutes ~ if using pyrex or glass, reduce temperature to 325 degrees for 30 minutes.
  • Top with chocolate frosting, if desired ~ I usually don't!
