Steps:

  • Place 2 pounds small red potatoes and 4 smashed garlic cloves in a pot; cover with salted water. Bring to a boil, then simmer until tender, 15 to 20 minutes. Reserve 1 cup cooking water; drain. Mash the potatoes with 1¿2 cup each cooking water and buttermilk, 3 tablespoons butter, 2 tablespoons chopped dill and 2 sliced scallions, adding the remaining cooking water as needed. Season with salt and pepper.

2 pounds Idaho or Yukon gold potatoes
Kosher salt and freshly ground black pepper
1 cup whole milk
8 tablespoons (1 stick) unsalted butter
1 cup grated Cheddar
1/4 cup chopped fresh dill

Steps:

  • Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring to a low simmer and cook the potatoes, uncovered, until tender, about 45 minutes. Drain.
  • Peel the potatoes and return them to the pot (for smoother mashed potatoes, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the Cheddar, dill, 2 teaspoons salt and a few grinds of pepper.

2/3 cup 4% cottage cheese
1/3 cup shredded cheddar cheese
2 teaspoons butter

  • Place potatoes in a large saucepan and cover with water; bring to a boil over medium-high heat. Cook for 10-15 minutes or until tender; drain. , Transfer to a large bowl. 1 teaspoon kosher salt, plus more as needed
1/4 cup low-fat milk

Steps:

  • In a large saucepan, combine the potatoes, 1 teaspoon salt, and enough cold water to cover. Bring to a boil over high heat. Lower the heat to maintain a simmer and cook until fork tender, about 10 minutes. Drain the potatoes and return to the pan. Shake the pan over medium heat for about a minute to dry the potatoes. 1/2 cup sour cream
4 ounces light cream cheese
1 teaspoon salt

milk or more sour cream, as needed to adjust consistency of mashed potatoes

  • Cook potatoes in boiling water until done.
  • Drain in colander, and return to saucepan over low heat to dry out a little.
  • Mash potatoes until fairly smooth.
  • Add remaining ingredients, and continue mashing until desired consistency is reached.
  • Add more milk or sour cream if potatoes are too thick.
  • Note: If they are too thin, add a little dehydrated potato flakes to thicken, if needed.

  • Chop the dill, and place in a serving bowl with the buttermilk and salt.
