DILL-PICKLE CHIPS
Pickling gives crisp, mellow vegetables spunky personality. These Kirby cucumbers -- a small, unwaxed type that's perfect for pickles -- are seasoned with dill and garlic. Salting the cucumbers helps draw out excess water, ensuring crisp results.

Steps:
- Cut the cucumbers into 1/2-inch-thick rounds, and transfer to a colander set in a bowl. Toss well with salt. Refrigerate cucumber rounds 1 hour.
- Rinse cucumber rounds well; drain. Pat dry between paper towels. Transfer cucumber slices to a large bowl.
- Bring 3 cups water, vinegar, dill seed, and garlic to a boil in a medium saucepan, stirring. Reduce heat; simmer 4 minutes. Let mixture cool slightly, about 10 minutes.
- Add chopped dill to cucumber slices, and toss to combine. Pour in the brine. Let cool completely, about 30 minutes. Transfer mixture to airtight containers, and refrigerate at least 1 week (pickles will keep 3 weeks more).
QUICK AND EASY DILL PICKLE CHIPS FOR HAMBURGERS AND SANDWICHES RECIPE
Steps:
- Place cucumber slices in a bowl that just fits them. Heat water, vinegar, salt, pepper flakes, garlic, black peppercorns, mustard seeds, and dill in a skillet over high heat until salt has dissolved and mixture is simmering. Immediately pour brine over cucumbers. Cover bowl with a paper towel pressed directly against the surface of the liquid to keep cucumbers submerged. Wait at least 30 minutes before serving (do not drain brine). Pickles can be stored in their brine in a sealed container in the refrigerator for up to a month.

REFRIGERATOR DILL PICKLES
These pickles taste so fresh and have just the right amount of dill and garlic. They taste great along-side a hotdog on a bun. They also taste great alone as a healthy snack. The pickles should be good for 6 weeks. Enjoy! You can also cut cucumbers into chips if you prefer a pickle chip instead of a spear.

- Stir water, vinegar, sugar, and sea salt together in a saucepan over high heat. Bring to a boil; remove from heat and cool completely.

- Wash the cucumbers you will use to make into dill pickle chips, but don't scrub. Slice the cucumbers into 1/4"-1/8" slices.
- In a small bowl mix vinegar, water, salt, and mixed pickling spice. Stir until the salt has dissolved.
- Pour the brine over the cucumber slices, if necessary place something heavy over the dill pickle chips to keep them submerged. - Combine the vinegar, sugar, and salt in a microwave-safe container. I use a glass measuring cup for the vinegar and add in the sugar/salt.
- Microwave for 1 minute. Remove and stir. If salt/sugar is not completely dissolved, microwave again for 20 seconds.
- Place the sliced cucumbers, dill, and garlic in a container with a lid. Pour the vinegar brine over the cucumbers and stir to evenly coat.
