2 potatoes, cubed
½ head broccoli, cut into florets
1 red bell pepper, seeded and chopped
1 tablespoon garlic powder
1 tablespoon dried parsley
1 teaspoon salt
1 teaspoon pepper
3 tablespoons olive oil, divided
½ cup parmesan cheese
1 cup couscous, cooked

Steps:

  • Preheat the oven to 350˚F (180°C).
  • Add the potatoes, broccoli florets, and red pepper to a baking sheet.
  • Sprinkle the garlic powder, parsley, salt, pepper, and 2 tablespoons of olive oil over the vegetables and toss to coat.
  • Bake for 25 minutes, until the vegetables are tender.
  • Sprinkle the Parmesan cheese over the vegetables.
  • Add the vegetables to a large bowl with the cous cous and remaining tablespoon of olive oil and toss to combine.
  • Enjoy!

4 boneless skinless chicken breast halves (6 ounces each)
1/2 cup white wine or chicken broth
2 teaspoons minced fresh tarragon or 1/2 teaspoon dried tarragon
1/8 teaspoon pepper
COUSCOUS:
1-1/2 cups water
1 cup uncooked couscous
1 tablespoon butter
1 teaspoon chicken bouillon granules
1 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon
SAUCE:
1 tablespoon butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
3/4 cup 2% milk
1/3 cup reduced-fat sour cream
2 tablespoons Dijon mustard

Steps:

  • Place chicken in an ungreased 11x7-in. baking dish. Pour wine over chicken; sprinkle with tarragon and pepper. Cover and bake at 400° for 15 minutes. Uncover; bake 5-10 minutes longer or until a thermometer reads 170°. Remove chicken and keep warm, reserving the pan juices., For couscous, in a small saucepan, bring water to a boil. Stir in the couscous, butter, bouillon granules and tarragon. Remove from the heat; cover and let stand for 5-10 minutes or until liquid is absorbed. Fluff with a fork. , For sauce, in a small saucepan, melt butter. Stir in flour and salt until smooth; gradually add milk and pan juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in sour cream and mustard. Serve with chicken and couscous.

1 medium sweet red pepper, coarsely chopped

1 can (14-1/2 ounces) stewed tomatoes, undrained
1/2 cup peach or mango salsa
1/4 cup golden raisins
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon pepper
COUSCOUS:
1 cup water
1/2 teaspoon salt
1 cup uncooked whole wheat couscous

Steps:

  • In a 4-qt. slow cooker, layer sweet potatoes, red pepper and chicken breasts. In a small bowl, mix tomatoes, salsa, raisins and seasonings; pour over chicken. Cook, covered, on low 3-4 hours or until sweet potatoes and chicken are tender., About 10 minutes before serving, prepare couscous. In a small saucepan, bring water and salt to a boil. Stir in couscous. Remove from heat; let stand, covered, 5 minutes or until water is absorbed. Fluff with a fork., Remove chicken from slow cooker; coarsely shred with 2 forks. Return chicken to slow cooker, stirring gently to combine. Serve with couscous., Freeze option: Place cooled chicken mixture in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, stirring gently; add a little broth or water if necessary.

3 tablespoons Dijon mustard
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon prepared horseradish

Steps:

  • Place an 18x12-in. piece of heavy-duty foil on a large baking sheet; set aside. , In a large bowl, combine the mushrooms, zucchini and red pepper.
