DIABETIC FRIENDLY WALDORF SALAD



Diabetic Friendly Waldorf Salad image

I love Waldorf salad and with this recipe it will be back on my table this summer. Cooking time is chill time.

1 teaspoon lemon juice
2 1/2 cups diced apples
1 cup celery, in thin strips about 1-inch long
1/2 cup broken walnuts
1 tablespoon Splenda granular (sugar substitute)
1 dash salt
1/2 cup low-fat vanilla yogurt
2 tablespoons low-fat mayonnaise
crisp lettuce leaf

Steps:

  • Drizzle lemon juice over diced apples; toss well.
  • Mix in celery and walnuts.
  • Blend together sugar, salt, low-fat yogurt and mayonnaise.
  • Fold into apple mixture; chill.

1 package sugar-free orange gelatin
1 cup boiling water
2 tablespoons lemon juice or 2 tablespoons vinegar
1/8 teaspoon salt
1 cup crushed drained pineapple, reserve juice from pinepple plus enough cold water to make 1 cup
1 cup grated carrot

Steps:

  • Combine first 5 ingredients.
  • Cool until slightly thickened, then add pineapple and carrots.
  • Pour in mould and let set.

1 (3 ounce) package lemon Jell-O gelatin
1 cup boiling water
1 cup cold water
1 carrot, peeled and grated fine
1 cup crushed pineapple, drained (unsweetened)

Steps:

  • Stir jello into boiling water.
  • Mix well.
  • Stir in cold water.
  • Allow to partially set (approximately 45 mins).
  • Add grated carrot and drained crushed pineapple. Mix.
  • Pour into well greased small jello mould.
  • Chill til firm.
