Diabetic-Friendly Perfectly Poached Pears image

Wanna raise some eyebrows at your next dinner party!? Serve up some of these bad boys!!

Number Of Ingredients 7

1 cup(s) orange juice
1/4 cup(s) apple juice
1 teaspoon(s) ground cinnamon
1 teaspoon(s) ground nutmeg
4 - whole pears
1/2 cup(s) fresh raspberries
2 tablespoon(s) orange zest

Steps:

  • In a small bowl, mix together orange juice, apple juice, ground cinnamon and nutmeg.
  • Stir ingredients until evenly mixed and set aside.
  • Peel pears, leaving the stems.
  • Remove the core from the bottom of the pear.
  • Place pears in a shallow sauce pan.
  • Pour juice mixture over pears into pan and set over medium-heat.
  • Simmer pears for 30 minutes, turning frequently.
  • DO NOT BRING LIQUID TO A BOIL!
  • Transfer pears to individual serving plates.
  • Garnish plates with raspberries and orange zest.
  • Serve immediately and enjoy!

  • Bring almost to a boil then add in the pear halves. Turn down the heat and let the pears simmer gently for 20-30 minutes, or until they have slightly softened. Carefully turn the pears over a few times throughout the cooking time to ensure they colour evenly.
  • Meanwhile heat a dry frying pan and add in the almonds. Toast them until they are golden brown being careful to keep them moving round the pan to prevent burning.
  • When the pears are cooked, remove them from the wine and plate up. Add a tablespoon of Greek yogurt to each plate and sprinkle with the toasted almonds.
