No Sugar Added Apple Cake image

Make an apple cake with no added sugar. This is the recipe for a delicious No Sugar Added Apple Cake that you will love to eat.

1 tsp Vanilla Extract
1 tsp Ground Cinnamon
3 Apples (peeled and cubed)
1/4 cup Walnuts (chopped)
2/3 cup Water
2 tbsp Vegetable Oil
2 Eggs
3 1/2 tbsp Splenda
2 cups Carbquik

Steps:

  • Preheat your oven to 325 and prep a pan for nonstick
  • Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
  • In another bowl, beat together the liquid, oil, and the eggs. Set this aside
  • Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.
  • Slowly pour half of the contents from the wet bowl into the dry ingredient mixing bowl.Mix gently and then add the remainder.
  • Fold in the contents from the first bowl (apples etc) into the mixing bowl by hand. Bake this for an hour or until a toothpick comes out clean.

Lee, one of the women at my church, is a great cook. She is also borderline diabetic (Type 2). She still eats sugar, but since our pastor and I are diabetic, she makes this cake and brings it for us occasionally.

2 cups Splenda granular
3 eggs
1 1/2 cups oil
1/4 cup orange juice
1 tablespoon cinnamon
3 cups self-rising flour
3 cups chopped apples (peeled, I use Gala, Jonathon, or McIntosh)
1 tablespoon vanilla
1 cup chopped pecans
1 cup unsweetened dried shredded coconut

Steps:

  • Preheat the oven to 325 degrees. Generously spray a Bundt or tube pan.
  • Dump all ingredients into a large mixing bowl (don't you just love one bowl recipes?) folding in the apples nuts, and coconut last.
  • Pour batter into pan and bake approximately 1 1/2 hours.
  • Cool on a wire rack. When serving dust VERY LIGHTLY with powdered sugar (this should be for looks, not the sweet taste).

3 tablespoons sugar
3 cups sugar
3 teaspoons cinnamon
3 cups flour
1 teaspoon baking soda
3/4 teaspoon salt
1/4 teaspoon nutmeg
1 1/2 cups vegetable oil
3 eggs
3 cups chopped apples (about 3 apples)
2 teaspoons vanilla extract
1 cup chopped pecans
1/2 cup raisins
prepared frosting, melted (from a can)

Steps:

  • Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
  • Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
  • Transfer to pan and then drop and shake the pan to release bubbles.
  • Bake 1 1/2 hours - 1 3/4 hours until toothpick comes out clean. Cool on rack 15 minutes, remove from pan and glaze.

1 1/4 cups peeled and diced granny smith apples
1 1/4 teaspoons apple pie spice, divided
1 cup sugar substitute, for baking such as Splenda Sugar Blend for Baking*
1 tablespoon sugar substitute, for baking such as Splenda Sugar Blend for Baking*
2 cups cake flour
1/2 cup whole wheat flour
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
1/3 cup vegetable oil
1/3 cup egg substitute
1 teaspoon pure vanilla extract
1 cup butter pecan glucerna shake
1 medium granny smith apple, sliced thin for top of cake

Steps:

  • Preheat the oven to 350 degrees F. Lightly mist an 8 x 8 baking pan with nonstick vegetable oil spray.
  • Place the diced apples in a microwave-safe container and microwave for 2 minutes. Cool.
  • In a small mixing bowl, combine 1/4 teaspoon apple pie spice and 1 tablespoon sugar substitute and reserve.
  • Combine the flours, salt, baking soda, baking powder, and 1 teaspoon apple pie spice in a mixing bowl. Set aside.
  • In a mixing bowl, whisk together the oil and 1 cup sugar substitute for 1 minute. Add the egg substitute and vanilla and continue to whisk for 1 minute. Add one-third of the dry ingredients and mix to combine. Add one-third of the Glucerna Shake and mix to combine.
  • Repeat the process two more times. Scrape the inside surface of the bowl and fold in the steamed diced apples. Pour the batter into the prepared pan. Arrange the sliced apples on top of the cake batter and sprinkle with the reserved spice and sugar substitute blend.
  • Bake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Transfer to a wire rack and cool. Slice and serve.
