This dessert practically qualifies as a party game with all the tasty toppings guests can pile on. Set out stacks of crepes -- some flavored with vanilla and rum, others with chocolate -- along with bowls of tempting fillings and rich, luscious sauces. Then let everyone choose his or her own combinations.

Yield Makes about 2 dozen

Number Of Ingredients 13

1 1/2 cups milk
2 tablespoons pure vanilla extract
1 tablespoon rum, brandy, or other liqueur
3 large egg yolks
2 tablespoons sugar
1 teaspoon salt
1 1/2 cups sifted all-purpose flour
5 tablespoons melted butter
1/4 cup vegetable oil, for brushing pan
Lemon Curd
Hot Fudge Sauce
Ricotta-Macarpone Filling
Sauteed Pineapple Crepe Filling

Steps:

  • Place milk, vanilla, and rum in blender. Add yolks, sugar, salt, flour, and then butter. Blend on high speed for 30 seconds. Scrape sides of blender; blend 30 seconds more. Transfer batter to an airtight container; refrigerate at least 2 hours or overnight. Brush a 6 1/2-to-7-inch crepe pan or nonstick skillet with oil. Heat on medium until just starting to smoke. Remove pan from heat; quickly pour 2 tablespoons of batter into middle of pan.
  • Quickly (in 2 to 3 seconds) tilt pan in all directions so the batter covers entire bottom in a thin layer. Return pan to heat for about 1 minute. Jerk pan sharply back and forth to loosen the crepe.
  • Lift edges with a spatula; if underside is golden brown, turn crepe by using two spatulas or by flipping crepe with a toss of the pan.
  • Cook about 30 seconds more, until spotty brown. Slide crepe onto a plate. Grease pan again with oil, heat to just smoking, and repeat with remaining batter. To keep warm, cover with an ovenproof dish in a 200 degrees oven. Or make up to a day in advance; reheat, covered with foil, in a 300 degrees oven until warm.

4 eggs, lightly beaten
1 1/3 cups milk
2 tablespoons butter, melted (no substitutions please!!!)
1 cup all-purpose flour
2 tablespoons white sugar
1/2 teaspoon salt
1 teaspoon vanilla (optional)
1/4-1/2 teaspoon cinnamon (optional)

Steps:

  • In large bowl, whisk together eggs, milk, melted butter, flour, sugar and salt until smooth.
  • Heat a medium-sized skillet or crepe pan over medium heat. Grease pan with a small amount of butter or oil applied with a brush or paper towel. Using a serving spoon or small ladle, spoon about 3 tablespoons crepe batter into hot pan, tilting the pan so that bottom surface is evenly coated. Cook over medium heat, 1 to 2 minutes on a side, or until golden brown. Serve immediately.

A crepe is a very thin pancake that originates from France. Ree uses pancake mix as a crepe shortcut - adding more liquid thins out the batter.

Number Of Ingredients 12

1 cup pancake mix
2 tablespoons sugar
1 1/3 cups whole milk
2 teaspoons vanilla extract
1 large egg, beaten
1/4 cup melted butter
One 8-ounce container whipped cream cheese (store bought)
1/2 cup berry preserves
1 cup mixed berries (raspberries, strawberries, blueberries)
1/4 cup chocolate syrup
Canned whipped cream, for topping
3 to 4 sprigs of mint

Steps:

  • For the crepes: In a bowl, whisk together the pancake mix and sugar. Combine the milk, vanilla and eggs in a pitcher. While whisking, slowly add the wet ingredients to the dry ingredients, mix until smooth.
  • Heat a 10-inch non-stick skillet over medium-low heat. Add a teaspoon of the melted butter and swirl the pan so the butter covers the bottom of the pan. Add 2 ounces of the batter to the skillet, swirling the pan again to distribute the batter into a thin and even layer. Cook until golden on the first side, 2 to 2 1/2 minutes. Then carefully flip and cook for 1 more minute on the second side. Remove the cooked crepe from the skillet to a cutting board or plate. Repeat with the remaining crepes and butter, stacking he finished crepes in a single layer to cool.
  • To serve: Lay a crepe onto a clean surface. Add a tablespoon of the whipped cream cheese to the center then top with 1 tablespoon of the preserves and spread. Fold in half, then in half again to create a triangle, and set aside. Repeat with the remaining crepes. Top with berries, a drizzle of chocolate syrup, a little whipped cream and a mint leaf to finish.

This recipe can be used for all your dessert crepes. You can cook them fresh and use them or better yet make a batch, wrap them in plastic, then foil and freeze them for future use. Have wax paper between the crepes. Dessert fillings will be posted separately. I say 20 crepes this depends on the size and how thin you pour them.Mine are almost paper thin and about the size of a large side plate

4 large eggs
1 cup flour
2 tablespoons sugar
1 cup milk
1/4 cup water
1 tablespoon melted butter

Steps:

  • Put all the ingredients in your blender and blend for 1 minute.
  • Scrap down the sides and blend for an additional minute or until smooth.
  • Refrigerate for 1 hour.
  • To Cook:.
  • A- Use an upside down crepe pan and follow instructions or.
  • B- Use a non stick skillet.
  • You do not have to use additional oil or fat.
