CREAMED TURKEY AND BISCUITS



Creamed Turkey and Biscuits image

Makes 4 servings

Number Of Ingredients 10

2 tablespoons unsalted butter
¼ cup all-purpose flour
1½ cups whole milk
¾ cup leftover turkey pan juices, turkey stock, or chicken stock
½ teaspoon salt
¼ teaspoon ground black pepper
1 tablespoon fresh thyme leaves
2 cups leftover chopped or shredded cooked turkey
½ (16-ounce) bag frozen mixed vegetables, thawed
4 large frozen buttermilk biscuits, baked according to package directions and halved

Steps:

  • In a large skillet, melt butter over medium heat. Whisk in flour, and cook for 1 minute. Whisk in milk and next 4 ingredients until smooth; cook, whisking frequently, for 8 to 10 minutes or until thickened. Stir in turkey and vegetables, and cook until heated through. Spoon turkey mixture between biscuit halves, and serve immediately.

1/2 teaspoon curry powder
1 cup chicken broth
1/4 cup 2% milk
2 teaspoons canola oil
1 small yellow summer squash, sliced
1 small zucchini, sliced
1/2 small onion, thinly sliced
2 cups cubed cooked turkey breast
1/2 teaspoon grated lemon zest
Hot cooked rice
3 tablespoons chopped cashews

Steps:

  • In a small saucepan, melt butter over medium heat. Stir in flour and curry powder until smooth; gradually whisk in broth and milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Remove from heat; set aside., In a large skillet, heat oil over medium-high heat. Add squash, zucchini and onion; cook and stir until tender. Add turkey, lemon zest and reserved sauce; heat through. Serve with rice; sprinkle with cashews.

1/3 cup chopped green pepper
1/3 cup chopped onion
3 tablespoons butter
1/4 cup biscuit/baking mix
1-1/2 cups milk
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2 cups cubed cooked turkey
1 cup frozen peas
2 tubes (7-1/2 ounces each) refrigerated buttermilk biscuits
3/4 cup shredded cheddar cheese

Steps:

  • In a large saucepan, saute green pepper and onion in butter until tender. Stir in biscuit mix until blended. Gradually add milk and soup; stir until blended. Bring to a boil; cook and stir for 2 minutes. Stir in turkey and peas. Transfer to a greased 13-in. x 9-in. baking dish. Separate biscuits and arrange over the top. Sprinkle with cheese. Bake, uncovered, at 425° for 17-20 minutes or until golden brown.

1/2 cup All-Bran® Original or All-Bran® Bran Buds®
2/3 cup milk
1 1/3 cups all-purpose flour
2 1/2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon curry powder
1/3 cup shortening

Steps:

  • 1. Measure KELLOGG'S ALL-BRAN cereal and milk into small mixing bowl. Stir to combine. Let stand 2 minutes or until cereal softens.2. In large mixing bowl, stir together flour, baking powder, salt and curry powder. Cut in shortening until mixture resembles coarse crumbs. Add cereal mixture, stirring only until combined. On lightly floured surface, gently knead dough five times. Roll out to 3/4-inch thickness. Cut with floured 1 3/4-inch biscuit cutter into 12 biscuits. Place on ungreased baking sheet.3. The day after Thanksgiving you can achieve the very pinnacle of comfort food! My mom ended up having to bake several turkeys a year just so we could get this stuff. Some very knowledgeable 'Zaarites helped me to ressurect it as the recipe had been lost.

2 cups whole milk
2/3 cup chicken stock
4 tablespoons margarine
1/2 teaspoon salt
1/4 teaspoon white pepper
4 tablespoons all-purpose flour
5 cups cooked turkey, deboned and roughly chopped
12 slices white bread, toasted

Steps:

  • In a large no-stick skillet, begin heating the milk, margarine and chicken stock over medium heat.
  • Whisk in the flour right away, eliminating all lumps, and as it comes to a boil, it should thicken.
  • Add the salt and pepper. (Black pepper is okay as a substitute).
  • As it thickens, toss in the chopped turkey and stir carefully as to not break up the chunks too much.
  • If it gets too thick, just add some milk and stir.
  • As soon as the mix is thick enough to your liking, it is done. Turn off the heat and cover until serving.
  • Serve over slices of toast or, make up some of your favorite biscuits instead.
  • If you have some left-over turkey broth from the day before when the turkey was baked, use that instead of chicken stock.
  • Note: the more dark meat, the better. It really adds to the flavor of this dish.
