I just love this oatmeal and eat it almost every day. You can sprinkle it with some chopped nuts or seeds but then it won't be core.

Number Of Ingredients 5

1/2 cup rolled oats (quick or old-fashioned)
1 cup nonfat milk
1 cup frozen mixed berries
cinnamon
sugar substitute

Steps:

  • Combine oats and milk.
  • Heat on stove top at medium heat until mixture comes to a boil.
  • Reduce heat simmer until thick, stirring occasionally.
  • Add frozen berries and heat through.
  • Season to taste.
  • Enjoy.

Another entry in my collection of oatmeal combinations. This one is a little bit odd but the results are surprsingly good. I have presented it here to match my own desired consistency, but you should adjust to your own tastes.

Number Of Ingredients 8

1 cup regular oatmeal (not instant)
2 cups water, use less if you like a very thick porridge
1 banana, sliced 1/4 inch thick
1/2 cup pineapple chunks in juice or 1/2 cup pineapple chunks in juice
1/2 cup mandarin oranges in juice
2 drops lemon extract
1/8 teaspoon coconut extract
1/4 cup shredded coconut (optional)

Steps:

  • Place water in a medium saucepan and bring to and bring to a boil.
  • Add oats and reduce to a simmer.
  • Add the extracts. (A caution here; one drop if lemon adds a certain clean quality that works well with the fruit. More than that and the results are likey to be off. If you are concerned about your accuracy, I would omit rather than add too much.).
  • Cook as directed on you pacakage somewhere between 3 to 5 minutes.
  • One minute before the oatmeal is done, stir in the banana slices, pineapple and oranges.
  • Divide into two bowls, garnish with coconut if using.
  • Two tablespoons of shredded coconut is 1 point.

  • Banana Bread Baked Oatmeal. Baked was a more recent way that I have learned to love oatmeal. I like it because you have the opportunity to eat it as soon it comes out of the oven and then the next day when I have barely enough time to open the door and get out to the car after waking up.
  • Chocolate No Bake Cookies. On the other end of the spectrum there are the chocolate no bake cookies. In all actuality, these were probably the first cookies I ever made.
  • Strawberry Vanilla Overnight Oats. Even though I am stuck on baked oatmeal, the overnight oats are all the rage. This is really nice for people like me who live in areas where, for at least three months out of the year it can be the coolest time of the day and we are all still sweating.
  • Pumpkin Pie Oatmeal. Six months after I start craving strawberries (which, ironically, is six months after strawberries appear at our farmer’s market) I start craving things with pumpkins in them.
  • Oatmeal Cream Pies. Oatmeal cream pies have a special place in my heart. As a young married college student I would stop at the gas station in between our house and my first class of the day and grab one.
