cooking spray
½ cup white sugar
¼ cup unsalted butter
2 small ripe bananas, mashed
1 egg
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
5 small strawberries, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 6 muffin cups with cooking spray.
  • Combine sugar and butter in a medium bowl; beat with an electric mixer until pale and fluffy. Add bananas, egg, and vanilla extract; beat for 1 minute.
  • Sift flour, baking powder, baking soda, and salt over the banana mixture. Beat until just combined. Stir in chopped strawberries. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 16 to 18 minutes. Cool for 5 minutes then transfer to a wire rack to cool completely.

Lots of strawberries from last summer, and need to make some room in the freezer. I made a triple batch of these for a wedding social, they were gone in a flash!

1/4 cup unsalted butter (melted)
1/2 cup milk
1 large egg
1 3/4 cups all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
3/4 cup sugar
1 1/2 cups fresh strawberries, chopped
1 banana, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Line a muffin pan with paper liners.
  • Combine the butter, milk, and egg in a small bowl and beat it lightly. In a larger bowl, pour in your flour, salt, baking powder, and sugar and gently mix it. Toss in the chopped strawberries and sliced banana, then stir to coat with the flour mixture. Pour in your milk mixture and stir it all up together.
  • Fill up the muffin cups with your batter, then place in the oven and bake for 25 to 30 minutes.
  • Let them cool down for 10 minutes, then remove from the pan and serve these bad boys up.

2 1/3 cups whole wheat flour
3/4 cup granulated sugar
1/4 cup firmly packed light brown sugar
2 1/2 teaspoons baking powder
1/8 teaspoon salt
1 cup chopped fresh strawberries
1 cup skim milk
1/3 cup low-fat banana yogurt
1 mashed banana
1 large egg, lightly beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 F.
  • Spray a 12 cup muffin pan with vegetable cooking spray or line with paper cups. Set aside.
  • In a medium bowl, combine flour, sugars, baking powder and salt. Mix well. Stir in strawberries.
  • In a small bowl, combine milk, yogurt, banana, egg, and vanilla. Mix well. Add milk mixture to dry ingredients and stir until just combined without overmixing. Fill muffin cups about 2/3 full.
  • Bake until tops of muffins are firm and golden, about 20 minutes. Place on a wire rack and cool for 5 minutes. Turn muffins out onto rack and cool completely.

1 cup whole wheat flour
1 cup rolled oats
1 cup natural bran
1/2 teaspoon salt
1/3 cup non-fat powdered milk
1/2 teaspoon baking soda
2 teaspoons baking powder
1 cup mashed banana
2 egg whites
3 -4 tablespoons maple syrup or 3 -4 tablespoons molasses
2 tablespoons vegetable oil
1 cup orange juice
2 tablespoons dark rum or 2 teaspoons rum extract

Steps:

  • Preheat oven to 400 degrees.
  • Combine dry ingredients.
  • In a larger bowl, mash the banana and beat in the egg whites until mixture is frothy.
  • Blend in the honey, vegetable oil (if using), orange juice and rum.
  • Incorporate dry ingredients and blend just until combined.
  • Lightly grease muffin tins and fill two-thirds.
  • *This oil can be eliminated for completely fat-free muffins.
  • Bake for 18-20 minutes.

2/3 cup sugar
1/2 cup oil
2 eggs
2/3 cup mashed banana
1 teaspoon vanilla
1 2/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup finely chopped strawberry

Steps:

  • Preheat oven to 375°.
  • Line 12 muffin cups with paper baking cups.
  • Combine sugar, oil and eggs and blend well.
  • Stir in bananas and vanilla.
  • Lightly spoon flour into measuring cup and level off.
  • Add flour, baking soda and salt to sugar mixture and stir just until combined.
  • Stir in strawberries.
  • Spoon batter evenly into lined muffin cups.
  • Bake for 17 to 21 minutes or until toothpick inserted in center comes out clean.
  • Immediately remove from muffin cups.
