Deep-Fried Bacon, Chicken and Cheese Balls image

These are a great starter that will keep the whole family happy, including the kids! A recipe I knocked up for my 6-year-old son, now we all eat them. Easy to make and great served with some cherry tomatoes.

Number Of Ingredients 8

300 g diced chicken breasts
3 slices middle rashers bacon (Diced)
salt and pepper (to season)
1/2 teaspoon dried parsley
1/2 cup shredded parmesan cheese
1 tablespoon mayonnaise
3 teaspoons plain flour
3/4 cup breadcrumbs

Steps:

  • Dice chicken and bacon ,mix together in a medium bowl and season with salt and pepper.
  • Add Parsley ,Cheese ,Mayonaise and flour and mix well.
  • Press mixture into approx 1 inch round balls.
  • Roll the balls in bread crumbs until balls become firm enough to deep fry.
  • Put in fridge for an hour or two then deep fry 180c until golden brown (Approx 10min).
  • Serve with fresh salad or cherry tomatoes.

2 cups Italian-seasoned bread crumbs
1 cup grated Parmesan cheese
1 cup shredded sharp Cheddar cheese
1 cup milk
1 large egg
1 (8 ounce) package cream cheese
1 cup vegetable oil for frying, or as needed

Steps:

  • Line a baking sheet with parchment paper or waxed paper.
  • Pour bread crumbs, Parmesan cheese, and Cheddar cheese into 3 separate piles on the prepared baking sheet. Combine milk and egg in a bowl and stir until well combined.
  • Roll cream cheese into 1-inch balls. Split each ball in half and place sharp Cheddar inside of cheese ball; put it back together and shape cream cheese around the Cheddar cheese. Roll it in Parmesan and Cheddar cheeses until the outside is completely covered. Dip in the milk mixture and roll in bread crumbs until completely covered. Repeat with remaining cream cheese balls.
  • Heat oil in a large saucepan to 350 degrees F (175 degrees C). Drop cheese balls in the hot oil and allow to get brown on all sides, 3 to 5 minutes. Drain on paper towels.

1/2 lb cheddar cheese, grated
6 ounces shrimp, peeled and chopped
1 1/2 tablespoons cilantro, chopped
1 tablespoon jalapeno chile, seeded and chopped (canned or fresh)
1 pinch chili powder
vegetable oil (for frying)
1 cup flour
1/2 cup cornstarch
3/4 teaspoon baking powder
1 pinch salt
1 cup water
2 tablespoons vegetable oil
1 -1 1/2 cup breadcrumbs (for rolling cheese balls)

Steps:

  • In a medium bowl mix together cheese, shrimp, cilantro, chilies and chili powder. Form into 3/4-inch balls. Set aside.
  • Heat oil in a heavy saucepan or deep fryer to 350-degrees F.
  • Combine flour, cornstarch, baking powder and salt in a pie pan or shallow dish.
  • Make a well in center of flour mixture and add water and 2 tablespoons oil, whisk to combine.
  • In another pie pan pour in breadcrumbs.
  • Dip cheese balls in batter, roll in breadcrumbs and then deep fry in batches.
  • Drain on paper towels.

A great way to use leftovers. My family love these for lunch with a simple tossed salad. They also make a good main meal served with fresh vegetables. Using seasoned breadcrumbs always adds that little extra. I've made small balls to take along to bring a plate nights.

6 large potatoes
1 cup cooked chicken, chopped
1/2 cup cheese (cheddar or your choice)
1/4 cup bacon, pieces
1 egg
butter
breadcrumbs, for rolling
cream
oil (for frying)
1 tablespoon milk

Steps:

  • Peel potatoes and boil until soft.
  • Fry Bacon pieces until golden.
  • Drain potatoes and put back in saucepan, mash add butter and cream until creamy and smooth but still firm.
  • Add bacon, chicken and cheese to mashed potato mixture and mix well. Cool a little.
  • Combine egg and milk until fluffy.
  • Take small handful of potato mix and roll into a ball. Dip into egg and roll in breadcrumbs.
  • Refrigerate for 20 mins until firm.
  • Heat oil for frying. Can be deep fried or shallow fried and cook until golden brown.
  • Drain well.

1 teaspoon salt
2 cups vegetable oil

Steps:

  • take the flour and salt and mix the around in a large bowl.
  • take the milk and egg and whisk them together in a small bowl.
  • dip the bacon in the milk mix then into the flour, double dip them like that.
  • put the bacon onto a plate and let it chill for 15 minutes.
  • put he oil in the deep-fryer (preheat to 325?) or a pan (put on high).
  • fry until the bacon is ready. (depends on the bacon).
  • put bacon when ready on a plat with a paper towel and you are done.
