Nothing beats a great chocolate chip cookie. These ones are deliciously decadent with both white and dark chocolate. Perfect as a home baked gift or for a morning tea shout.

200g butter, softened
1 cup brown sugar, firmly packed
1 tsp vanilla extract
1 egg
2¼ cups flour
1½ tsp baking powder
100g white chocolate, roughly chopped
100g dark chocolate, roughly chopped

Steps:

  • Preheat oven to 170°C (fan assisted). Line 2 baking trays with baking paper.
  • Using an electric beater cream the butter, brown sugar and vanilla extract until light and fluffy, then beat in the egg.*
  • Sift in the flour and baking powder with the chopped white and dark chocolate.
  • Roll into balls and place on baking trays, flattening a little with your hand. Leave room between each one to spread.
  • Bake for 15-20 minutes or until golden. Remove from the oven and stand for 5 minutes on the trays before transferring the cookies to a wire rack to cool. When cold, store in an airtight container.

1 cup unsalted butter
1 ¼ cups dark brown sugar
¼ cup white sugar
1 egg
1 ½ teaspoons vanilla extract
2 cups all-purpose flour
2 tablespoons all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
2 ½ cups semisweet chocolate chips, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat butter in a large bowl using an electric mixer until smooth. Add brown sugar and white sugar; mix until well blended. Add egg and vanilla extract and beat until smooth.
  • Toss 2 cups plus 2 tablespoon flour, baking soda, and salt together using a fork in a small bowl. Add to the butter mixture in batches, mixing well after each addition. Fold in 1 3/4 cups chocolate chips. Spread batter into an ungreased 9x13-inch baking pan.
  • Bake in the preheated oven until edges are golden, about 25 minutes. Spread remaining 3/4 cup chocolate chips on top. Return to the oven until chocolate chips are shiny, about 1 minute more. Remove from oven and spread melted chocolate over the top.

These cookies are inspired by the thin and crispy style made popular by the Long Island bakery Tate's Bake Shop. In our version, we've upped the brown sugar, vanilla and chocolate chips for an even more flavorful and decadent treat.

Number Of Ingredients 10

1 1/2 cups all-purpose flour (see Cook's Note)
2 1/4 teaspoons kosher salt
1 teaspoon baking soda
1 stick (8 tablespoons) unsalted butter, softened
1/4 cup vegetable oil
3/4 cup granulated sugar
1/2 cup packed dark brown sugar
1 tablespoon pure vanilla extract
2 large eggs, at room temperature
One 12-ounce bag semisweet chocolate chips

Steps:

  • Arrange racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, salt and baking soda in a medium bowl until completely combined. Beat the butter, oil, granulated sugar and brown sugar in the bowl of a stand mixer with the paddle attachment (or a large bowl if using a hand mixer) on medium-high speed until creamy, about 5 minutes. The mixture will look broken but that's ok. Beat in 1 teaspoon water and the vanilla until smooth. Reduce the speed to low and beat in the eggs one at a time until incorporated. Beat in the dry ingredients until just combined. Fold in 1 1/2 cups chocolate chips. Reserve the rest.
  • Drop heaping tablespoons of the dough onto the prepared baking sheets about 2 inches apart. Lightly press about 3 of the remaining chocolate chips into each cookie.
  • Bake the cookies until they are a deep golden brown, rotating the pans halfway through, 12 to 15 minutes. Let the cookies cool on the baking sheets for 10 minutes. Then transfer them to a wire rack to cool completely. Repeat with any remaining dough.

  • Melt butter in microwave. Allow to cooland add egg - lightly whisk.

  • Remove tray from oven, and quickly place tablespoon size blobs of dough on sheet.
  • Bake for 12-15 minor until golden.
  • Cool 5-10 minon tray before putting on cooling rack.

Drop oven temperature to 350 degrees when baking, and expect the cookies to take a little longer to bake than normal.

3/4 cup margarine, softened
3/4 cup butter flavor shortening
1 1/2 cups brown sugar, lightly packed
3/4 cup sugar
3 eggs
3 tablespoons light corn syrup
3 tablespoons water
3 teaspoons vanilla
3 3/4 cups flour, unsifted
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups chocolate chips, semi-sweet

Steps:

  • Preheat the oven to 350°F and place baking rack in middle of oven.
  • In a large bowl combine flour, baking soda and salt; set aside.
  • In a seperate bowl cream the margarine and butter flavored shortening.
  • Add the sugars and beat until creamy.
  • Add the eggs to incorporate.
  • Add the corn syrup, water and vanilla extract, mix well.
  • Gradually blend in the flour mixture to the creamed mixture and mix well.
  • Stir in the chocolate chips; make sure they are evenly distributed.
  • Drop by teaspoonfuls onto an ungreased cookie sheet, about 1 inch apart and bake until the cookies are slightly underdone, between 10-12 minutes (maybe longer, depending on your oven's calibration).
  • The centers should be just set and a light golden brown. They will continue to cook, from the heat in the cookie sheet, after they are removed from the oven.
  • Drop by rounded teaspoonfuls onto cookie sheet.
  • Allow to cool on cookie sheet for 1 minute before removing to cooling racks until they are completely cooled. Enjoy!
