CAULIFLOWER CASSEROLE
Creamy and cheesy cauliflower casserole with cream cheese and bacon is an easy, low-carb side dish perfect for holidays and gatherings.

- Place racks in the upper and lower thirds of your oven and preheat to 425 degrees F. Lightly coat a wide 3-quart (9x13) casserole dish, with nonstick spray, and line a rimmed baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with olive oil, garlic powder, salt, pepper, and nutmeg.
- Transfer the cauliflower to the prepared casserole dish and spread it into an even layer. Keep the bowl handy. Roast cauliflower on the lower rack for 30 minutes, until the florets are tender and begin to brown.
- Meanwhile, arrange the bacon strips in a single layer on the prepared foil-lined baking sheet. Bake on the upper rack until crisp, about 10 to 15 minutes.
- Remove the bacon and cauliflower from the oven. Stir the cauliflower, spread it back into an even layer, and place it on the upper rack to continue cooking until the end of its baking time.
- Transfer the bacon to a paper-towel-lined plate and lightly pat dry. Once cool enough to handle, roughly chop or crumble the bacon into small pieces.
- In the same bowl that you used to toss the cauliflower, beat together the cream cheese and Greek yogurt until combined. Stir in 1/3 cup Gruyere cheese, 2 tablespoons of Parmesan cheese, and half of the chopped bacon.
- Remove the roasted cauliflower from the oven and dollop the cream cheese mixture over the top. Sprinkle with the remaining 1/3 cup of Gruyere and 2 tablespoons of Parmesan.
- Return the pan to the upper third of the oven and bake until the cheese is melted and gooey, about 5 to 7 minutes. Turn the oven to broil. Broil the casserole until golden on top, 1 to 3 minutes. Do not walk away, and watch carefully to make sure the cheese does not burn.
- Remove from the oven and sprinkle with fresh chives and remaining bacon. Serve hot.

- 1. Cook the cauliflower in boiling salted water for 15 minutes or until tender.
- 2. Meanwhile, cook the potatoes in boiling water for 15 minutes or longer until tender; drain the potatoes and cauliflower and place in mixing bowl.
- 3. Add the butter, salt and pepper; mash together to make a puree; it is better to use a potato masher as a food processor can make it too mushy.
- 4. Beat the eggs into the puree, one at a time, then stir in the cheese.
- 5. Spoon into a greased dish, and bake one hour with foil on it in a 350 oven.

- Cook cauliflower: Add 1-inch of water to a large pot. Bring the water to a boil. Place the cauliflower florets in a steamer basket and insert the basket into the pot. Cover the pot, reduce the heat to medium and steam until the cauliflower is tender-crisp, about 5-8 minutes. Drain the cauliflower and transfer it to a clean work surface lined with paper towels. Gently pat the cauliflower dry and set aside to cool.
- Preheat oven to 350-degrees F. Spray an 9x9 or 8x10-inch baking dish with non-stick cooking spray.
- Mix wet ingredients + seasonings: In a large mixing bowl, combine the condensed soup, mayonnaise, eggs, garlic powder, paprika and cayenne. Season with ½ teaspoon of salt and heaping ¼ teaspoon of pepper. Whisk until thick, creamy, and well combined.
- Add remaining ingredients: Add the steamed cauliflower, 1 cup of cheddar (4 ounces), all the gruyere, ¼ cup of bacon, and all the parsley. Gently mix well to combine.
- Add to baking dish: Transfer mixture to the prepared baking dish.
- Top with cheeses & Bake: Top the casserole with the remaining ½ cup of cheddar. Bake for 40 minutes.
- Add onions + remaining bacon: Remove the casserole from the oven and top with the remaining bacon and all the crispy onions. Return to oven and bake for an additional 5 minutes, or until the casserole is bubbly and golden brown on top.
- Cool: Remove from the oven and let you cool 5-10 minutes before serving.
- Serve: Garnish with grated parmesan and chopped parsley. Serve and enjoy while warm!

- Separate cauliflower into small florets and steam over boiling water for about 10 minutes.
- Place cauliflower in an 8" square baking dish.
- Melt butter over medium heat in a saucepan, then stir in flour for about 1 minute.
- Gradually whisk in milk and simmer, whisking until thick for about 8 minutes.
- Add cheddar cheese, dry mustard, salt and pepper until cheese is melted.
- Pour cheese sauce over cauliflower.
- In a small bowl, mix together bread crumbs, Parmesan and parsley and sprinkle over cauliflower mixture.
