DAY AHEAD GIBLET PAN GRAVY

Day Ahead Giblet Pan Gravy image

We all know the amount of work we put into Thanksgiving... Everything from guest lists to food items are thought over and lovingly prepared. One of the stars of an excellent Thanksgiving is excellent pan gravy. To minimize the stress, we're going to work through half of the recipe, the day before, and then finish it up on...

Provided by Andy Anderson !

Categories     Gravies

Time 1h20m

Number Of Ingredients 11

2 Tbsp oil, peanut, canola, or grapeseed
turkey neck, heart, and gizzard
1 medium onion, chopped
6 c chicken broth
3 c filtered water
3 sprig(s) fresh thyme
10 parsley, stems
6 Tbsp sweet butter, unsalted
1/4 c flour, all purpose
1 c white wine, dry
salt, and ground black pepper, to taste

Steps:

  • 1. Chef's Note: This is an excellent tasting gravy; however, if you use a brine for your turkey, then there are two things to remember. Don't add any salt to the gravy, and use a low-sodium chicken stock. The pan drippings from a brined turkey will contain extra salt from the brining process... so, you probably will not need additional salt.
  • 2. Heat the oil in a saucepan over medium-high heat until it begins to shimmer.
  • 3. Add the turkey neck, heart, and gizzard and cook, stirring, until browned, about 8 minutes.
  • 4. Add the onion and cook, stirring, until softened, about 6 minutes.
  • 5. Reduce heat to low; cover the pan, and continue cooking, stirring occasionally, until turkey parts and onion release their juices, about 20 minutes.
  • 6. Add chicken broth, water, and the herbs; increase heat to medium-high and bring to boil, then reduce heat to low and simmer, uncovered, skimming any scum that rises to surface, until broth is rich and flavorful, about 30 minutes.
  • 7. Strain the broth, into a bowl... the amount you have should be around 8 cups.
  • 8. Reserve the heart and gizzard; however, you can discard the neck. Dice the heart and gizzard, and reserve, separate from the gravy, until Thanksgiving Day.
  • 9. Heat the butter in large heavy-bottomed saucepan over medium-low heat; when foam subsides, whisk in flour. Cook, stirring constantly, until nutty brown and fragrant, about 10 minutes
  • 10. Whisk in the cooked broth, plus the wine, and then increase to medium-high and bring to boil.
  • 11. Immediately, reduce heat to medium-low and simmer, stirring occasionally, until slightly thickened and flavorful, about 30 minutes. Add a bit of salt, and pepper, but remember to omit the salt, if you brined the turkey.
  • 12. THE BIG EVENT
  • 13. Remove the bowl from the refrigerator, just before the turkey comes out of the oven, place into a pot, and warm, but don't boil the liquid.
  • 14. Remove the drippings from the pan, and de-fat.
  • 15. Add the pan drippings to the gravy mixture you made yesterday, stir in the reserved giblets, and then bring to a simmer, about 5 minutes. Season to taste.
  • 16. Serve with turkey... Enjoy.

GIBLET GRAVY

Giblet Gravy image

We're about to let you in on a secret: The key to smooth and richly flavored turkey gravy lies within the bird itself. We're talking about the giblets. Giblet gravy turns out meaty and luscious, and you can certainly pull it off-even on your first try. We'll show you how it's done with this surefire recipe. Once you get a taste of the depth of flavor that results from turning those odd bits into gravy, you'll never look back. Mashed potatoes and biscuits will forever be better, and your guests will certainly be satisfied!

Yield 8

Number Of Ingredients 9

Turkey giblets (from whole turkey, thawed if frozen)
2 medium stalks celery, sliced (1 cup)
1 medium onion, sliced
1 teaspoon salt
1/4 teaspoon pepper
Drippings from roasted turkey
About 1/4 cup Progresso™ chicken broth (from 32-oz carton), if needed
1/4 cup Gold Medal™ all-purpose flour
Salt and pepper to taste

Steps:

  • In 2-quart saucepan, place giblets (except liver); add enough water to cover. Add celery, onion, 1 teaspoon salt and 1/4 teaspoon pepper. Heat to boiling; reduce heat to low. Cover and simmer 1 to 2 hours or until giblets are tender. Add liver during last 15 minutes of cooking.
  • Drain giblet mixture, reserving broth and giblets. Discard celery and onion.
  • After removing turkey from roasting pan, remove 1/2 cup drippings (turkey juices and fat); reserve. Pour remaining drippings into 2-cup measuring cup; add enough giblet broth and chicken broth to measure 2 cups; set aside.
  • Place reserved 1/2 cup drippings in roasting pan or 12-inch skillet. Stir in flour. Cook over low heat, stirring constantly and scraping up brown bits in pan, until smooth and browned. Gradually stir in 2 cups broth mixture. Cook, stirring constantly, until mixture boils and thickens. Remove meat from neck; finely chop meat and giblets and add to gravy if desired. Stir in salt and pepper.

Smoky Sage and Giblet Gravy image

Provided by Greg Patent

Categories     Sauce     Mushroom     Onion     turkey     Sauté     Thanksgiving     Bacon     Carrot     White Wine     Fall     Sage     Simmer     Bon Appétit

Yield Makes about 4 cups

Number Of Ingredients 15

Giblet broth and giblets
Neck, gizzard, heart, wing tips and liver reserved from 1 turkey
2 1/2 cups canned low-salt chicken broth
1/2 cup dry vermouth or white wine
1 medium carrot, peeled, sliced
1 small onion, sliced
4 ounces crimini mushrooms, sliced
12 large fresh sage leaves
1/2 teaspoon black peppercorns
Gravy
Roasting pan and pan juices from 1 roasted turkey
8 bacon slices (about 7 ounces)
6 tablespoons all purpose flour
3 tablespoons dry vermouth or white wine
2 tablespoons chopped fresh sage

Steps:

  • Rinse turkey neck, gizzard, heart and wing tips. Place in heavy large saucepan. Add broth, vermouth, carrot, onion, mushrooms, sage and peppercorns. Bring to boil over medium-high heat. Reduce heat to low; cover pan. Simmer until neck meat is very tender, about 2 hours 30 minutes.
  • Meanwhile, place liver in heavy small saucepan; cover with cold water. Simmer over medium heat until firm to touch and cooked through, about 5 minutes. Drain.
  • Strain broth into small bowl. Transfer neck, gizzard and heart to work surface; discard remaining solids. Carefully remove all meat from neck. Chop meat finely. Cut away any tough membrane from gizzard. Chop gizzard, heart and liver finely. Combine meats in medium bowl. Spoon fat off top of broth and discard. (Giblets and broth can be made 1 day ahead. Cover separately and refrigerate.)
  • Gravy
  • Baste the turkey occasionally with three to four cups of homemade or canned low-salt chicken broth. That will help to create the rich pan juices that go into the gravy.
  • Pour roasting pan juices into medium bowl. Spoon fat off top; discard fat. Return pan juices to roasting pan and set pan over 2 burners. Simmer over medium-high heat 2 minutes, stirring with wooden spoon and scraping up any browned bits from pan bottom. Strain mixture from pan into 4-cup glass measuring cup; add giblet broth. If necessary, add enough canned broth to measure 4 cups liquid or transfer giblet broth mixture to medium saucepan and boil until reduced to 4 cups liquid.
  • Cook bacon in heavy large skillet over medium heat until brown and crisp. Using tongs, transfer bacon to paper towels; drain. Discard all but 4 tablespoons drippings from skillet. Add flour. Whisk over medium heat until roux is golden brown, about 3 minutes.
  • Whisk in giblet broth mixture. Bring to a boil, whisking occasionally. Reduce heat to medium-low. Mix in vermouth and sage. Simmer until thickened to desired consistency, about 10 minutes. Add chopped meats to gravy. (If desired, chop some or all of the bacon and add to gravy.) Simmer until heated through, about 2 minutes. Season gravy with salt and pepper.

GIBLET PAN GRAVY

Giblet Pan Gravy image

This is just like Grandma used to make. The lost art of gravy making. Don't use the packet--go for the real thing!

Provided by Kimke

Categories     Sauces

Time 1h30m

Yield 6 cups

Number Of Ingredients 10

1 tablespoon vegetable oil
reserved turkey giblets, neck, and tail piece
1 onion, unpeeled and chopped
1 1/2 quarts turkey broth (or 1 quart low-sodium canned broth plus 2 cups water) or 1 1/2 quarts chicken stock (or 1 quart low-sodium canned broth plus 2 cups water)
2 sprigs thyme
8 parsley stems
3 tablespoons unsalted butter
1/4 cup flour
1 cup dry white wine
salt & fresh ground pepper

Steps:

  • Heat oil in soup kettle; add giblets, neck, and tail, then sauté until golden and fragrant, about 5 minutes.
  • Add onion; continue to sauté until softened, 3 to 4 minutes longer.
  • Reduce heat to low; cover and cook until turkey and onion release their juices, about 20 minutes.
  • Add stock and herbs, bring to boil, then adjust heat to low.
  • Simmer, uncovered, skimming any scum that may rise to surface, until broth is rich and flavorful, about 30 minutes longer.
  • Strain broth (you should have about 5 cups) and reserve neck, heart, and gizzard.
  • When cool enough to handle, shred neck meat, remove gristle from gizzard, then dice reserved heart and gizzard.
  • Refrigerate giblets and broth until ready to use.
  • While turkey is roasting, return reserved turkey broth to simmer.
  • Heat butter in large heavy-bottomed saucepan over medium-low heat.
  • Vigorously whisk in flour (roux will froth and then thin out again).
  • Cook slowly, stirring constantly, until nutty brown and fragrant, 10 to 15 minutes.
  • Vigorously whisk all but 1 cup of hot broth into roux.
  • Bring to boil, then continue to simmer until gravy is lightly thickened and very flavorful, about 30 minutes longer.
  • Set aside until turkey is done.
  • When turkey has been transferred to carving board to rest, spoon out and discard as much fat as possible from roasting pan, leaving caramelized herbs and vegetables.
  • Place roasting pan over two burners at medium-high heat (if drippings are not a dark brown, cook, stirring constantly, until they caramelize.) Return gravy to simmer.
  • Add wine to roasting pan of caramelized vegetables, scraping up any browned bits with wooden spoon and boiling until reduced by half, about 5 minutes.
  • Add remaining 1 cup broth, then strain pan juices into gravy, pressing as much juice as possible out of vegetables.
  • Stir giblets into gravy; return to a boil.
  • Adjust seasonings, adding salt and pepper to taste if necessary.
  • Serve with carved turkey.

GIBLET GRAVY

Giblet Gravy image

While the turkey is in the oven, get some rest - and make the gravy. Giblet gravy requires the cook to use the neck, gizzard and heart of the bird to make deeply flavored stock, which is then combined with the pan drippings, a bit of flour and wine or brandy. Finally, the cooked neck, gizzard and heart are finely chopped and added to the rich, savory gravy, to make for a more interesting texture.

Provided by Florence Fabricant

Categories     sauces and gravies

Time 40m

Yield 2 cups

Number Of Ingredients 10

2 large onions, peeled
Turkey neck, gizzard and heart
1 carrot, peeled and cut in half
1 stalk celery, cut in halves
A few sprigs of parsley
6 whole peppercorns
3 cups of water
1 to 1 1/2 tablespoons flour
Salt and freshly ground black pepper to taste
2 tablespoons white wine or brandy (optional)

Steps:

  • After turkey has been roasting for about an hour, slice one of the onions and scatter slices in roasting pan with turkey.
  • Place the other onion, cut in half, in a saucepan. Add turkey neck, gizzard and heart, the carrot, celery, parsley and peppercorns. Cover with water and bring to boil. Skim surface, lower heat and allow to simmer at least 30 minutes. Strain and reserve the stock. You should have about 2 cups of stock. Dice meat from neck, gizzard and heart, and set it aside.
  • When turkey has finished roasting and is resting on the carving board place the roasting pan on top of the stove, over two burners if necessary. Skim off all but a few tablespoons of fat from pan. Sprinkle the bottom of the pan with the flour (the more used the thicker the gravy), and whisk it vigorously and thoroughly, scraping up any particles clinging to the pan. Gradually add the stock, whisking constantly over medium heat until the mixture has thickened and is smooth. Strain into a sauce pan.
  • Add any juices from carving board and the reserved giblets. Season with salt and pepper. Add wine or brandy and bring to a simmer, and serve.
