GLORIA PITZER'S FAMOUS DAVE'S-STYLE SECRET BBQ SAUCE
Gloria Pitzer is known for copying famous foods, but making them healthy at the same time. "I take the junk out of junk food," says Pitzer. "You know what goes into my recipes." Gloria is careful to point out that she doesn't actually know what the big chains put in their food. "I don't try to dissect the foods and figure out the chemical ingredients," she says. "I never, ever try to steal anyone's secret corporate recipe. I just do my best to duplicate the taste." I have to admit that we don't have a Famous Dave's in Canada, but this is a great sauce. Steps:
- Mix all ingredients in a saucepan and simmer over low heat for 30 to 45 minutes, until thickened. Remember that it will thicken when it cools a bit. Stir every 10 minutes.
- Let cool and pour into a food processor or blender. Blend until smooth.
- Gloria states that this BBQ sauce keeps forever and a day, but I'm not making any guarantees!

Steps:
- Melt butter in a large saucepan over medium heat. Add the onion and garlic; cook and stir until tender, about 5 minutes. Stir in the orange juice, cider vinegar, lemon juice, lemon slices, maple syrup, Worcestershire sauce, ketchup, molasses, and brown sugar. Season with dry mustard, salt, red pepper flakes, cumin and paprika. Simmer for 45 minutes to 1 hour. Remove lemon slices before using.

Steps:
- Fry bacon in a large saucepan until crisp.
- Drain, reserving 1 tablespoon of the drippings.
- Use the bacon for another purpose.
- Fry the onions in the reserve drippings on medium high heat until caramelized or dark golden brown.
- Don't burn.
- Reduce heat to medium low.
- Deglaze the saucepan with water.
- Stir in the Peach Schnapps, raisins, jalapeño and garlic.
- Simmer for 10 minutes or until the mixture is of a syrupy consistency, stirring occasionally.
- Remove from heat and place the mixture in a blender with Balsamic vinegar, apple, tangerine juice concentrate, pineapple juice concentrate, molasses, apple cider vinegar, lemon and lime juice.
- Process until puréed and return to the saucepan.
- Add corn syrup, tomato paste, brown sugar, Worcestershire sauce, mustard, chili powder, Maggi seasoning, salt, red pepper flakes, black pepper and cayenne.
- Mix well.
- Bring to a low boil, under medium heat, stirring frequently.
- Reduce heat to low.
- Simmer for 20 minutes, stirring occasionally.
- Remove from heat.
- Stir in Kahlúa and liquid smoke.
- Store, covered, in refrigerator.

DAVE'S NORTH ALABAMA WHITE BBQ SAUCE
A great take on a north Alabama favorite: Big Bob Gibson's white sauce. This may not be exactly like it, but it is about as close as I have been able to get it. You can substitute apple cider vinegar for the white vinegar, if desired.

DAVE'S BARBECUE SAUCE
This is a wonderful barbecue sauce! Get all of your ingredients measured out and ready for you. That way, it only takes a couple of minutes to make your recipe. This is a great sauce for any kind of meat or even fish. It's great on everything. I use this for my barbecued beans, delish! The amount is approximate. Hoisin sauce should be in the Oriental section of your supermarket. It's kind of like ketchep in Asian cooking. Chili sauce should be near the ketchup. It isn't "hot" even though it says "chili" sauce. Heinz is the best, but any will do.

- Fry the onions until dark brown in a frying pan. Remove from pan and add the water, schnapps, raisins, jalapeno and garlic. Simmer for 12 minutes or until the mixture thickens. In a blender, blend the onion mixture, balsamic vinegar, apple, pineapple juice, apple cider vinegar, molasses and lemon juice until smooth. Pour into the pan and add the remaining ingredients, except liquid smoke and Kahlua. Simmer for 20 minutes, stirring frequently. Add the liquid smoke and Kahlua, mix well and chill overnight before using.

- Thoroughly mix brown sugar, Kosher salt, sugar, garlic seasoning, chili powder, lemon pepper, onion salt, celery salt, black pepper, celery seeds, cloves, cayenne, Mrs. Dash Original Blend and salt. Store mixture in airtight container.
- The day before you will be smoking the ribs, trim all excess fat from the ribs. Place ribs in a large Ziploc type plastic bag. Pour in the Italian dressing and turn bag over several times to coat all meat well after making sure bag is well sealed. Refrigerate for 4 hours, turning occasionally.
- Remove meat and wipe dressing off. Sprinkle each rib with pepper, 1/4 cup of the brown sugar and 1/2 cup of the onion flakes. After wrapping each rib in plastic, refrigerate overnight.
- The next morning remove ribs from wrap and wipe sludge off the meat. Generously coat both front and back of ribs with Rib Rub. Using your hands; rub seasoning into meat and set aside.
