DARK CHOCOLATE TRUFFLE COOKIES
These are rich, gooey, chocolate filled bites of heaven.

Steps:
- Preheat the oven to 375ºF.
- In a medium bowl ,combine flour, sugar, cocoa powder, baking powder, and salt.
- Chop the room temperature butter into small pieces and rub into the dry ingredients until the mixture resembles breadcrumbs.
- Mix in the chopped dark chocolate.
- In a small bowl, mix together the egg and vanilla.
- Pour the egg mixture into the chocolate mixture and mix until moistened.
- Press the dough into a ball (you'll have to get your hands dirty here if you haven't already).
- Wrap the ball of dough in plastic wrap and refrigerate for 30 minutes.
- Put the confectioners' sugar in a shallow bowl.
- Using a tablespoon, form balls of the refrigerated chocolate mixture.
- Roll the ball in the confectioners' sugar.
- Place the sugar covered ball on a parchment lined baking sheet.
- Repeat with the remaining chocolate mixture, rolling in confectioners' sugar before placing on baking sheet.
- Bake about 10 minutes leaving the cookies just a bit undercooked on the insides.
- Cool on the pan for a few minutes before finishing cooling on a cooling rack.
- These are fabulous served warm, and almost just as good eaten over the next 4 days (store in an airtight container).

- In a large saucepan over low heat, melt the unsweetened chocolate, 1 cup of the chocolate chips, vanilla, and butter together; stirring, until smooth.
- Remove pan from heat; cool for 10 minutes.
- In a large bowl, beat the eggs and sugar together for 2 minutes with an electric mixer on medium speed.
- Beat in the vanilla and chocolate mixture.
- Combine the flour, cocoa powder, baking powder, and salt; add to the chocolate mixture just until combined.
- Stir in the remaining chocolate chips.
- Cover dough and chill for at least 3 hours.
- Remove about 1 cup of the dough from the refrigerator; with lightly floured hands, roll into 1" balls.
- Place 2" apart on ungreased or parchment paper-lined cookie sheets.
- Bake in a preheated 350*F.
- oven for 10-12 minutes, or until lightly puffed and set.
- Cool for 3-4 minutes on the cookie sheets before removing to a wire rack; cool completely.
- Dust with powdered sugar.
CHOCOLATE TRUFFLE COOKIES
A very dark, rich chocolate cookie for the true chocoholic. This recipe uses relatively little flour, resulting in dense, fudge-like cookies. These cookies keep well in the freezer (but you may have a hard time waiting for them to thaw before you eat them).

- In the microwave or in a metal bowl over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. Remove from heat and set aside to cool. In a large bowl, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed. Combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls. Place on ungreased cookie sheets so they are 2 inches apart.
- Bake for 9 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

- In a saucepan, bring the cream just to a simmer over medium-low to low heat. Pour the cream over the chocolate in a bowl and cover with plastic wrap. Let stand about 10 minutes to melt the chocolate.
- Add the vanilla and stir until smooth. Set aside to cool to room temperature, 30 minutes to 1 hour.
- Then beat the chocolate at medium speed, using an electric mixer, until it is thick and light colored. If the chocolate has cooled enough, it will be ready to form truffles right away. If the chocolate is still too soft to hold its shape when rolled in a ball, spread over the bottom of a baking dish and smooth the top. Refrigerate until firmed, but still scoopable, up to 2 hours.
- Pour the cocoa powder onto a deep plate or shallow bowl. Use a melon baller or small ice cream scoop to scoop out balls of chocolate and gently roll into a ball. Place them on the plate with the cocoa powder and roll between 2 forks to completely coat with the cocoa powder. Then use the forks to carefully transfer them to a baking sheet lined with parchment or waxed paper.
- If making the truffles a day or two ahead of time, let them stand at room temperature for at least 1 hour before serving.

- 1. In mixing bowl, cream butter, sugar and cocoa till light and fluffy.
- 2. Beat in sour cream and vanilla.

- Melt chocolate with oil and the water. Stir in vanilla and sea salt. Transfer to an 8-inch square baking dish, and refrigerate until mixture is set but still pliable, about 2 hours.

- Put entire bag of cookies in the bowl of a food processor and pulse to a fine crumb consistency. Transfer to a large bowl.
- Add cream cheese and mix until well combined. Roll into 1-inch balls. Chill in the refrigerator for 1 hour.
- Place chocolate chips in a microwave-safe bowl. Microwave on high power for 1 minute. Stir, then repeat in 1-minute increments until melted and smooth. Mix in peppermint extract.

- In a large bowl, melt butter, bittersweet chocolate and 1 cup of chocolate chips. I do this in the microwave, beginning with 30 second increments and stirring until totally melted. Set aside and let cool completely.
- In the bowl of your electric mixer, add sugar and eggs, beating on high until light and fluffy, about 2 minutes. Add in vanilla extract and melted chocolate/butter, beating for another 1-2 minutes until combined. Scrape down the sides of the bowl and the whisk or beater attachment, then remove it and stir in the dry ingredients with a large spatula until thoroughly dispersed by just combined. Fold in remaining chocolate chips. Cover the cover with plastic wrap and place in the fridge for 4 hours (or even overnight!).
- Preheat oven to 350 degrees F. Place parchment paper (or a silpat!) on an ungreased baking sheet. Wet your hands with water then begin to roll the dough into 1-inch balls, placing them about 2 inches apart. Do this quickly and if you are doing the cookies in batches, refrigerate the dough in between rounds. Sprinkle a bit of salt on top of each dough ball, then bake for 9-10 minutes. Remove, sprinkle a tiny bit of salt again, and let cool for at least 10 minutes on the baking sheet. The should be completely cool before removing them! Once removed, place on wax or parchment paper to cool completely. Once totally cooled, if desired you can dip half of each cookie in melted chocolate then cover in sprinkles. These store pretty well but are fairly fragile.
