BIG ROD'S DARK AND SMOKEY CHOCOLATE CHILI



Big Rod's Dark and Smokey Chocolate Chili image

Number Of Ingredients 16

2 large sweet onions, thinly sliced
2 large roasted red peppers, peeled and chopped
2 jalapeno peppers stemmed, seeded and finely chopped
6 large cloves rough chopped garlic
1/4 teaspoon cinnamon
1/2 teaspoon cumin
2 tablespoons chili powder
3 pounds Pork loin rough cut into 1/2" chunks
Salt and Pepper
Plenty of Essence
1/2 cup flour
1/2 cup extra-virgin olive oil
3 ounces dark unsweetened chocolate
4 cups good beef or veal stock brought to a simmer on the stove while you cook the rest
2 large dried Ancho chilies, stemmed and seeded, soaked in hot water to cover for at least two hours (throw the chilies and the soaking liquid in a blender and process smooth)
Serving suggestions: rice, fresh tortillas and good Mexican beer

Steps:

  • In a heavy Dutch oven, on medium-high heat saute the onion, red pepper, and jalapeno until they are all well caramelized. Throw in the garlic and the spices then cook for another couple of min. set off the heat.
  • Season the pork with salt, fresh ground pepper and plenty of Essence. dredge the seasoned pork in the flour.
  • Set the pot back on the flame. When it reaches full heat, throw in the coated pork with all the flour.
  • Cook the mixture until the pork starts to render, the meat begins to brown, and the flour and oil have created a nice rich roux. add the chocolate and stir until it melts.
  • Stir the hot stock into the pork mixture stirring all the while, then add the chili puree.
  • Adjust seasoning (will need salt).
  • Simmer until the pork is very tender and the Smokey gravy is thick and silky.
  • Serve over lots of rice with hot fresh tortillas and good Mexican beer
  • It's the food of Love!

1 cup heavy cream
1/2 stick unsalted butter
1 (12-ounce) package semisweet chocolate morsels
1 (12-ounce) package milk chocolate morsels
For dipping: sliced apples, bananas, strawberries, crisp cookies, pretzels, and cubed pound cake.

Steps:

  • In a large saucepan over medium heat, combine cream and butter. Bring mixture to a simmer, stirring constantly. Remove pan from heat. Add semisweet and milk chocolate morsels. Stir until melted and smooth. Cool slightly. Transfer to a fondue pot, chafing dish, or ceramic bowl. Serve immediately with sliced apples, sliced bananas, strawberries, cookies, pretzels, and pound cake.

1-1/2 cups sugar
1-1/4 cups water
1/4 cup light corn syrup
1 cup baking cocoa
1/2 cup heavy whipping cream
5 ounces semisweet chocolate, chopped
Strawberries, banana chunks, apple slices or angel food cake cubes

Steps:

  • In a small saucepan, bring the sugar, water and corn syrup to a boil. Reduce heat; simmer, uncovered, for 20 minutes, stirring frequently. , In a small bowl, combine the cocoa, cream and half of the syrup mixture until smooth; return to the pan. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, for 5 minutes. Stir in chopped chocolate until melted. Serve warm with fruit or cake for dipping. Refrigerate leftovers.

8 oz bittersweet baking chocolate, chopped
8 oz semisweet baking chocolate, chopped
1 pint (2 cups) whipping cream
1 tablespoon vanilla
1 package (10.75 oz) frozen pound cake, cut into 1-inch cubes
40 small fresh strawberries
40 apple slices
Kiwifruit, cut up, if desired

Steps:

  • In 2-quart heavy saucepan, heat both chocolates and the whipping cream over low heat, stirring frequently, until cream is hot and chocolate is melted. Stir with wire whisk until smooth. Stir in vanilla. Pour into fondue pot. Keep warm with fuel canister on low heat.
  • Arrange cake and fruit dippers on platter. Set fondue pot in center of platter.
