Steps:
- Rinse the asparagus under cold running water and pat dry, cut off any woody stems.
- Use the Tablespoon of olive oil to grease an oven proof dish; use a 6"x 4" dish that holds 3/4 pint of liquid.
- Line the inside of the dish with the bacon to cover completely. Lay the asparagus in the dish.
- Whisk the eggs with the milk until frothy and pour the egg mixture over the asparagus. Season with black pepper to taste, you won't need to salt as there's enough in the bacon.
- Put into a pre heated oven gas mark 6/400º F (200º C.), middle shelf for about 30 minutes.
- When cooked, remove from oven and using oven gloves, put a small plate on top of the dish and carefully turn over.
- Cut into 1" slices and divide between 4 plates, slightly overlap the slices.

- Stegt Flæsk Med Persillesovs – Fried Pork Belly With Potatoes and Parsley Sauce (National Dish) It would be strange to talk about Danish cuisine without starting with the national dish.
- Brændende Kærlighed – Burning Love. The dish’s name sounds more like a 1980s musical hit than a delicious recipe. But, it is over 200 years old. We adore it because you only need a few ingredients; mashed potatoes, diced onions, and fried bacon.
- Smørrebrød – Open Sandwich. The Danish food version of the open sandwich includes delicious rugbrød (dark rye bread). If it’s made traditionally, it will be a thick, dark and rich bread with lots of butter.
- Hønsekødssuppe – Chicken Broth Soup. The name Hønsekødssuppe is misleading because a literal translation is “hens soup.” But, there are no poultry chunks included in the recipe.
- Wienerbrød – Danish Pastries. We love to order a Danish pastry with our coffee. But did you know that Danish pastries are not actually Danish food? They were created in Vienna and came to Denmark in 1840.
