DAD'S CURRIED CHICKEN



Dad's Curried Chicken image

This Trinidadian version of curried chicken is an earthy, rich stew of whole chicken pieces in an aromatic, vibrant broth, spiked with hot chile and a traditional herb paste.

Number Of Ingredients 11

1 (4-pound) chicken, cut into 8 pieces, skin removed
1 tablespoon freshly squeezed lime juice
2 tablespoons Green Seasoning
1 teaspoon coarse salt
1 Scotch bonnet pepper or other hot red chili pepper, finely chopped
2 cloves garlic, crushed
¼ cup Trinidad Curry Powder
2 tablespoons canola oil
1 medium onion, chopped
1 cup chicken stock or water
Roti or white rice, for serving

Steps:

  • Place the chicken pieces in a bowl and toss with the lime juice. Drain, rinse the chicken with cold water, and drain again. Remove the chicken from the bowl and pat dry with paper towels.
  • Place the chicken in another bowl with the Green Seasoning, salt, chili pepper, and garlic. Toss well to coat and refrigerate for at least 30 minutes but ideally overnight.
  • Combine the curry powder with just enough water to form a thick paste. Heat the oil in a heavy-bottomed pot. Add the curry paste and onion. Cook, stirring constantly, for 1 to 2 minutes over medium-low heat-do not allow the curry to scorch. Add the chicken pieces and stir well to coat. Add the stock or water, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.
  • Remove the lid and simmer for 5 minutes more over medium-high heat, until the sauce reduces by one-third. Serve with roti or white rice.

Garam Masala, similar but NOT identical to curry powder, can be found in East Indian food shops and sometimes in the 'Ethnic Foods' section at the supermarket. Serve hot with fried bread or rice, if desired.

1 pound skinless, boneless chicken breast halves, cut into bite size pieces
2 onions, chopped
4 green chile peppers, chopped
4 tablespoons vegetable oil
2 tablespoons ginger garlic paste
1 tablespoon poppy seeds
2 tablespoons chili powder
2 cups water
1 tablespoon garam masala
1 pinch ground turmeric
salt to taste

Steps:

  • Rinse chicken pieces and pat dry. Set aside. Grind poppy seeds into a paste.
  • In a large skillet, saute onions and green chiles in oil until golden brown. Add ginger garlic paste and continue to saute. Add poppy seed paste and reserved chicken pieces, continuing to saute. Stir all together; after chicken is well mixed with the 'gravy', add the red chili powder and pour 2 cups of water over the mixture. Cover skillet and let simmer about 12 to 15 minutes, until chicken is cooked through.
  • After chicken is 'well-boiled' (the oil should be floating on top of the skillet liquid), add the garam masala and turmeric powder and turn off the stove. Stir all together and serve.

4 lbs chicken pieces, with bones
2 onions, diced
10 ounces frozen chopped spinach, thawed and squeezed dry
1 cup plain yogurt
2 -3 diced red potatoes
3 teaspoons salt
1 teaspoon garlic powder
1 teaspoon ground ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon pepper
1 teaspoon ground cloves
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1/2 teaspoon chili powder
1 teaspoon red pepper flakes
3 teaspoons turmeric

Steps:

  • Place chicken in a large slow cooker. Cover with water.
  • Cover. Cook on High 2 hours, or until tender.
  • Drain chicken. Remove from slow cooker. Cool briefly and cut or shred into small pieces. Return to slow Cooker.
  • Add remaining ingredients.
  • Cover. Cook on Low 4 to 6 hours, or until potatoes are tender.
  • Serve on rice. Accompany with fresh mango slices or mango chutney.
  • Variation: Substitute 5 tsp curry powder for the garlic, ginger, cumin, coriander, and pepper.

1 jalapeno, chopped
1 tablespoon garam masala
1/2 teaspoon ground cumin
2 to 4 cloves
2 tablespoons vegetable oil
2 tablespoons curry powder
1/14 cup water
1 chicken, cut into 8 pieces
4 medium potatoes, peeled and diced
Kosher salt
Steamed white rice, for serving

Steps:

  • In a food processor combine the onion, garlic, jalapeno, garam masala, cumin, and cloves. Process to make a chunky paste.
  • Heat the oil in a large Dutch oven over medium heat. Add the onion mixture, curry powder, and 1/4 cup water. Let fry 4 to 5 minutes.
  • Add chicken pieces, potatoes, and salt to taste. Add water to cover, up to 3 cups, and bring to a boil. Simmer until the chicken and potatoes are cooked through, about 30 minutes. Serve over rice.

1 large onion, sliced
1 tablespoon grated fresh ginger
2 cloves garlic, crushed
1 kg chicken breast fillet, chopped

Steps:

  • Stir in spices, lemon grass, lime leaves and chilli, cook, stirring until fragrant.
  • Add remaining ingredients, simmer, uncovered, about 30 minutes or until thickened slightly.

1/2 whole chicken, cut into pieces (breast)
2 cups coconut milk
2 cups water or 2 cups chicken broth
2 tablespoons curry powder
1 onion, diced
3 tablespoons fresh ginger, cut into strips
1 cup potato, cut into large cubes
1 red bell pepper, cut into strips
6 tablespoons fish sauce or 2 tablespoons salt and pepper
1 green chili pepper (optional)

Steps:

  • heat pan add oil.
  • saute onion and ginger
  • add fish sauce
  • add in chicken, coconut milk, chicken broth and curry powder.
  • cook for 15 min or until chicken is tender.
  • if there's no fish sauce add salt and pepper.
  • add red bell pepper and green chili.
  • simmer for 3-5 minute.
  • allow sauce to thicken
  • serve over hot rice.

Curry, you can use chicken thighs, cubed pork or anything else you desire. My wife and kids (aged 3 and 6) love this and we are not Indian. You can make it mild to hot but make lots because it goes fast!

1/2 lb butter, in large pot
2 finely chopped green onions
1 medium piece finely chopped gingerroot (about 2 tbsp.)
3/4 cup finely chopped cilantro
1 medium green pepper (medium dice)
1 teaspoon salt
2 teaspoons turmeric
2 teaspoons curry powder
1/2 teaspoon ground red pepper (cayenne)
3 teaspoons garam masala
8 -10 bone in skinless chicken thighs
4 cups cubed pork butt
1 (10 ounce) can tomato soup

Steps:

  • Melt butter in large pot.
  • Add green onions, green pepper, ginger, cilantro and stir for 10 minutes over medium heat.
  • Then add salt, turmeric, curry powder (mild -hot, it's your call!), red pepper (cayenne).
  • After about 5 minutes (before the butter rises).
  • Add masala (garam masala works well), and tomato soup.
  • Cook sloooowly for 10 minutes and add chicken thighs (cut in half is best, whole is fine too!) or 3+ cups of cubed pork butt (make sure the pork has some fat in it or it will dry out).
  • Simmer for 1 1/2 hours on top of stove!
  • Serve over basmati rice.

  • Heat 2 very large, deep skillets. Add 2 tablespoons of the oil to each. Season the chicken pieces with salt and add half of them to each skillet. Cook over high heat until golden brown, about 3 minutes per side. Transfer the chicken pieces to a large bowl. Add the remaining 2 tablespoons of oil to the skillets along with the jalapeños and dried red chiles. Cook over moderately high heat until sizzling, about 30 seconds. Divide the onions, garlic and ginger between the skillets and cook, stirring occasionally, until deep brown, about 8 minutes.
  • Spoon the onion mixture into a food processor. Add the coriander, cumin, fenugreek seeds, cinnamon, cloves, nutmeg, paprika and 1 teaspoon of salt and puree. Transfer half of the onion mixture to each of the skillets. Add the tomatoes and chopped cilantro to the food processor and puree.
  • Return the chicken pieces to the skillets along with any accumulated juices. Cook over moderate heat, stirring, until the onion sauce begins to stick to the skillets, about 8 minutes. Stir half of the yogurt into each skillet, then stir in the pureed tomato and cilantro. Simmer the curry over moderately low heat, turning the chicken pieces occasionally, until cooked through, about 50 minutes; add 1/4 cup of water to each skillet towards the end of cooking if the sauce gets too thick. Season the curry with salt and transfer the chicken to a platter. Pour the sauce on top, sprinkle with garam masala and the cilantro leaves and serve.
