DAD'S FETTUCCINE ALFREDO
My dad learned to make this when he worked at a very fancy Italian restaurant. It's his signature dish, so I was shocked to learn that it only has 3 ingredients.

Steps:
- Cook fettucine (al dente) according to package directions. Drain and toss with a little olive oil.
- In a wok or large pan, heat half and half until barely boiling.
- Slowly add parmesan while whisking.
- Turn off heat and continue to whisk until cheese dissolves.
- Toss in pasta.
- Variation: For Fettucine Carbonara, add cooked peas and crumbled bacon.

TO DIE FOR FETTUCCINE ALFREDO
This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

Steps:
- Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
- In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
- Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

- Transfer 1 cup pasta cooking liquid to a large skillet. Bring to a gentle simmer, then whisk in butter, a piece at a time, until melted. Whisking constantly, gradually add cheese, making sure it’s completely melted and incorporated before adding more. Add pasta and toss to coat, adding more pasta cooking liquid as needed, until sauce blankets noodles completely. Serve topped with pepper and more cheese.
