A warming comfort food, this soup is served frequently at our house in the cooler months. Fabulous when served in bread bowls! Prep time considers cleaning and chopping fresh vegetables.

6 -8 medium red potatoes
2 cups water
1 small onion, chopped
1 cup mushroom, sliced
1/2 cup chopped celery
1/4 cup bacon or 1/4 cup bacon bits (optional)
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons flour
3 cups milk
1/2 teaspoon sugar
1 cup shredded cheddar cheese
2 cups cubed cooked ham
ground black pepper
crushed red pepper flakes

Steps:

  • Peel Potatoes and cut into 1 inch cubes.
  • Boil in water until done, about 15 minutes.
  • Drain & Set aside, but save 1 Cup of the cooking liquid for later.
  • Melt butter in a large saucepan over medium heat.
  • Add onion, celery, and mushrooms, stirring frequently until onion is soft and translucent.
  • Add flour, bacon, red and black pepper to saucepan.
  • Mix well, cook 3- 4 minutes.
  • Slowly add potatoes, reserved cup of liquid, milk, and sugar.
  • Stir well.
  • Add cheese and ham.
  • Simmer over low heat 30 minutes, stirring frequently.

5 medium potatoes
2 cups water
1 small onion
1/2 cup chives
3 tablespoons flour
3 tablespoons butter
crushed red pepper flakes
ground black pepper
3 cups milk or 3 cups half-and-half
1/2 teaspoon sugar
1 cup cheddar cheese, shredded
1 cup crumbled bacon

Steps:

  • Peel potatoes and cut into 1" cubes.
  • Bring water to a boil in large saucepan and add potatoes.
  • Cook until tender and drain reserving liquid.
  • Set aside potatoes and measure 1 cup cooking liquid (adding water if necessary) and set aside.
  • Peel and finely chop onion and chives.
  • Melt butter in saucepan over medium heat.
  • Add onions and chives to saucepan and cook, stirring frequently until tender, but not brown.
  • Add flour to saucepan.
  • Season with red pepper and black pepper to taste.
  • Cook 3 to 4 minutes.
  • Gradually add potatoes, reserved 1 cup cooking liquid, milk/cream, and sugar to onion/chive mixture in saucepan.
  • Stir well and add cheese and bacon.
  • Simmer on low heat for 30 minutes, stirring frequently.
  • Serve with fresh chives, cheese, and bacon.

  • Stor leftovers, covered, in refrigerator.

4 medium potatoes (about 2 pounds), peeled and cubed
3/4 cup chopped onion
1 small carrot, chopped
1/4 cup chopped celery
1-1/2 cups chicken broth
3 tablespoons butter, cubed
3 tablespoons all-purpose flour
2-1/2 cups whole milk
1 tablespoon minced fresh parsley
3/4 teaspoon salt
1/2 teaspoon pepper
1 cup shredded Swiss cheese

Steps:

  • In a large saucepan, combine the potatoes, onion, carrot, celery and broth. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender; lightly mash., Meanwhile, in a small saucepan, melt butter; stir in flour until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into potato mixture. Cook and stir until thickened and bubbly. Add parsley, salt and pepper. This can be kept in the fridge for 1 day without the coconut milk. Add in the coconut milk when you reheat the soup. The soup will become very thick as it stands. Thin with stock or water if necessary.

1 tablespoon oil
1 large onion, chopped
2 garlic cloves, crushed
3 teaspoons curry powder
2 1/2 lbs sweet potatoes, peeled and cubed
4 cups chicken stock
1 large apple, peeled, cored and grated
1/2 cup light coconut milk

Steps:

  • In a large pan, heat the oil over medium heat. Cook the onion for 10 minutes, stirring occasionally, until very soft. Add in the garlic and curry powder and cook for another minute.
  • Add in the sweet potatoes, stock, and apple. Bring to a boil. Reduce heat and simmer, partially covered, 30 minutes, or until potatoes and apples are very soft.
  • Process with an immersion blender (or in batches with a regular blender) until smooth.
  • Stir in the coconut milk and reheat gently without boiling.
  • Serve with warm pita bread.

My sis and me came up with this recipe when searching for a nice, relatively quick to make and warming dinner dish on one of those cold winter days. This soup is not overly spicy and has a light sweetness coming from the carrots. It makes for a thick soup, so if you like your soup to be less like a puree, you might have to add more broth to it. We served this with Recipe #178020, which was very very tasty!

6 medium carrots
1 1/4 kg potatoes
2 white onions
2 red onions
1 garlic clove
2 tablespoons oil
1 1/4 liters vegetable broth (more if you like your soup less creamy)
2 1/2-3 teaspoons curry powder
1 teaspoon caraway seed
salt and pepper

Steps:

  • Peel and chop carrots and potatoes into small chunks. Slice the onions, mince the garlic.
  • Heat the oil in a large heavy pot (I use cast-iron). Add the garlic, the curry powder, caraway seeds and the onions and saute for some minutes until lightly browned. Add the potatoes and carrots and saute on medium heat for another 10 minutes.
  • Add the broth, cover and let simmer for about 35-40 minutes or until all veggies are tender. Season with salt and pepper to taste.
  • Puree soup using a hand held blender until it has the desired consistency-I like it to be still chunky (add more broth if needed).
  • Serve with some warm bread of your choice.

This recipe comes from Nancie McDermott's cookbook The Curry Book. When I prepared this soup, I followed the recipe exactly but found the soup to be a little thin, in my opinion. The flavor was fabulous - there just weren't enough potatoes! Hubby, who loves curry, agreed and we ended up eating it over rice. Originally the recipe called for 4 cups of potatoes, which just isn't very much when compared to 10 cups of liquid. If you're looking for a thinner, brothier soup, by all means go with the 4 cups of potatoes. I have beefed up the recipe and called for more potatoes based on personal preference. Hubby also suggested throwing in some cauliflower, which would be a great addition. Don't be afraid of using all coconut milk either - the taste is very subtle and really makes the soup delicious. I was hesitant at first but glad that I used it. Another nice thing about this soup is that you can make it with what you have in your pantry - no unusual ingredients.

  • Add milk & salt, stir well, and cook until heated through.
  • Taste and adjust seasonings.
  • Serve hot or warm, sprinkled with cilantro or parsley.
  • Note: You can use other types of potatoes, including white rose, Idaho and new potatoes.
